Steps:

  • Preheat oven to 350°. Cut squash in half lengthwise; remove and discard seeds. Cut each half crosswise into 1/2-in. slices; discard ends. Arrange squash in a shallow baking pan; cover with foil. Bake until just tender, 25-30 minutes. , Combine sugar and butter; spread over squash. Bake, uncovered, 15-20 minutes longer, basting occasionally.

1 large (about 5 pounds) and 1 medium (about 3 1/2 pounds) butternut squash
2 cups heavy whipping cream, divided
1 cup finely grated Parmesan (about 3 ounces), divided
3 strips bacon (about 3 ounces)
4 tablespoons sugar, divided
2 tablespoons finely chopped hazelnuts
1 1/4 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated nutmeg
3 tablespoons chopped chives, divided

Steps:

  • Preheat oven to 400°F. Cut both squash in half lengthwise; scoop out seeds. Transfer cut side down to a parchment-lined rimmed baking sheet. Poke outside of skin all over with a fork, then roast until flesh is very soft, about 1 1/2 hours for large squash and about 1 hour for medium squash.
  • Meanwhile, heat 1 cup cream in a medium pot over medium until just beginning to simmer. Reduce heat to medium-low and whisk in 1/4 cup cheese and cook, whisking, until smooth, about 1 minute. Transfer to a medium bowl and chill until very cold, about 45 minutes (do not freeze).
  • Cook bacon in a medium skillet over medium heat, turning occasionally, until crisp, 8-10 minutes. Transfer to paper towels, reserving bacon fat in skillet. Let cool, then finely chop.
  • Spread 3 Tbsp. sugar in a thin layer in the center of a medium dry skillet. Cook over medium heat, mostly undisturbed (it's ok to swirl pan gently to get sugar to melt evenly), until sugar melts and starts to turn light brown, about 6 minutes. Quickly stir in bacon and hazelnuts and cook, stirring, until coated and melted sugar is chestnut brown, about 1 minute more. Scrape onto a parchment-lined rimmed baking sheet and spread out to cool, then finely chop.
  • Reduce oven temperature to 375°F. Using a spoon, scoop flesh out of large squash into a large bowl, leaving a 1/2" border around squash shell to help maintain its shape. Transfer large shells to a rimmed baking sheet; arrange a few pieces of crumpled foil around shells to keep them upright. Scoop flesh out of medium shells into same bowl (you should have 6 cups squash); discard medium shells. Using a potato masher or spatula, mix in salt, pepper, nutmeg, 1 Tbsp. reserved bacon fat, and remaining 1 cup cream, 3/4 cup cheese, and 1 Tbsp. sugar until smooth. Fold in 2 Tbsp. chives. Divide filling between large squash shells, then create attractive swoops with a spoon. Bake squash until warmed through, 20-30 minutes.
  • Meanwhile, using an electric mixer on medium-high speed or a whisk, whip chilled cream to medium peaks. Chill until ready to use.
  • Dollop squash with whipped cream, then top with candied bacon bits and remaining 1 Tbsp. chives. Serve extra candied hazelnut-bacon bits on the side.

280 grams bittersweet chocolate, chopped (about 10 ounces)
1/2 cup (1 stick) unsalted butter
1/4 teaspoon fine sea salt

5 extra-large eggs, separated
65 grams granulated sugar (about 6 tablespoons)
1 cup crème fraîche

Steps:

  • In a very large skillet, combine the syrup, honey, cinnamon and a pinch of clove. Scrape the vanilla seeds into the skillet and drop in the pod. Bring mixture to a simmer. Add the squash in a single layer. Cover and cook over medium heat until tender, 8 to 10 minutes. Uncover and simmer until juices thicken to a syrupy consistency, about 5 minutes. In a clean, dry bowl of an electric mixer, whisk together the egg whites until they just hold their shape. Whisk in the remaining 2 tablespoons sugar on high speed until they hold soft peaks
  • Fold the yolks into the melted chocolate. Fold in half the whites to lighten the mixture; once combined, fold in the remaining whites. Scrape the batter into the prepared pan. Bake until barely set in the center, about 25 minutes. Cool completely.
  • Slice a knife or offset spatula around the edges of the pan to release it. Transfer cake to a platter. Slather top of cake with crème fraîche. Spoon squash and syrup over cake. Slice into thin slivers (it is very rich) and serve.

