MIXED GREENS SALAD WITH STRAWBERRIES AND CANDIED WALNUTS
Steps:
- To make the candied walnuts: In a large skillet, melt the butter over medium heat. Add the walnuts, sugar, cinnamon, and salt and cook, stirring constantly, until the sugar melts and caramelizes, about 2 minutes. Transfer to a silicone mat-lined baking sheet and let cool completely, 20 minutes.
- To make the vinaigrette: In a jar with a lid, add the sugar, vinegar, hot water, mixed berry jam, and garlic powder. Add the oil and salt. Cover and shake vigorously to combine.
- To make the salad: In a large bowl, toss together the mixed greens and 1/2 cup of the strawberries. Add the vinaigrette to taste and toss until the greens are coated. Top with the remaining strawberries and sprinkle the feta cheese and candied walnuts on top.
CANDIED STRAWBERRIES
Give roses a rest: Sweet and glossy, these candy-dipped strawberries don't need water (but they won't last as long).

- Add the sugar, corn syrup and 1/4 cup water to a small heavy-bottom saucepan. Bring to a boil over high heat, stirring once to make sure the sugar dissolves. Attach a candy thermometer or use and instant read thermometer and bring to 300 to 310 degrees F. Remove the pot from the heat and let sit for 1 minute.
- Stir the sugar mixture to even out the temperature from top to bottom. Dip the strawberries, using the stem as a handle and swirling to coat. Remove and allow excess syrup to drip off, shaking as needed. Place on a parchment-lined baking sheet and allow to cool and harden, about 10 minutes.
- Trim the ends of 12 extra-long lollipop sticks to the desired length to fit your vase. Carefully skewer each strawberry through the stem end and arrange into a bouquet in the vase. Serve within 2 hours (see Cook's Note).
BABY SPINACH SALAD WITH STRAWBERRIES AND CANDIED ALMONDS
This salad was served with lunch at a conference I went to, and I liked it so much that I requested the recipe. It is elegant but easy to make. The candied almonds really add flavour!

- In a small bowl, toss together almonds, corn syrup, sugar, salt and cayenne pepper until coated. Spread in a single layer on a parchment-lined baking sheet. Bake in 325F oven, stirring occasionally to break up clumps, for about 12 minutes. Let cool completely on pan on rack. Break into pieces.
- For the dressing, whisk together oil, sugar, vinegar, salt and pepper in a small bowl.
- In a large bowl, toss spinach with dressing. Sprinkle with candied almonds and strawberries.

Steps:
- 1. Brush strawberries with a pastry brush to remove any dirt. Remove leaves. Place sliced almonds in a shallow dish.
- 2. Prepare Candy Apple contents according to box directions. Bring mixture to a boil and cook until hard crack stage (300 degrees) approximately 15-18 minutes.
- 3. While syrup is cooking, place sticks that came in the box in cleaned hulled strawberries. Dip each strawberry into the syrup then the tops into the sliced almonds. Place on parchment paper. Cool completely. Do not refrigerate. Serve immediately, must be eaten same day.
STRAWBERRIES WITH HONEY-ROSEMARY WHIPPED CREAM AND CANDIED ROSEMARY
Steps:
- Combine the strawberries and orange liqueur in a bowl and set aside at room temperature for 30 minutes or cover and refrigerate for 1 hour.
- Combine the cream, honey and 1 sprig of the rosemary in a small saucepan. Bring to a simmer over medium heat and cook for 2 to 3 minutes, stirring occasionally. Set aside to cool to room temperature, then refrigerate, covered, until well-chilled
- Meanwhile, break the remaining rosemary into small sprigs and combine them in a small saucepan with 1/2 cup water and 1 cup of the sugar. Bring to a boil, stirring to dissolve the sugar, then remove the rosemary from the syrup using tongs and toss it in a bowl with the remaining 1/2 cup sugar. Transfer the candied rosemary to a lightly oiled cooling rack or silicon pad to dry.
- Strain the chilled cream into a stainless steel bowl and whisk until soft peaks form. Divide the macerated strawberries between four bowls. Top each with two tablespoons of whipped cream and a sprinkling of candied rosemary. Serve.
CANDIED-ALMOND CHOCOLATE STRAWBERRIES

- Wash strawberries and gently pat with paper towels until completely dry. Place almonds in a food processor; cover and process to desired fineness. Transfer to a shallow bowl; set aside., In a microwave, melt chocolate chips and butter; add cayenne and stir until smooth. Dip strawberries in melted chocolate; allow excess to drip off. Roll berries in almonds; place on waxed paper and let stand until set. Serve immediately.

Steps:
- Slice the strawberries for the dehydrator.
- Dip each strawberry in the Gelatin or the sugar.
- IF you are making this for Vegetarian/Vegan use only the sugar do not use the gelatin because Gelatin is not vegetarian. I do not know if the recipe would work with the commerical Vegan "Jels".
- Dry according to your dehydrator instructions for Strawberries.
- The result should be a 'candied' strawberry slice that you simply eat like candy.
- Adjust the amount of sugar or Gelatin if needed for the amount of strawberries you are using. Simply buy pound of bulk Gelatin and save for the next session or try it on other fruits.
