Steps:
- Salt the tomatoes and layer on the bottom piece of bread with the mozzarella and basil. Drizzle with Basil Oil. Top with the remaining piece of bread. Slice into portions.
- Add the basil to boiling water for 45 seconds to 1 minute. Remove to a bowl of ice water to stop it from further cooking. Dry and add to a blender. Add the olive oil, and blend until smooth. Strain through cheesecloth into a bowl. Add salt and pepper to taste. Add the lemon juice right before serving.

Steps:
- Preheat an oven to 400 degrees F (200 degrees C).
- Cut off the top of the head of garlic to expose the cloves, trimming about 1/4 inch off of the top of each clove. Drizzle the cut cloves with olive oil, then nestle the head into a piece of aluminum foil. Place in preheated oven and bake until the cloves are tender, about 35 minutes. Remove garlic from oven; do not turn oven off. Squeeze garlic from cloves into a small dish; mash into a paste.
- Spread the butter on the cut sides of the bread, sprinkle with rosemary, and place on a baking sheet. Toast bread in preheated oven for 5 minutes. Remove from oven and spread with garlic paste. Top one half of loaf with basil and tomatoes. Drizzle tomato slices with balsamic vinegar. Top remaining half of loaf with sliced mozzarella. Return sandwich halves to baking sheet.
- Place in hot oven and cook until the cheese has melted, about 10 minutes. Allow sandwich to cool slightly before assembling. Cut into 4 pieces to serve.

FRAL'S CAPRESE SANDWICH ON GRILLED CIABATTA BREAD
In an attempt to turn a salad we saw on TV into a sandwich for a tailgate party We came up with this...Grilled garlic Ciabatta bread slathered with a garlic mayo and peppercorn mustard mixture on both top and bottom and filled with grilled balsamic eggplant slices, arugula, roasted red peppers, fresh mozzarella and fresh basil. - Combine the mayonnaise, peppercorn mustard (or any spicy mustard) and garlic in a small bowl and season with salt and pepper, to taste. Refrigerate to let the flavors meld while you work on the rest of the sandwich.
- Heat a grill to high.
- Brush the eggplant on both sides with oil and season with salt and pepper, to taste. Grill until golden brown on both sides and just cooked through, about 4 minutes per side, basting with the balsamic on both sides. Brush the peppers with oil and season with salt and pepper, to taste. Grill until charred on all sides, remove, place in a tightly closed paper bag and let steam for 10 minutes. Remove the skin and the seeds and cut the peppers into strips and set aside.
- When ready to assemble, slice the bread in half lengthwise and put in the toaster oven, cut side up, and toast until a light brown color appears it crisps up slightly. Spread the bread with the mayonnaise mixture on both sides and top the bottom half with eggplant, then arugula, then the peppers and then the cheese. Return this half to the toaster oven to melt the cheese, remove and add the basil then cover with the top of the bread, slice and serve.

- Mix mayonnaise, mustard, and lemon juice in a small bowl; season with salt.
- Toss shallot, garlic, and vinegar in another small bowl; season with salt. Let sit 10 minutes. Drain, reserving shallots and vinegar separately in small bowls.
- Prepare a grill for medium-high heat. Brush cut sides of bread with 2 Tbsp. oil total and grill until lightly charred, about 2 minutes per side. (Or broil bread halves, cut side up, until lightly charred, about 2 minutes.) Season with salt; let cool.
- Heat a large cast-iron skillet over medium-high (you can do this directly on the grill grates or on a burner). Toss tomatoes with remaining 2 Tbsp. oil and cook, shaking pan often, until tomatoes are blistered and lightly charred, about 3 minutes. CAPRESE AND SHRIMP COCKTAIL SANDWICH
Hidemi turned shrimp cocktail into one amazing sandwich! I was expecting the cocktail sauce to have a lot of heat, but it did not. There's some spice, but it adds to the flavor of the sandwich. Avocado and fresh mozzarella added different textures. The basil/olive oil mixture adds the last pop of flavor. This is delicious!

- Pat shrimp dry with paper towels and season with salt and black pepper.
- Make cocktail sauce. In a bowl, mix together ketchup, horseradish wasabi paste, tabasco and lemon juice.
- In a non-stick skillet, melt 1 teaspoon of butter over medium heat. Add shrimp and cook for 60-90 seconds. Flip and cook the other sides for about 30 seconds then add white wine and cook until the wine is evaporated tossing to coat frequently. Add the 2/3 of the cocktail sauce to the skillet and toss to coat. Remove the skillet from the heat and set aside.
- Slice avocado lengthwise thinly.
- In another bowl, mix together basil and olive oil. Add garlic salt and black pepper to taste.
- Assemble sandwich. On both sides of one slice bread, spread 2 teaspoons butter (1 teaspoon for each side). On one side of the other one slice bread, spread the reserved 1/3 of the cocktail sauce. On one side of the other one slice bread, spread the basil mixture.
- On the basil mixture spread slice bread, place tomato slices, mozzarella slices and avocado slices. Put the butter spread slice bread then put shrimp on the bread and put the cocktail sauce spread slice bread, sauce spread side down, to close sandwich. Press the top gently.
