This delicious Homemade Caprese Pizza is filled with mozzarella, tomato, and basil and baked in the oven for under 15 minutes. Easy and delicious weeknight dinner for everyone in the family.

1 ½ cups cherry tomatoes (halved (heirloom tomatoes or Roma tomatoes would also work))
1 tablespoon olive oil
½ teaspoon kosher salt
¼ teaspoon ground black pepper
¾ cup fresh basil leaves (loosely packed - more to use as a garnish at the end)
3 cloves of garlic (minced)
¼ teaspoon kosher salt
¼ teaspoon ground black pepper
1 tablespoon olive oil
1 lb. store-bought pizza dough (thawed if frozen)
8 oz. fresh mozzarella, cut/torn into small pieces ((227 grams))
1 teaspoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons balsamic reduction (optional)

Steps:

  • Place the oven rack at the very top setting and preheat the oven to 450 F (232C) degrees.
  • Place tomatoes on a sheet pan. Drizzle with olive oil and sprinkle with salt and pepper. Give them a toss. Roast until tomatoes start to burst, 9-10 minutes. Set aside. Do not turn the oven off.
  • Place a sheet pan or a pizza stone on the top shelf in your oven.
  • While the tomatoes are roasting make the basil mixture. To do so, place basil, garlic, salt, and pepper in the bowl of a food processor. Pulse a few times to break it into smaller pieces. While the machine is running, drizzle it with olive oil. You may have to scrape the sides with a spatula a few times to turn it into a paste.
  • Roll the pizza dough into a 14.5-inch circle. Spread it evenly with the basil mixture leaving an inch on the sides. The basil sauce will be a very thin layer. Scatter the roasted tomatoes and mozzarella pieces on top. Lightly brush the sides with olive oil.
  • Using a pizza peel or the back of a sheet pan, carefully slide the pizza onto the preheated sheet pan or pizza stone. Bake 12-14 minutes or until the cheese is totally melted and the sides turned golden brown.
  • Remove from the oven and sprinkle it with fresh basil. Let it rest for a few minutes, cut into 8 slices, drizzle with the balsamic reduction (if using), and enjoy.

Yellow cornmeal (for sprinkling)
3 cups Original Bisquick™ mix
2/3 cup very hot water
3 tablespoons olive or vegetable oil
2 to 3 fresh plum (Roma) tomatoes, sliced
6 oz fresh mozzarella cheese, sliced
1/2 cup fresh basil leaves, loosely torn
1/2 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 450°F. If you're using a pizza stone or 12-inch pizza pan, lightly dust with cornmeal. (If you don't have a pizza stone or pizza pan, prepare cookie sheet lined with parchment paper and dust with cornmeal.)
  • In medium bowl, stir Bisquick mix, water and 2 tablespoons of the oil until soft dough forms. Cover; let stand about 10 minutes. Pat or press dough onto stone or pizza pan into 12-inch circle, using fingers dipped in Bisquick mix. Bake 6 to 7 minutes or until lightly browned around edges.
  • Remove dough from oven and brush with remaining tablespoon of oil and top with sliced tomatoes. Follow with cheese slices, basil, and finish by sprinkling Parmesan across the top. Bake 10 to 12 minutes or until crust is golden brown and cheese is melted.

PANCETTA AND ONION PIZZA

5 ounces slab bacon or pancetta, finely diced (about 1 cup)
1 1/2 pounds prepared pizza dough or homemade, recipe follows
All-purpose flour
Kosher salt
Olive oil, for drizzling
1 1/4 cups prepared pizza tomato sauce or homemade, recipe follows
1 1/2 cups shredded mozzarella (about 5 ounces)
1/2 leek (white and light green parts only) or white onion, very thinly sliced
1 clove garlic, minced
1/2 cup freshly grated Parmesan or Pecorino Romano cheese (about 1 ounce)
12 fresh basil leaves
Crushed red pepper flakes, optional
1 cup warm water (about 105 degrees F)
2 teaspoons sugar
1 (.25-ounce) packet active dry yeast, about 2 1/4 teaspoons
1 tablespoon extra-virgin olive oil, plus extra for brushing
3 cups all-purpose flour, plus more as necessary
1 teaspoon fine salt
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
1 (28-ounce) can San Marzano tomatoes
4 to 6 fresh basil leaves
Kosher salt

Steps:

  • Put a pizza stone on the bottom rack in the oven and preheat to 500 degrees F for at least 30 minutes. Heat a small skillet over medium heat, add the pancetta or bacon, cook until the fat renders but is short of being crisp, about 5 minutes. Transfer with a slotted spoon to a paper towel-lined plate to drain. Divide the dough into 2 equal portions; form each into a ball. Roll a portion into a 12-inch disk on a floured surface (cover the other piece with a kitchen towel). Lightly dust a pizza peel with flour and put the dough on the peel, drizzle lightly with oil and sprinkle with salt. Slip the dough onto the preheated stone and cook until just set, about 4 minutes. Using the peel, remove the dough from the oven and top with about half the sauce and toppings - pancetta, mozzarella, onion and garlic. Drizzle with a little olive oil. Return the pizza to the stone and cook until the crust is golden and the cheese melts, about 5 to 7 minutes more. Remove the pizza, top with half the grated Parmesan and scatter with some basil leaves and pepper flakes, if desired. Serve. Repeat with the remaining dough and toppings.
  • Whisk water and sugar in a bowl and scatter the yeast over the top. Set aside until foamy, about 10 minutes. Stir in olive oil. Whisk the flour and salt in a large bowl. Make a well in the center and pour in the yeast mixture. Gradually stir the dry ingredients into the liquid to make a rough, shaggy dough. Turn out onto a lightly-floured work surface and knead until smooth and elastic, about 5 minutes. If the dough seems wet, add just enough flour to prevent sticking. Brush a large bowl with olive oil. Form the dough into a ball, rotate it around the bowl to coat and place it seam-side down in the bowl. Cover the bowl tightly with plastic wrap. Set aside at room temperature, until doubled, about 1 1/2 hours. Or cover and refrigerate overnight. If refrigerating bring to room temperature about 30 minutes before forming. Yield: Makes 1 1/2 pounds of dough, enough for 2 (12 inch) pies
  • Heat the olive oil in a medium saucepan over medium-high heat. Add the garlic and cook until golden but not dark brown, about 20 seconds. Using your hands, crush the tomatoes and add them to the pot along with 1/2 cup water, basil, and season with salt. Bring to a boil, reduce heat to medium-low and simmer until the sauce thickens, about 15 minutes. Serve.

1 package (6-1/2 ounces) pizza crust mix
2 tablespoons extra virgin olive oil, divided
2 garlic cloves, thinly sliced
1 large tomato, thinly sliced
4 ounces fresh mozzarella cheese, sliced
1/3 cup loosely packed basil leaves

Steps:

  • Preheat oven to 425°. Prepare pizza dough according to package directions. With floured hands, press dough onto a greased 12-in. pizza pan. , Drizzle 1 tablespoon olive oil over dough and sprinkle with sliced garlic. Bake until crust is lightly browned, 10-12 minutes. Top with tomato and fresh mozzarella; bake until cheese is melted, 5-7 minutes longer. Drizzle with remaining 1 tablespoon olive oil and top with basil. Serve immediately.
