1 1/2 cups Gold Medal™ all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups old-fashioned oats
1/2 cup plus 2 tablespoons unsalted butter, softened
1 cup plus 2 tablespoons packed brown sugar
1 egg
2 tablespoons milk
3/4 teaspoon vanilla
2 baking apples, peeled, chopped
20 caramels, unwrapped
2 tablespoons water

Steps:

  • Heat oven to 325°F. Line cookie sheets with cooking parchment paper.
  • In medium bowl, mix flour, baking soda and salt with whisk; stir in oats. In large bowl, beat butter and brown sugar with electric mixer on medium speed until creamy. Add egg, milk and vanilla; beat 2 minutes or until light and fluffy. On low speed, beat in flour mixture until blended. Stir in apples.
  • Onto cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
  • Bake 14 minutes or until golden. Remove from cookie sheets to cooling racks; cool completely.
  • In 1-quart saucepan, cook caramels and water over low heat 7 minutes, stirring until smooth. Drizzle warm glaze over cookies. Let stand 15 minutes or until set. Store tightly covered up to 5 days.

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugars and pudding mix until light and fluffy, 5-7 minutes. Add eggs; mix well. Beat in applesauce. 1/2 cup butter, softened
1/4 cup confectioners' sugar
1/4 cup packed brown sugar
1/4 teaspoon salt
1 large egg, room temperature
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup miniature semisweet chocolate chips
48 round toothpicks
1 package (11 ounces) Kraft caramel bits
2 tablespoons water
1 cup finely chopped pecans, peanuts or M&M minis

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugars and salt until light and fluffy. Beat in egg and vanilla. Gradually add flour and mix well. Stir in chips., Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Bake until set, 10-12 minutes. Immediately insert a round toothpick in center of each cookie. Remove to wire racks to cool completely., In a small saucepan, combine caramels and water. Cook and stir over medium-low heat until smooth. Holding a cookie by the toothpick, dip cookie in caramel mixture, turning to coat. Allow excess to drip off. Immediately dip the bottom and sides in pecans., Place on waxed paper. 3 tablespoons frozen apple juice concentrate, thawed, divided
1 ½ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat confectioners' sugar, butter, and 1 tablespoon apple juice concentrate together in a bowl using an electric mixer until light and fluffy; stir in flour and salt until dough is just combined. Roll dough into 3/4-inch balls and arrange on ungreased baking sheets.

Steps:

  • Whisk flour, baking soda, cinnamon, and baking powder together in a bowl.

1/2 cup chopped pecans
15 caramels, unwrapped (from 14-oz bag)
1 tablespoon heavy whipping cream
1 teaspoon coarse sea salt

Steps:

  • Heat oven to 375°F. In large bowl, stir together cookie mix, butter, egg, flour, apple pie spice, apple and pecans; stir until stiff dough forms and apple pieces are worked into dough. 1 pkg refrigerated sugar cookie dough, roll 16.5 oz,
1/4 tsp ground cinnamon
2 Tbsp unsalted butter or margarine
1/4 c packed brown sugar
1 tsp apple pie spice
1 1/3 c apples, peeled, cored and finely chopped (Gala or Granny Smith)
1/3 c pecans, finely chopped
1 1/4 c powdered sugar
1 Tbsp caramel ice cream topping
1 Tbsp whole milk
**PLUS ALL-PURPOSE FLOUR FOR DUSTING

Steps:

