WATERMELON OR CANTALOUPE AGUA FRESCA
Agua fresca is a light fruit drink popular throughout Mexico. It's simply made by blending fruit with water, a bit of sugar and a little lime juice. Begin with sweet, juicy melon, or your agua fresca won't have much flavor.

Steps:
- Blend together the watermelon or cantaloupe with 1 1/2 cups of the water, the lime juice and the sugar at high speed until smooth. Strain through a medium strainer into a large pitcher or bowl. Stir in the remaining water. Refrigerate for 1 hour or longer. Fill a glass with ice, pour in the agua fresca, garnish with a mint sprig, and serve.

CANTALOUPE AGUA FRESCA
I found this recipe in a Texas Highways cookbook. My family has always made agua fresca de melon, but never with limes.

Steps:
- Peel, seed, and coarsely chop melon.
- Place 2 cups melon in a blender, add enough water to cover melon, and blend well. Strain, reserving liquid.
- Place liquid in a 2-qt pitcher and discard solids.
- Repeat procedure with remaining cantaloupe.
- Add lime juice and sugar to pitcher and stir well. Serve over ice.

CANTALOUPE-LIME AGUA FRESCA WITH CHIA SEEDS
A light, refreshing blender drink that is sweet and a little bit tart. Although I make this in a blender, I think it qualifies as an agua fresca rather than a smoothie, as it is made with pure fruit, enriched with a spoonful of soaked chia seeds. The flavor of the drink will only be as good as your melon, so seek out the best cantaloupe, or other sweet orange melon, you can find. I don't add sweetener to the drink, but you can if you think it needs a little something.

- Working in batches, purée cantaloupe in a blender until smooth.
- Set a fine-mesh sieve over a large bowl; line sieve with cheesecloth. Strain purée into bowl; gather cheesecloth into a bundle and squeeze any remaining juice into bowl. Repeat process with fresh cheesecloth, straining into a large pitcher (you should have about 5 cups juice).
- Add lemon juice, basil, and 2 cups cold water to pitcher. Let steep at room temperature for 1-2 hours. Fill glasses with ice. Divide agua fresca among glasses.
