CARAMEL AMARETTO APPLE PIE
The original recipe is from the Pro Football Hall of Fame "Taste for Heroes". I've made a couple of changes and hope you like it. GREAT Autumn apple recipe with a "kick".

Steps:
- Combine the first five ingredients (apples, brown sugar, cornstarch, amaretto and cinnamon in a bowl and mix well.
- Pour this mixture into the unbaked pastry shell.
- In a separate bowl, combine the pecans and remaining ingredients and stir until this mixture is crumbly.
- Sprinkle this mixture over the apple pie and press it gently into the pie filling.
- Bake at 350 degrees for one hour or until lightly brown. (I do use a pie ring to keep the crust from getting too brown).
- Serve warm or cool to room temperature before serving.
- I have also served it with spiced whipped topping which is one small container of Cool Whip to which I've added 2 tablespoons of either pumpkin pie spice or apple pie spice and 1 tablespoons of brown sugar and stirred well.

- Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a large bowl, toss apples with lemon juice and vanilla. Mix pecans, sugars, cinnamon and cornstarch; add to apples and toss to combine., Spread caramel topping onto bottom of crust. Fill with apple mixture. Drizzle with butter. , For streusel topping, mix flour and sugar. Cut in butter until crumbly; stir in pecans. Sprinkle over filling., Bake on a lower oven rack until filling is bubbly, 65-75 minutes. Drizzle with caramel topping. Cool on a wire rack. If desired, serve with whipped cream and additional caramel topping.

CARAMEL APPLE PIE MARTINI
I came up with this when I was in the mood for an apple pie martini, but I was out of vanilla vodka. These don't taste as boozy as they are, so they are kind of dangerous! This makes two large drinks or three if your glasses are small.

Steps:
- Combine vodka, amaretto, and the 2 schnapps in a cocktail shaker with ice; shake until cold and blended.
- Combine cinnamon, sugar, and cracker crumbs on a small plate.
- Pour vanilla on another small plate and dip rims of two martini glasses.
- Dip wet rims into the sugar mixture.
- Pour the cold cocktail mixture into the glasses.
- Garnish with an apple slice and a pinch of the leftover sugar mixture.
- Alternatively instead of rimming the glasses, you can just mix the sugar and cinnamon together, and add a bit to each glass after pouring the drinks.

- In a large bowl, mix flour, sugar and salt; cut in butter until crumbly. Gradually add water, tossing with a fork until dough holds together when pressed. Shape into a disk and wrap in plastic. Refrigerate 1 hour or overnight., Meanwhile, preheat oven to 450°. In a Dutch oven, combine filling ingredients. Cook over medium heat 10-15 minutes or until apples are almost tender, stirring occasionally; remove from heat., On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. - Peel, core and slice apples.
- Add apples to large pot. Add sugar, 1 stick butter, water, vanilla and cinnamon.
- Bring to a boil and boil for 15-20 minutes, reduce heat to medium low.
- Add Amaretto and let simmer another 5 minutes.
- Place in jars, process in water bath to seal.

- Preheat oven to 350°. On a lightly floured surface, roll out crust; cut into twenty 2-1/2-in. circles. Press onto the bottom and up the sides of miniature muffin cups coated with cooking spray.
