3 pounds garnet or ruby sweet potatoes (yams), peeled and cut into 2-inch chunks
Salt
2 cups orange juice
1-1 1/4 cups brown sugar
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon
4 tablespoons butter

Steps:

  • Simmer the remaining ingredients: Mix the remaining ingredients (orange juice, brown sugar, ground ginger, cinnamon, butter) in a shallow, wide sauté pan and bring to a boil on high heat.

1 (29 ounce) can sweet potatoes
¼ cup butter, cut into pieces
½ cup brown sugar
1 ½ cups miniature marshmallows

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place sweet potatoes in a medium baking dish. Distribute butter pieces evenly over the sweet potatoes. Sprinkle with brown sugar. Layer with miniature marshmallows.

1/2 cup quick-cooking oats
1/2 cup packed brown sugar
1 teaspoon cinnamon
1/3 cup margarine
2 (12 ounce) cans yams (drained)
2 cups cranberries (optional)
1 1/2 cups marshmallows

Steps:

  • Combine Flour Brown Sugar, Oats and Cinnamon In Bowl.
  • Cut In Margarine Until Crumbly.
  • Mix 1 Cup Oat mixture with Yams and Cranberries in 1 1/2 Quart Casserole Dish.
  • Top With Remaining Mixture.
  • Bake at 350 . 30 to 35 Minutes.
  • Sprinkle Marshmallows on top and Continue Baking Until Lightly Browned.