100 grams whole-wheat flour (about 2/3 cup)
50 grams oats (about 1/2 cup)
55 grams light brown sugar (about 1/3 cup)
13 grams baking powder (about 1 tablespoon)
3 grams fine sea salt (about 1 teaspoon)
3 grams ground cinnamon (about 1 teaspoon)
1/4 teaspoon nutmeg
Zest of 1 lemon, finely grated
2 large eggs, room temperature
1/2 cup Greek yogurt, room temperature
10 tablespoons unsalted butter, melted and cooled
1/4 cup maple syrup
130 grams finely shredded butternut squash (about 1 1/2 cups)
35 grams finely chopped candied ginger (about 1/4 cup)

Steps:

  • Heat the oven to 375 degrees and grease a muffin tin.
  • In a large bowl, whisk together the flours, oats, sugar, baking powder, salt, spices and lemon zest. In a small bowl or glass measuring cup, whisk together the eggs, Greek yogurt, melted butter and maple syrup. Add the wet ingredients to the dry ingredients and gently stir with a rubber spatula until almost combined - the batter will be very thick. Then fold in the shredded squash and candied ginger.

Acorn squash is the only winter squash I have ever made. I guess I should try other ones. But, this one is plenty good! Choose from two toppings. Original recipes from Better Homes and Gardens New Cookbook 1978. Tweaked by me.

2 medium acorn squash
1/4 tsp salt
2/3 c brown sugar
1/4 c soft butter or vegetarian replacement
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg (optional)
TOPPING VARIATION
1/4 tsp salt
1/2 c maple flavored syrup
1/4 c soft butter or vegetarian replacement
1/2 tsp ground cinnamon
1/4 tsp ground ginger (optional)

Steps:

  • 1. Rinse whole squash; dry. Prick skin with a fork, all over. Place in large baking dish, and cook in microwave oven for about 10 minutes, or until soft. Let stand 5 minutes.
  • 2. Preheat stove oven to 350°F. Cut acorn squash in half, remove seeds and any stringy material from the insides. Discard seeds & ends of squash. Slice into 1 inch slices.
  • 3. Return slices to baking dish. Season very lightly with salt. Combine brown sugar and butter. Spread on squash slices.
  • 4. Bake, uncovered, in oven for 15-20 minutes, basting occasionally.
  • 5. VARIATION: Mix maple flavored syrup, spices, and butter, (no brown sugar), together in a glass measuring cup. Microwave for 15 seconds. Pour over squash slices. Follow step #4.

3 oz goat cheese
1 Tbsp smoked paprika (enough to sprinkle over entire pizza dough)

1-cup almonds

2 -3 cloves fresh garlic-crushed & diced
Olive oil-have it on hand
Gluten-Free Pizza Crust:
½ bag Gluten-Free Pantry's French Bread & Pizza mix (or your own gf flour blend)
1 packet yeast (included in Gluten-Free Pantry's French Bread & Pizza mix box)
1 ¾ luke warm water
1 tsp balsamic vinegar
1 tbsp honey
½ tsp sea salt
¼ cup olive oil
2 eggs plus 1 egg white

Steps:

  • Pre-heat oven 450F. First make the gluten-free pizza crust. Pour ½ the Gluten-Free Pantry's French Bread & Pizza mix and yeast into a large bowl. Then add all other pizza crust ingredients. Beat by hand for 2-3 minutes until your mixture is lump-free. On lightly oiled cookie sheet spread out dough/batter to desired thickness. Bake for 15 minutes. While crust is baking, prepare toppings. Grate Acorn Squash-Wash and slice acorn squash in half. Use a spoon to scoop out seeds. Using a hand held cheese grater, grate the acorn squash till shredded (skin and all). If you have a Cuisinart, it speeds up the process. Caramelize nuts-Add maple syrup and almonds into small saucepan. Heat on high till maple syrup bubbles for 1 minute. Stir-in 2 tbsp of brown sugar. Remove from heat and pour onto parchment paper. Let cool and break apart with knife. Set aside. Top Pizza-Remove pizza crust from oven-it should be well set. Drizzle olive oil atop crust. Sprinkle pumpkin pie spice, smoked paprika & crushed garlic evenly atop crust. Then add grated squash, goat cheese and candied almonds. Bake for 15 minutes or until pizza crust is browned and toppings are toasty. Remove, pizza from oven. Sprinkle with fresh-diced arugula. Slice, serve & enjoy!

