HOMEMADE CANDY CANE HOT COCOA MIX

Homemade Candy Cane Hot Cocoa Mix image

Dark AND white chocolates plus crushed candy canes make this a decadent, festive hot cocoa mix. Gift a jar with a big bundle of candy canes and maybe even a bottle of peppermint schnapps or Bailey's Irish cream. 'Tis the season!

Provided by Kare for Kitchen Treaty

Time 20m

Number Of Ingredients 7

5 cups Dutch process cocoa powder
3 cups granulated sugar
1/3 cup cornstarch
2 teaspoons kosher salt
4 3.5-ounce dark chocolate bars (I use Lindt 90% cacao midnight dark chocolate)
4 3.5 ounce white chocolate bars (I used Lindt white chocolate bars)
15-20 candy canes

Steps:

  • Put the chocolate bars in the freezer for about 10 minutes. This will help you grind them in the food processor without the chocolate melting.
  • In a very large bowl, whisk together the cocoa powder, sugar, cornstarch, and kosher salt.
  • Break the dark chocolate and white chocolate bars into the food processor and pulse until the chocolate is ground into small crumb-size bits. Add to the cocoa powder mixture.
  • Break the candy canes into pieces and add to the food processor. Pulse until they are ground. Add to the cocoa powder mixture and chocolate.
  • Stir everything together, then add to the food processor in batches and grind until the mixture is a fine powder consistency.
  • Add to mason jars and gift away!
  • To make the cocoa, add two heaping tablespoons cocoa mix to one cup (8 ounces) warm milk and add a candy cane stir stick.

CANDY CANE HOT COCOA SPOONS

Candy Cane Hot Cocoa Spoons image

Turn candy canes into an extra-special treat by molding them into spoons and topping with chocolate and other goodies.

Provided by Food Network Kitchen

Categories     beverage

Time 1h45m

Yield 12 servings

Number Of Ingredients 8

Nonstick cooking spray, for the spoons
12 full-size candy canes
4 ounces bittersweet chocolate, chopped
4 ounces semisweet chocolate, chopped
4 ounces white chocolate, chopped
Mini marshmallows, for decorating
Mini white or semisweet chocolate chips, for decorating
Coarsely crushed candy canes, for decorating

Steps:

  • Preheat the oven to 275 degrees F and line a rimmed baking sheet with parchment paper.
  • Spray 3 soup spoons lightly with cooking spray. Place 3 unwrapped candy canes on the prepared baking sheet and bake until the candy canes are slightly soft and pliable and very warm to the touch, 8 to 10 minutes. Gently lift a candy cane and place onto one of the greased spoons (if they're too hot to touch, lift with a paper towel.) Mold and gently press the curved top of the candy cane into the bowl of the spoon so that it takes the shape of the spoon; the center of the bowl will be bare. Mold the straight part of the candy cane to the handle of the spoon. If the candy canes cool too quickly, you can pop them back in the oven for a minute or two to soften again. Let cool on the spoons while you bake the next batch of candy canes, continuing until you've molded them all.
  • Melt the 3 chocolates in 3 separate small bowls by microwaving each on 50 percent power in 20-second intervals, stirring in between each, until melted.
  • Dip the bowls of the candy cane spoons into the melted chocolate; you will have 4 of each type of chocolate. Set the spoons so that the chocolate-covered bowls sit flat on the cooled baking sheet and the handles tilt upward resting on the baking sheet rim. Let the chocolate set slightly, 10 to 15 minutes at room temperature or 5 minutes in the refrigerator. Keep the remaining chocolate in the bowls warm and melted, returning them to the microwave if necessary.
  • Spoon some melted chocolate into the open unfilled space in the bowls of the spoons. Sprinkle with marshmallows, chocolate chips or crushed candy canes, mounding them in the center so they look like they're on the spoon. Let harden completely at room temperature, about 1 hour, or in the refrigerator, 15 to 20 minutes.

CANDY-CANE HOT COCOA

Candy-Cane Hot Cocoa image

Dress your hot cocoa up in something festive, like candy canes perhaps! Heat a pan of milk with chopped white chocolate and a bit of peppermint extract. Whisk it until it's thick and frothy, then top with a dollop of whipped cream and a candy-cane garnish-we hear that's customary at the North Pole.

Time 10m

Number Of Ingredients 5

32 ounces whole milk or oat milk
6 ounces white chocolate, chopped (1/4 cup)
Pinch of kosher salt
1/2 teaspoon peppermint extract
Unsweetened whipped cream and candy canes or peppermint sticks, for serving

Steps:

  • Heat milk and white chocolate in a large saucepan over medium heat, stirring until chocolate melts and mixture is smooth. Continue cooking, whisking constantly, until very hot, thick, and frothy, 3 to 4 minutes.
  • Remove from heat; whisk in peppermint extract. Transfer to cups or mugs, dollop with whipped cream, and serve with candy canes (the candy serves as a stirring stick and also slowly dissolves into the hot cocoa, adding more peppermint flavor as you sip and repeat).
