CHILI SAUCE



Chili Sauce image

Classic, old fashioned sweet and spicy chili sauce. PERFECT with potato pancakes, chicken and pork.

18 quarts tomatoes
2 bunches celery
3 quarts banana peppers
10 red peppers
12 onions
6 cloves garlic
1/4 cup coarse salt
4 cups vinegar
4 peaches
2.5 lbs brown sugar
2 tsps. cayenne pepper
3 tsps. cloves
3 tsps. cinnamon
2 whole cinnamon sticks
10 whole cloves

Steps:

  • Peel tomatoes by placing them in boiling water for 30 seconds and then plunging them into cold water. The skin will slide right off. If it doesn't, plunge them in the hot water again.
  • Wrap all the whole spices in a little cheesecloth bag.
  • Rough chop the remaining ingredients. Don't worry about it being pretty, just chop them up into pieces between 1/4" - 1/2".
  • Put all the ingredients into a large stock pot and bring to a boil. Once boiling, reduce heat to a simmer and simmer until thick and reduced by 1/3rd. This will take many hours. 5-10 hours depending on the type of tomatoes you use.
  • Taste as you go! If after 3 hours you find you like the taste of it, then remove the spice bag and continue to simmer until thickened. I always leave my spice bag in until the end though.

2 tablespoons distilled white vinegar
½ teaspoon chili powder
¼ teaspoon ground allspice

5 lb fresh tomatoes
3 1/2 c sugar
8 Tbsp lime juice
2 1/2 tsp ground ginger root, i used dried ginger root, fresh would work as well
1 Tbsp cilantro, dried
1 Tbsp cinnamon, ground
1/2 Tbsp clove, ground
1 Tbsp kosher salt
1 Tbsp chipotle pepper flakes

Steps:

  • 1. Sterilize jars and lids. This takes a little while, so start this when tomatoes start to thicken. I place my clean jars in my canner and cover with hot water. Bring this to a boil and boil for at least 10 minutes. Remove jars when ready to use. Pour some of the boiling water from jars back into canner and keep the water boiling so you will be ready to process jars of sauce. In another small pot; sterilize lids in gently boiling water.
  • 2. Combine sugar, lime juice, ginger,cilantro, cinnamon, cloves, salt and chipotle pepper in large pot.
  • 3. Wash tomatoes and remove any dark spots including stem. Quarter tomatoes and chop in food processer a few at a time. NOTE: do not remove skin. As you chop, pour chopped tomatoes into pot with sugar mixture. Once all tomatoes have been added, stir to combine ingredients.
  • 4. Over a medium-high to high heat, bring to a boil and then reduce temperature to a medium heat and simmer. Stirring regularly, simmer until sauce thickens and reduces to half or less of the origninal volume. This will take between 1 1/2 to 2 hours, depending on how high you keep your heat
  • 5. When sauce has cooked down sufficiently, remove from heat and fill sterlized jars, leaving 1/4 inch of head space. Wipe rims, apply lids and twist on rings. Process in a boiling water canner for 20 minutes.

FRESH TOMATO CHILI SAUCE

This is a sweet chili sauce made according to an old family recipe. It is great on hamburgers, and pot roast. If you don't can the sauce in jars, it can be refrigerated.

35 fresh tomatoes, peeled, seeded and chopped
3 fresh hot chile peppers, seeded and chopped
4 red bell peppers, cored, seeded and cut into 2-inch pieces
1 large onion, chopped
2 cups apple cider vinegar
⅓ cup fresh lime juice, or amount to taste
1 cup white sugar
1 cup packed brown sugar
1 tablespoon salt, or amount to taste

Steps:

  • Place the tomatoes in a large pot over medium heat, and simmer 1 hour. Skim off any excess liquid or foam. Stir in the chile peppers, bell peppers, onion, vinegar, lime juice, white sugar, brown sugar, and desired amount of salt. Reduce heat to low, and simmer 3 to 5 hours until liquid reduces and thickens. Adjust seasonings to taste.
  • Remove chili sauce from heat, and skim off any foam. Pour into hot, sterilized jars, leaving 1/4 inch headroom. Adjust lids. Process for 10 minutes in a boiling-water bath.

Number Of Ingredients 10

4 quarts chopped peeled tomatoes (about 24 large)
2 cups chopped onions
2 cups chopped sweet red peppers (about 4 medium)
1 serrano pepper, finely chopped
1 cup sugar
3 tablespoons salt
3 tablespoons mixed pickling spices
1 tablespoon celery seed
1 tablespoon mustard seed
2-1/2 cups white vinegar

Steps:

  • In a stock pot, combine the tomatoes, onions, peppers, sugar and salt; simmer, uncovered, for 45 minutes. , Place the pickling spices, celery seed and mustard seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag; add to tomato mixture. Cook for 45 minutes or until very thick, stirring frequently. , Add vinegar; cook to desired thickness. Discard spice bag. Carefully ladle hot mixture into hot pint jars, leaving 1/2-in. headspace. Adjust caps. Process for 15 minutes in a boiling-water canner.