1/3 cup sugar
1 tablespoon fresh ginger, minced, peeled
1/2 vanilla bean, split lengthwise
Pinch of ground cloves
2 tablespoons freshly squeezed lemon juice
1 small butternut squash, (about 1 3/4 pounds), peeled, seeded, and cut into 1/2-inch cubes (about 4 cups)

Steps:

  • Put marmalade, sugar, ginger, vanilla bean, cloves, and lemon juice in a large, wide pot. Stir in 2 1/2 cups water. Bring to a boil over medium-high heat, stirring to dissolve marmalade and sugar.
  • Add squash, and stir to combine. Bring the mixture to a simmer. Reduce heat to medium-low, and partially cover pot. Gently simmer, stirring occasionally, until squash is tender when pierced with a fork, about 35 minutes. Uncover, and cook until liquid is syrupy, 5 to 10 minutes. Remove vanilla bean, and discard. Serve warm. Squash and syrup can be refrigerated in an airtight container up to 1 week. Before serving, reheat over medium-low heat. If the syrup seems too thick, add 1 to 2 tablespoons water.

Steps:

  • Preheat the oven to 325°F. Line a sheet pan with parchment paper. In a large bowl whisk the egg white until frothy. Add the pecans and stir to coat. Add the brown sugar, ¼ teaspoon of the cinnamon, ¼ teaspoon salt, and the cloves. Stir until evenly distributed among the nuts. Spread the nuts in a single layer on the prepared pan and bake until toasted and caramelized, 18 to 20 minutes, stirring several times. Once cool enough to handle, coarsely chop the pecans and set aside. Prepare the grill for indirect cooking over medium heat (350° to 450°F). In a small bowl combine the butter, the remaining ½ teaspoon cinnamon, ¼ teaspoon salt, and the cayenne pepper. Place the squash, cut side up, on the grill and brush generously with the butter mixture, reserving the rest for basting and serving. Grill over indirect medium heat, with the lid closed, until very tender, 50 minutes to 1 hour, basting occasionally. Remove from the grill and drizzle with the remaining butter mixture. 1 cup Arborio or other short-grain white rice
5 cups whole milk
1 cup heavy cream
1/2 cup sugar
4 large egg yolks, lightly beaten
1/2 teaspoon coarse salt
1/2 teaspoon finely grated lemon zest
1/4 teaspoon ground nutmeg
4 cups boiling water
Candied Butternut Squash
1/2 cup walnut halves, about 2 ounces, toasted and coarsely chopped

Steps:

  • Preheat oven to 350 degrees. Lightly butter ten 5-ounce ramekins; set aside. Put rice and milk in a medium saucepan over medium-high heat. Cook, stirring occasionally, until milk is just about to simmer. Reduce heat to medium. Simmer gently, stirring occasionally, until rice is tender, 15 to 20 minutes. Remove pan from heat.
  • Meanwhile, whisk cream, sugar, egg yolks, salt, lemon zest, and nutmeg in a medium bowl. Pour the cream mixture into the rice mixture in a slow, steady stream, stirring constantly. Return pan to medium-high heat, and bring to a boil, stirring occasionally. Remove from heat. Using a ladle, divide rice mixture evenly among buttered ramekins, stirring mixture in pan each time to ensure an even distribution of rice and liquid.
  • Transfer ramekins to a large roasting pan or 2 baking dishes that are at least 2 inches deep. Slowly pour boiling water into pan to come halfway up sides of ramekins. Carefully place in oven. Cook, rotating pan halfway through, until puddings are almost set and tops are golden in places, 50 to 60 minutes. Carefully transfer ramekins to a wire rack. Let cool 10 minutes before serving. Serve warm, cold, or at room temperature. Spoon candied squash and its syrup on top of each pudding, dividing evenly; sprinkle with toasted walnuts.

2 large leeks
1 tablespoon olive oil
1 tablespoon curry powder
4 cups chicken broth or 4 cups chicken stock
1 tablespoon fresh ginger, grated
3 tablespoons maple syrup
1 teaspoon salt (to taste)
1 lb sliced bacon
1/2 cup brown sugar
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Cut squash in half lengthwise, remove seeds, and place cut side down on baking dish; add 1/2 inch of water and bake until fork tender, about 40 minutes.
  • Meanwhile, trim leeks, slit lengthwise and wash thoroughly.
  • Rough chop the white and light green parts (save tough green tops for making stock).
  • In a large pot or Dutch oven, heat oil over medium low heat.
  • Saute leeks for a few minutes, stirring occasionally, then add curry powder.
  • Scoop out squash flesh and add to pot; pour in chicken broth, ginger, maple syrup, and salt.
  • Simmer 30 minutes.
  • Puree the soup using an immersion blender, or a regular blender or food processor in batches.
  • While soup is simmering, you can prepare the bacon.
  • Preheat oven to 375 degrees F.
  • In a heavy skillet, over medium heat, cook bacon, in batches, until lightly browned, but not crisp; drain on paper toweling.
  • Meanwhile, combine brown sugar, cayenne, and black pepper.
  • Arrange bacon strips on a parchment or brown paper lined baking tray and coat with brown sugar mixture.
  • Bake until sugar is caramelized and bacon is crisp, about 5 minutes; transfer to brown paper to cool (will stick to paper towels).
  • Reheat soup, if necessary, and serve in shot glasses with 1/2 slice of bacon standing up in it - or serve in bowls as a soup course with crumbled bacon.

