1 recipe rice cereal treats (recommended: Rice Krispies Treats) prepared according to instructions on the box
1 cup milk
1/2 cup sugar
3 to 6 tablespoons instant flour (recommended: Wondra) or enough as needed to adjust the thickness of the sauce
1 1/2 cups (1 12-ounce jar) caramel ice cream topping
3 or 4 bananas
1 cup mini marshmallows
1 quart vanilla ice cream

Steps:

  • Press the rice cereal treat mixture evenly into a 13 by 9 by 2-inch pan coated with cooking spray. When cooled, cut into 12 pieces by cutting into thirds lengthwise and fourths crosswise.
  • Heat milk in a saucepan over low heat. Stir in sugar until it dissolves. Stirring constantly, add caramel topping until all ingredients are mixed and becomes a sauce. The sauce will be a consistency into which you will be able to fold in the bananas without mashing them, but is still thick. If necessary, use instant flour to thicken. Slice bananas into the sauce and fold in gently.
  • Spoon bananas and caramel sauce over rice cereal treats. Top with mini-marshmallows and a scoop of vanilla ice cream.

6 slices center-cut bacon or turkey bacon
12 small square wonton wrappers*
1/4 cup fat-free mayonnaise
3 tablespoons Hellmann's/Best Foods Dijonnaise
Dash garlic powder
Dash salt
Dash black pepper
3 large plum tomatoes, chopped
2 cups finely chopped romaine or iceberg lettuce

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add bacon and cook until crispy, about 4 minutes per side. Set it aside to drain and cool on paper towels.
  • Spray a 12-cup muffin pan with nonstick spray. Place each wonton wrapper into a cup of the muffin pan, and press it into the bottom and sides. Lightly spray the wrappers with nonstick spray.
  • Bake in the oven until they are light golden brown, about 8 minutes. Set aside to cool.
  • In a large bowl, combine mayo, Dijonnaise, garlic powder, salt, and pepper. Mix well. Add tomato and lettuce. Finely chop the bacon and add about three-fourths to the bowl; reserve the rest for topping. Gently stir until uniform. Set aside.
  • Transfer the cooled wonton shells to a plate. Evenly distribute the mixture among the shells, about 3 tablespoons per shell. Evenly top with the remaining bacon. Serve immediately!

1/4 cup ketchup
1 cup mayonnaise
1 tablespoon rice vinegar
1 lemon, zest grated and juiced
1 tablespoon finely minced chives
1 tablespoon finely minced parsley leaves
Salt and freshly ground black pepper
1 large ripe yet firm fresh tomato, very thinly sliced with a mandoline
1 English cucumber, peeled and very thinly sliced with a mandoline
1 1/2 cups mixed greens (organic mesclun mix such as arugula, mache, chicory, sorrel) soaked in salt water to remove grit, thoroughly rinsed, dried in a salad spinner, and shredded into 1/4-inch wide pieces
1 heart romaine, separated into individual leaves
1 tablespoon shaved red onion

Steps:

  • To make the salad dressing, whisk together, ketchup, mayonnaise, rice vinegar, lemon zest, lemon juice, chives, and parsley. Season, to taste, with salt and pepper and set aside.
  • To assemble the carpaccio, place a large tomato slice on each serving plate to be used as the base. Top with 4 thin slices cucumber, distributing evenly atop the tomato. Put a 1/4 teaspoon of salad dressing in the center of cucumbers to anchor a romaine leaf placed curved side up. Top romaine with a small amount of shaved red onion.
  • Place 1/2 cup of greens alongside carpaccio. Drizzle dressing on and around and serve additional dressing on the side.

1 (18 ounce) box Cap'n Crunch cereal
6 tablespoons butter
1 (16 ounce) bag marshmallows
1/2 teaspoon pure vanilla extract
salt, a pinch

Steps:

  • Grease a 13 x 9 inch baking pan with softened butter or spray with nonstick cooking spray.
  • Add the cereal to a bowl; set aside.
  • Melt the butter in a large saucepan over low heat.
  • Add the marshmallows, vanilla, and salt; cook, stirring constantly, until the marshmallows are melted into the butter.
  • Immediately pour the marshmallow mixture over the cereal and stir with a large wooden spoon until all the cereal is coated with melted marshmallows.
  • Spoon the cereal mixture into prepared pan.
  • With buttered hands, gently but firmly press the cereal into the pan to compact the mixture.
  • Let the mixture cool completely.
  • When cool, cut into 15 large bars.
  • Serve right away, or wrap each bar separately with waxed paper or plastic wrap and store in covered container for up to 2 days.

2 large shallots, diced
1 pound fresh frozen English green peas, defrosted
1 cup heavy cream
1/2 cup grated Parmesan
Salt
Freshly ground black pepper
1/4 cup freshly chopped mint leaves, optional

Steps:

  • In a large saute pan, add the oil and shallots over medium heat and cook shallots until they are transparent and tender, about 5 minutes. Add the peas and warm through. Next add the heavy cream and Parmesan and continue to cook until all of the cheese has been incorporated. Adjust seasoning just before serving and, if you like, sprinkle with chopped fresh mint.
