An elegant and easy take on a classic caprese skewer dish. Great for an appetizer at a dinner party. Serve with a small bowl of balsamic vinegar and good quality olive oil for dipping.

Steps:
- Wrap each mozzarella ball with a basil leaf.
- Thread a tomato half, a basil-wrapped mozzarella ball, and another tomato half onto a skewer. Repeat until all tomatoes are on skewers. Sprinkle with salt and pepper.

- Using a skewer, put 1/2 tomato, cut side up, followed by a piece of mozzarella, basil, second piece of mozzarella and finish with another tomato half. Season skewers with salt, pepper, oil and vinegar.
CAPRESE SKEWERS WITH PLUM BALSAMIC DRIZZLE

- Put the bocconcini in a large bowl with the olive oil, red pepper flakes and some salt and pepper. Cover with plastic wrap and marinate in the refrigerator for at least 1 hour.
- In a food processor or blender, puree the plums with the balsamic vinegar until smooth. Pour the mixture into a medium pot and bring to a boil over medium-high heat. Turn the heat down to simmer and cook until the mixture has reduced by about half, several minutes. It should be fairly thick, but remember, it will continue to thicken as it cools. When cool, pour it into a squeeze bottle and refrigerate.
- Trim about 2 inches of the leaves off the bottoms of the rosemary sprigs. Skewer a tomato followed by a bocconcino onto each. Arrange on a platter, cover and refrigerate until ready to serve. Just before serving, squeeze over the plum balsamic drizzle.

- Instructions Drain the ciliegne & set aside. Make watermelon balls using a melon baller. Place the balls in a separate bowl. To make the skewers, pierce one ciliegne onto a toothpick. Next, pierce a basil leaf & slide it next to the ciliegne. Skewer a watermelon ball onto the toothpick. Arrange all the watermelon caprese skewers on a serving plate & serve with your favorite bubbly.
SIMPLE CAPRESE SKEWERS
Steps:
- Step 1: Drain water from bocconcini, add to large bowl.
- Step 2: Wash and add cherry tomatoes to bocconcini.
- Step 3: Pour olive oil over bocconcini and tomatoes; toss until lightly coated.
- Step 4: Wash basil and pat dry.
- Step 5: Begin threading skewers with one bocconcini, a few basil leaves (fold in half before skewering), and a cherry tomato.
- Step 6: Display skewers on festive platter and sprinkle with coarse sea salt. Use any left over basil as decoration on platter.
