This is a customer-submitted recipe from our local energy co-op publication. This simplified version of the ever-popular orange slice cookie has only 5 ingredients and tastes wonderful! Kid-friendly preparation, too!

Number Of Ingredients 5

1 (9 ounce) package yellow cake mix (such as Jiffy)
1 large egg
3 tablespoons vegetable oil
1 cup chopped pecans
10 pieces orange slice candy, chopped

Steps:

  • Preheat oven to 350.
  • Stir all ingredients together until well-blended.
  • Drop by tablespoon onto ungreased baking sheets.
  • Bake for 8-10 minutes or until edges begin to brown.
  • Remove from oven and transfer to wire racks to cool.
  • Enjoy! :).

I usually make these bite-size orange cookies at Christmastime, when oranges in Florida are plentiful, but they're delicious any time of year. Every time I sniff their wonderful aroma, I remember my grandmother, who shared the recipe. -Lori DiPietro, New Port Richey, Florida

Number Of Ingredients 13

1/2 cup shortening
1 cup sugar
2 large eggs
1/2 cup orange juice
1 tablespoon grated orange zest
2-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
ICING:
2 cups confectioners' sugar
1/4 cup orange juice
2 tablespoons butter, melted
Orange paste food coloring, optional

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in orange juice and zest. Combine the flour, baking powder and salt; gradually add to the creamed mixture. , Drop by heaping teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until edges begin to brown. Remove to wire racks to cool. In a small bowl, combine icing ingredients until smooth; drizzle over cooled cookies.

Number Of Ingredients 11

1 1/2 c brown sugar, firmly packed
1/2 c vegetable shortening
2 eggs
2 c all purpose flour, sifted
1 tsp baking soda
1/2 tsp salt
1 lb orange slice candy
1/2 c additional flour
1/2 c flaked coconut
1/2 c chopped pecans
1/2 c rolled oats

Steps:

  • 1. Preheat oven to 325. Cream sugar, shortening and eggs until light & fluffy. Sift 2 cups flour with soda and salt. Blend into creamed mixture.
  • 2. *Dice orange slice candy with kitchen shears (see Cindy's tips below). Mix with 1/2 cup flour and add candy mixture to first mixture.
  • 3. Stir in coconut, nuts and oats. Roll into 1" balls (see Cindy's tips below). Place on a greased cookie sheet and press with a fork. Bake at 325 for 10-12 minutes.
  • 4. *Note: When dicing candy, dip kitchen shears in powdered sugar frequently...see Cindy's tips below.
  • 5. Tips: Here are some tips from our fellow member, Cindy Strawser...she cut up Cherry and Orange slices and to the coconut, oats and nuts she added chocolate chips. Also, instead of having to keep dipping the shears into the powdered sugar...she cut the candies down the middle and dipped them in the powdered sugar and they sliced up great. No sticky shears to mess with. She also did not roll each cookie into a ball but dropped them from the spoon and mashed them down a bit with her fingers. She stated that this made them a little on the thick side and not flat..but NOT too thick. She said she ended up with approximately 3 1/2 dozen cookies. Thanks for the tips, Cindy!:)

Sweet and yummy! From Southern Living. A little different than the others posted as this has a simple glaze. Coat scissors or knife in flour to make chopping orange slice candy easier.

3/4 teaspoon baking soda
1 1/2 tablespoons water
1 cup shortening (I use butter)
1 cup firmly packed light brown sugar
1/2 cup sugar
2 large eggs
10 candy orange slices, chopped
3/4 cup chopped pecans
1/2 cup flaked coconut
2 cups flour
1 1/2 cups quick-cooking oats
3/4 teaspoon baking powder
2 cups powdered sugar
1/4 cup orange juice

Steps:

  • Stir together soda and 1 1/2 T water until dissolved.
  • Beat shortening (butter) at medium speed with an electric mixer until fluffy. Gradually add sugars, beating until fluffy. Add soda mixture, eggs, candy, pecans and coconut. Beat until blended.
  • Combine flour, oats and baking powder. Gradually add to shortening mixture, beating until blended.
  • Drop by rounded tablespoonfuls onto lightly greased baking sheets.
  • Bake at 350 for 10 to 12 minutes. Remove to wire racks to cool.
  • Stir together powdered sugar and orange juice; drizzle over cookies.

1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup rolled oats
1 cup flaked coconut
1 cup chopped orange slices candy

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Combine the flour, baking soda and salt; gradually stir into the creamed mixture. Finally, stir in the oats, coconut and candy orange slices. Drop by rounded spoonfuls onto the prepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1/2 cup butter or margarine, melted
2 cups packed brown sugar
4 eggs, beaten
2 cups Gold Medal™ all-purpose flour
1 lb orange slice candies, finely chopped
1 cup chopped pecans
1 cup powdered sugar

Steps:

  • Heat oven to 350°F. Generously grease 15x10x1-inch pan with shortening or cooking spray.
  • In large bowl, stir together melted butter and brown sugar. Add eggs; mix well. Add flour, chopped candies and pecans; stir until well blended. Pour batter into pan.
  • Bake 25 minutes. Cool 15 minutes. Cut into 9 rows by 4 rows. Cool completely in pan on cooling rack. Remove bars from pan; cut each in half diagonally. Sprinkle bars with powdered sugar.