  • 1. In a large bowl, break cookie dough into pieces. Sprinkle cinnamon over cookie dough.
  • 2. Using hands, work cinnamon into cookie dough for 1 minute or until blended.
  • 3. Reshape cinnamon-flavored cookie dough into a cylinder form; cover in plastic wrap and chill in the freezer for 15 minutes to chill quickly.
  • 4. Meanwhile, prepare the filling. Melt butter in a large non-stick skillet over medium heat.
  • 5. Stir brown sugar, apple pie spice, chopped apples, and chopped pecans into melted butter. Cook for 1 1/2 to 2 minutes, or until mixture is blended and apples are tender, stirring occasionally.
  • 6. Remove apple pecan filling mixture from heat and let cool 12 to 15 minutes.
  • 7. Spread a 15-inch large sheet of wax paper onto a large work surface. Dust paper and rolling pin lightly with flour.
  • 8. Roll chilled cinnamon flavored cookie dough on flour dusted paper to form a 10x7 inch rectangle.
  • 9. Spoon and spread cooled apple pecan filling over dough rectangle, to within 1/2 inch of edges.
  • 10. Using paper to guide, beginning with a long side, carefully roll up the cookie dough and filling, using the wax paper to lift and guide the roll.
  • 11. Wrap in wax paper or plastic wrap. Chill for 1 to 2 hours in refrigerator.
  • 12. Heat oven to 375 degrees F. Cut and spread two sheets of parchment paper over 2 large baking sheet or cookie sheet pans; set aside.
  • 13. Spread an additional 15-inch sheet of wax paper onto a large work surface and dust lightly with flour.
  • 14. Cut chilled cookie filled roll into 1/4-inch slices to form 18 pinwheel sliced cookies.
  • 15. Place slices onto prepared baking sheet pans at least 2-inches apart.
  • 16. Bake for 8 to 10 minutes, or until lightly browned and edges are firm. Cool on baking sheet pans over cooling racks for 15 minutes.
  • 17. Meanwhile, prepare caramel glaze. In a medium bowl, stir powdered sugar, caramel topping, and milk together for 1 minute or until blended and creamy.
  • 18. Drizzle or spread a little caramel glaze evenly over each cookie. With a flat spatula, carefully place cookies onto a serving plate and serve. Serves 18 cookies. Store any leftover cookies in an airtight container.

3/4 tsp baking soda
1/2 tsp sea salt
1 1/2 stick unsalted butter
1/2 c granulated sugar
1/2 c brown sugar, firmly packed
1 egg
1 tsp vanilla
1 green apple
3 squirts of lemon juice
1 c chopped walnuts
3 4 oz. breakfast bars
**caramel sauce to drizzle
**coarse sea salt for topping, opt

Steps:

  • 1. These are the Breakfast bars I used, you can use whatever brand or flavor you like.
  • 2. Before you begin, place breakfast bars in food processor and crush, set aside. Peel and core apple, cut into very small diced pieces, squirt with a little lemon juice, set aside.
  • 3. In mixing bowl combine butter and sugars and mix. To that add vanilla, baking soda, salt and egg and mix well. Now add flour a little at a time until completely combined. Now add diced apples and chopped walnuts, mix only to combine, do not over mix.
  • 4. Spoon out by the tablespoon, roll in your hand to form a ball. Coat with crushed breakfast bar crumbs.
  • 5. Bake 375º for 9-10 min. Allow to cool completely, remove to bake sheet with wire rack.
  • 6. Drizzle with caramel sauce, sprinkle with coarse sea salt if desired. Remove caramel from can into small bowl, microwave about 1 min or until you can stir and drizzle easily.

Steps:

  • 1. Preheat oven to 350°. 2. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (through salt) in a bowl; stir well. 3. Place sugars and butter in a large bowl; beat with a mixer at medium speed until light and fluffy. Add vanilla and egg; beat well. Gradually add flour mixture; beat at low speed until just combined. Fold in apple and caramel bits. 4. Drop dough by 2 teaspoonfuls 2 inches apart onto baking sheets lined with parchment paper. Flatten balls slightly with hand. Bake at 350° for 9 minutes. CARAMEL APPLE WHISKEY COOKIES

Sorting through a box full of cookie recipes I came upon this one, decided to share.

1 stick unsalted butter, softened
3/4 c dark brown sugar
1 egg, room temperature
1/3 c cup jameson irish whiskey or a good quality whiskey of your choosing.
3/4 tsp sea salt
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp freshly grated nutmeg
1 c oatmeal flour. you can make your own by putting oats in a food processor.
1 1/2 c unbleached all-purpose flour
1 large granny smith apples, grated
1 c caramel pieces, small bits
1 c walnuts (optional)

Steps:

  • 1. Preheat the oven to 375 degrees. Cream the butter and sugar until light and fluffy. Add the egg and beat until incorporated.
  • 2. Now add the whiskey and mix. The mixture will look curdled.
  • 3. Add the salt, baking powder, baking soda, and nutmeg and beat until incorporated. Scrape down the sides of the bowl and mix again.
  • 4. Add the oatmeal flour and all-purpose flour slowly while the mixer is going. Mix until all the flour is incorporated. Add the grated apple, caramel pieces, and walnuts, mix until incorporated.
  • 5. Using a large scoop, scoop rounded dough balls onto baking sheets lined with foil or parchment..Bake at 375 for 8-10 minutes, until lightly browned.
  • 6. Allow to cool for 5 minutes before removing from the foil or parchment. The caramel may stick so remove carefully to not break the cookies.
  • 7. All done, have a sip of whiskey :)

1 cup raisins or 1 cup dried cranberries
1 cup pecans
1/4 cup milk
icing
2 tablespoons butter
2 tablespoons brown sugar
3/4 cup powdered sugar
4 teaspoons milk

Steps:

  • Beat butter, sugar and egg well.
  • Add apple, milk, raisins and nuts.
  • Add all dry ingredients.
  • Drop onto greased sheets.
  • Bake 350° for 10 minutes or until done.
  • Cool and top with icing.
  • Icing: Melt butter and sugar in small pan.
  • Stir and bring to a boil over medium heat.
  • Simmer 2 minutes.
  • Remove heat add icing sugar and milk.

DOUBLE CARAMEL APPLE COOKIES

We love caramel and apples, so this cookie caught our eye. We were definitely not disappointed. It has all the classic fall flavors packed inside. As you bite into the caramel apple cookie, there are bits of fresh apple and caramel oozes out. Yum!

1/3 c butter
1/3 c shortening
1/2 c applesauce
1 1/4 c brown sugar
1 tsp baking powder
1/2 tsp cinnamon
1 tsp vanilla
2 eggs
3 1/4 c all-purpose flour
1/2 apple, peeled and diced
10 hard caramels, finely crushed almost into powder (mine were homemade but you can use store-bought)
19 soft caramels, cut in half and rolled into balls about 1/3" in diameter (I used my own recipe, which you can find at the end of the instructions)

Steps:

  • 1. Soften the butter and shortening together until no solid chunks remain when mixed.
  • 2. Add applesauce and brown sugar. Cream together.
  • 3. Add cinnamon and baking powder. Mix well to distribute the cinnamon.
  • 4. Add eggs and vanilla; mix well.
  • 5. Slowly add in flour. You may need to add a little more until the dough is sticky but not wet looking.
  • 6. Add in the crushed caramels and the diced apple until evenly distributed.
  • 7. Refrigerate dough until firm (about 10 minutes).
  • 8. Use a cookie dough scoop or two spoons to make a ball of dough about the size of a ping-pong ball. Slightly flatten. Take a ball of soft caramel and place it in the middle and wrap the dough around it to close the caramel inside. Place the ball with the side where the opening was up on a cookie sheet sprayed with Pam (this will prevent the caramel from "leaking" out).
  • 9. Bake at 350 for 18-20 minutes depending on your oven. They won't look very brown on top but the edges on the bottom should be golden.
  • 10. Carefully remove from the cookie sheet using a spatula. These are tender and with the melted caramel hot they can break easily if you aren't careful. I suggest you move them to a separate pan or cooling rack soon after baking so that the caramel is still soft and easy to manipulate.
  • 11. ***HOMEMADE SOFT CHEWY CARAMELS WITHOUT CORN SYRUP*** 3 cups sugar 2 cups heavy cream 1 cup milk (regular not evaporated or condensed) 1 cup butter 1/2 cup honey 1/2 cup molasses 1 tsp vanilla 1. Combine all ingredients in a soup-size pan (large) over medium-high heat. 2. Stir continuously until the mixture pulls away slightly from the sides of the pan and only slowly flows off the back of a spoon, or when a candy thermometer reaches 245 degrees F. (You can test it by pouring a little onto a cool plate, waiting a few seconds and testing to see if it's soft. If it's still runny and won't hold its shape you need to keep waiting. This will take about 30 minutes. DON'T WAIT TOO LONG OR IT WILL HARDEN!!!) 3. Remove from heat and stir in the vanilla. It will steam and froth but just mix until smooth. 4. Pour into a 13x9 pan sprayed with Pam and let cool. ***If you let it cook a little longer then you will have the hard caramels I used in this cookie recipe.

