COOKIE NUT CRUST
This recipe came from "The Farmers Almanac Blue Ribbon Recipes" cookbook, used for a pumpkin pie. I used it last night to make Bev's Chocolate Chip Pie. It turned out great. It can be prebaked for a cream-filled pie, or unbaked for a pie that must go into the oven. You could use this recipe as an alternative to just about any "crumb crust". Steps:
- In a large bowl, combine the flour and baking soda.
- Add the butter, brown sugar, walnuts and vanilla.
- Blend well.
- Press the mixture, a small amount at a time, into a 9-inch pie plate, building up the sides and fluting the edge.
- Cover the fluting with a strip of aluminum foil to prevent overbowning.

- Sprinkle 1/3 cup chocolate chips or toffee bits in the bottom of crust.
- In a large bowl, combine caramel topping and milk, add pudding mix. Whisk together for two (2) minutes. Carefully fill pie crust with the pudding mixture.
- Chill at least 20 minutes.
- Arrange sliced bananas on top of the pudding. Top with whipped topping. Sprinkle with toasted coconut and remaining mini chocolate chips or toffee bits. Serve immediately or refrigerate.
- Preparation time includes chill time.
AMARILLO CHEESE FRIES AND DIP - LIKE THE LONE STAR- COPYCAT
When our DD and SIL came for a visit, they introduced us to two mouthwatering recipes which they prepared as a birthday treat. They prepared these fries along with Marinated Grilled Steaks, like The Outback. Needless to say, it was an absolutely delicious meal. Hope you enjoy this as much as we did.

- Preheat oven and bake the fries according to package directions.
- Meanwhile, combine ranch dressing and taco seasoning; set aside.
- When fries are done, turn off oven.
- Sprinkle the cheese and bacon over the top of fries.
- Return to hot oven only until the cheese is melted.
- Serve with the sauce mix for dipping.

- Beat eggs in a large bowl. Combine with corn syrup and beat until well blended. Stir in pineapple, coconut, sugar, flour, and butter and mix well.
- Spoon filling into unbaked pie shell. Bake at 350 for 45-60 minutes, until crust is browned and filling is firm.

Steps:
- Pour condensed milk into an 8 inch glass pie plate.
- Cover with foil and set into a shallow casserole filled with 1/4 inch water.
- Bake at 425 for 1 hour and 15 minutes (or until milk is thick and caramel colored).
- Remove foil and set aside.
- Slice bananas and set it bottom of graham cracker crust.
- Spread carmelized milk over banana layer.
- Cool for 30 minutes.
- Combine whipping cream and powdered sugar.
- Whip until stiff (or, you can cheat like me and use something like Cool Whip).
- Spread over caramel layer.
- Sprinkle with crushed candy.
