1 (3 ounce) package cream cheese, softened
1 tablespoon mayonnaise
1 tablespoon lemon juice
1 teaspoon dill weed
1/4-1/2 teaspoon salt
1/8 teaspoon pepper
1 (6 ounce) can pink salmon, drained, bones and skin removed
1/2 cup chopped celery
2 lettuce leaves
2 buns

Steps:

  • In a mixing bowl, beat cream cheese, mayonnaise, lemon juice, dill salt and pepper until smooth.
  • Add the salmon and celery; mix well.
  • Place a lettuce leaf and about 1/2 cup salmon salad on each bun.

This is a delightful fruit salad that always draws rave reviews anytime I fix it at home or take it to showers or carry-ins. The "secret ingredient" is a box of instant French Vanilla pudding! You really can substitute fresh fruits for canned or frozen or visa versa, so I'm going to list the combination that I usually use. Any time I use canned fruits, I use them in their own juice, and you can substitute sugar free pudding as well.

One 14- to 15-ounce can low-sodium white beans or black-eyed peas, rinsed and drained
One 14-ounce jar artichoke hearts, drained, rinsed and quartered
One 14-ounce can hearts of palm, drained and cut into about 1/2-inch slices
4 ounces crumbled feta
3 to 4 celery stalks, peeled and cut into about 1/2-inch pieces, plus some coarsely chopped celery leaves
1 cup grape tomatoes, cut in half
3 tablespoons extra-virgin olive oil
1 tablespoon finely grated lemon zest plus 1 or 2 lemons, halved
Kosher salt
1/4 cup pine nuts, toasted

Steps:

  • Combine the beans, artichoke hearts, hearts of palm, feta cheese, celery and leaves, tomatoes, oil and lemon zest in a large serving bowl. Squeeze on lots of lemon juice to make the salad taste really bright, then sprinkle on about 1/2 teaspoon salt. Toss really well and season with more salt to taste. Sprinkle on the pine nuts.

This is actually a modification of my parents' tuna salad recipe. I made it yesterday and enjoyed it so much that I just had to share it. You can eat this salmon salad plain, put it in a sandwich (with or without some romaine lettuce), put it on crackers for a party appetizer, serve it over mixed greens as a salad entrée, or put it on a slice of toast with some good Cheddar cheese and stick it in the toaster oven to make a salmon melt. 12.5 oz Chicken Breast
1/4 cup mayo
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup green olives (pitted and sliced)
2 Celery stalks

Steps:

  • Open the canned chicken with a can opener.
  • Drain and rinse the chicken in the can.
  • Then, add the chicken and washed celery stalks into a food processor.
  • Pulse until the chicken and celery are broken up into small bits.
  • Remove the chicken and celery from the food processor and add them to mixing bowl.
  • Next, add in the 1/4 cup of mayo along with salt and pepper.
  • Mix the ingredients together.
  • Slice pitted olives and add on top.