1 cup softened butter
1 cup granulated sugar
1/2 teaspoon salt
1 box (7.4 oz) alpine spiced apple cider instant original drink mix -not sugar free- all 10 packets (i found this in my grocery store near the hot chocolate mixes.)
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
3 cups all purpose flour
1 bag kraft caramels (14 oz)

Steps:

  • 1. Preheat oven to 350° F. Line cookie sheets with parchment. (You really need the parchment!)
  • 2. In a small bowl whisk together flour, baking soda, baking powder and cinnamon.
  • 3. With your mixer (or an energetic spoon) cream together butter, sugar, salt and all 10 packages of apple cider drink mix powder, until light and fluffy.
  • 4. Beat in eggs, one at a time. Add vanilla and mix well.
  • 5. Gradually add flour mixture to butter/egg mixture. Mix until just combined.
  • 6. Refrigerate for about an hour. (If you're really impatient you don't have to do this, but it makes it so much easier to work with.)
  • 7. When you are ready to bake, unwrap your caramels.
  • 8. Scoop out cookie dough ball about the size of a walnut. (I used a rounded cookie scoop-full. My scoop holds about a Tablespoon.)
  • 9. Flatten the ball of dough slightly in the palm of your hand. Press the unwrapped caramel into the center of your dough and seal the dough around it, covering it completely. Place on parchment covered cookie sheets 2 inches apart.
  • 10. Bake 12-14 minutes, or until very lightly browned around the edges. Please don't over-bake! Once the cookies are done, slide the parchment off of the baking sheet right out onto the counter. Allow cookies to partially cool on the parchment. When cookies are cool enough to be firm but still slightly warm, carefully twist off of parchment and allow to finish cooling upside down (either on the parchment or on a rack.) If you forget about them and they cool too much and stick to your parchment, put them into the freezer for a few minutes and they'll pop right off.
  • 11. Yield: about 4 dozen, depending on how large you make your cookies (or how many caramels have been snitched out of your bag before you begin.) Store in an airtight container.

1 package (0.13 to 0.14 oz) strawberry, cherry, tropical punch or lemon-lime-flavored unsweetened soft drink mix
About 12 craft sticks (flat wooden sticks with round ends)
24 caramels (from 14-oz bag)
2 tablespoons water
Betty Crocker™ candy sprinkles, if desired

Steps:

  • Heat oven to 400°F. In large bowl, beat sugar, butter and shortening with electric mixer on medium speed, or mix with spoon. Stir in vanilla and egg. Stir in flour, baking soda, salt and soft drink mix (dry).
  • On lightly floured cloth-covered surface, roll dough 1/4 inch thick. Cut with 3-inch round or apple-shaped cookie cutter. On ungreased cookie sheet, place cutouts 2 inches apart. Carefully insert 1 inch of wooden stick into side of each cookie.
  • Bake 6 to 8 minutes or until edges are light brown. Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
  • In 2-quart saucepan, heat caramels and water over low heat, stirring frequently, until melted and smooth. If caramel glaze becomes too stiff, heat over low heat, stirring constantly, until softened.
  • Spread top third of each cookie (opposite wooden stick) with caramel glaze. Hold cookie upright to allow glaze to drizzle down cookie. Sprinkle with candy sprinkles.

  • Beat shortening and brown sugar in medium bowl until blended; beat in egg.
  • Mix in 1/4 cup apple juice.
  • Combined flour, baking soda, salt, and spices; mix in remaining 1/4 cup apple juice and apples.
  • Drop by teaspoonfuls, 2 inches apart, onto greased cookie sheets.
  • Bake at 350 until browned, 10 to 12 minutesCool on wire racks.
  • Spread with frosting and sprinkle each cookie with crushed walnuts.
  • Caramel Frosting: Heat margarine, brown sugar, and water over medium high heat in saucepan,stirring until sugar dissolves.
  • Remove from heat; beat in powdered sugar and enough milk to make spreadable consistency; use immediately.
  • If frosting begins to harden, return to low heat and stir in more milk.
