3/4 cup shortening
1 teaspoon vanilla
5 1/4 cups confectioners' sugar
1/4 cup milk, plus
2 teaspoons milk
3/4 cup unsweetened cocoa powder, plus
2 tablespoons unsweetened cocoa powder
1 tablespoon instant coffee powder, plus
1/2 teaspoon instant coffee powder
1 cup hot water, plus
3 tablespoons hot water

Steps:

  • In a large bowl, combine shortening and vanilla.
  • Blend in half of the confectioner's sugar.
  • Blend in 2 Tblsp milk.
  • Repeat with remaining confectioners sugar and 2 Tblsp milk.
  • Mix in approximately half of the cocoa.
  • Dissolve 1 Tblsp instant coffee into 1 cup of hot water.
  • While still warm, pour two tablespoons of the coffee into the frosting mixture.
  • Mix in remaining cocoa. Add coffee mixture, a tablespoon at a time, until desired consistency is achieved.
  • Fill and frost cake.

My cappuccino cake recipe features two layers of dark chocolate cake with cappuccino buttercream frosting, chocolate ice cream, and chocolate syrup.

2 heaping tablespoons dark cocoa powder (plus more for dusting pans)
1 box any flavor of chocolate cake mix
1 cup sour cream
1/2 cup milk
1/4 cup oil
3 eggs
1-2 teaspoons vanilla extract
1 teaspoon vanilla extract
5 cups confectioner's sugar
Enough instant coffee granules to make three 6-oz cups of coffee
1/2 cup milk
2 sticks softened butter

Steps:

  • Preheat the oven to 350.
  • Grease two cake pans with shortening and dust with cocoa powder.
  • Place all the cake ingredients in a mixing bowl.
  • Mix for about two minutes with an electric mixer (or until well blended), scraping down sides as needed.
  • Divide the cake batter evenly among the prepared pans and let them cook until done (about 25 minutes).
  • Let them sit in the pans for 10 minutes before turning out to cool completely.

This is a recipe I got from a friend that's diabetic. You can also make this the fattening way with whole milk, reg. pudding, and reg. Cool Whip. I've also made this with flavored coffee's for a richer flavor. I also prefer to chill before serving, but you don't have to.

1 tablespoon boiling water
1 1/2 cups cold skim milk
1 (1 1/2 ounce) package sugar-free instant chocolate pudding mix
1/2 teaspoon ground cinnamon
1 cup Cool Whip Free (sugar and fat free Cool Whip)
Cool Whip (optional)
chocolate wafer crumbs (optional)

Steps:

  • Dissolve coffee in water; set aside.
  • In a mixing bowl, combine milk, pudding mix, and cinnamon.
  • Beat on low speed for 2 minutes.
  • Stir in coffee.
  • Fold in Cool Whip.
  • Spoon into serving dishes.
  • Garnish with Cool Whip and wafer crumbs.

1/2 cup solid vegetable shortening
1/2 cup butter or margarine
2 tablespoons instant coffee granules
1/2 cup milk
5 cups confectioner's sugar ((about 1 1/4 pounds))

Steps:

  • Step 1 In large bowl, cream shortening and butter with electric mixer until light and fluffy. Combine coffee granules, milk and vanilla; add to butter mixture and beat well. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. Continue beat at high speed until light and fluffy, about 7 minutes. Step 2 Keep icing covered with a damp cloth until you are ready to decorate. For best results, keep icing bowl in refrigerator when not using. Rewhip before using.

Steps:

  • Heat oven to 350°F. Mix flour, 3/4 cup of the sugar, 2 tablespoons of the cocoa, 1 tablespoon espresso coffee, the baking powder and salt in medium bowl. Stir in 1/2 cup milk, butter and vanilla until well blended. Spread in ungreased square pan, 9x9x2 inches.

  • Beat egg in small bowl; set aside. Stir 1/4 cup of the skim milk, the cornstarch and salt in 2-quart saucepan until cornstarch is dissolved and mixture is smooth.