1 lb white meat chicken cutlets or breasts, (about 4-5 cutlets), pounded thin

Pour a little water in the bottom of the baking sheet, cover the tray with aluminum foil, seal the edges tightly, and bake, undisturbed, for 35-40 minutes or until completely tender when pierced with the tip of a knife. Remove from the oven. Carefully remove foil. Cool.
  • Make the maple glaze: In a small pot, combine the orange zest, red wine vinegar and the maple syrup. Simmer over medium heat 2-3 minutes. Set aside.
  • Candy the pecans: Heat the sugar in a small skillet over medium heat until it melts and browns, 5-10 minutes. Add in the walnuts and swirl coat with the sugar. Spoon the nuts onto a baking sheet with parchment pushing them apart with a fork, being careful not to touch them as the sugar will be very hot. Season with salt and let cool.
  • Prepare and cook the chicken cutlets: Season both sides of the chicken cutlets generously with oregano and salt. Put the eggs in one bowl and spread the breadcrumbs mixed with the ground pecans into a shallow bowl or cake pan. Dip each piece of chicken liberally in the egg (on both sides), shake off any excess egg and then coat the chicken with the walnut breadcrumbs. Shake any excess crumbs off each one. Arrange them on a baking sheet fitted with parchment.
  • Cook the chicken cutlets: Heat the canola oil in a large, oven-proof nonstick skillet over medium heat. Add chicken cutlets to hot oil and cook in a single, 5-7 minutes or until golden brown. Turn over and cook 5-7 additional minutes or until that side is golden brown. Place the pan in the oven and cook 5-8 minutes or until chicken is cooked through. Remove from the oven.
  • Serve the dish: Arrange arugula, chicken, squash and candied pecans on a serving platter. Coat squash with some of the maple glaze. Top with the parsley leaves (if desired) and lemon wedges. Serve immediately.

Steps:

  • Preheat oven to 350deg&; cut squash in half lengthwise; remove and discard seeds. Cut each half crosswise into 1/2-in. slices; discard ends. 3 Tbsp cooking oil

  • From WeMadeABlog.com: Start by cutting your squash in half. The nib on top can be extremely difficult to cut through. I don't really have a good technique for working around it, but be aware of it. You probably want to orient the squash so the nib is the last thing you cut through because your knife will get stuck. Once you halve it, take a spoon and scoop out the seeds and the stringy bits. Then take a knife and score the squash. Make a big pound sign (#) in the middle going from edge to edge. This helps the squash cook and lets the butter and maple syrup seep in. Now that you have four, scored halves. Lightly season with salt and pepper. This dish is very sweet, the salt and pepper helps to balance the dish. After the salt and pepper, sprinkle brown sugar and cinnamon all over the fleshy part of the squash. Don't go nuts, you are adding maple syrup next. Just make sure there is an evenly distributed layer of brown sugar and cinnamon. About a tablespoon of each per half. Next, cut a 1/4-inch thick slab of butter and place in the middle of the squash. Take your maple syrup and make a ring around the butter. One ring is all you need unless you want to serve as a dessert, which is completely doable if you'd like. Now that you have all your ingredients together on your squash, pop it in the microwave. Yes, the microwave. You could do it in the oven but it takes over an hour and you have a good chance of burning it. The microwave takes 30 minutes tops. Set it for 15 minutes, check it, then another 15 minutes. The squash will come out hotter then your menopausal aunt and the liquid will be scalding like her drunken verbal abuse, so be careful. ¼ cup butter, divided
¼ cup packed brown sugar, divided

Steps:

  • Place both halves of the squash cut side up on a microwave-safe plate or dish. Put 2 tablespoons of butter, and 2 tablespoons of brown sugar into the cavity of each half.
  • Cook for 8 to 10 minutes in the microwave on full power. Rotate the squash a couple of times to ensure even cooking. When the flesh is soft, scoop out soft flesh with the sugar and butter, and place it in a bowl. Mash it a little to blend the ingredients. Serve in a bowl, or your could even serve it in the shells.

I saw this recipe and was curious how it would turn out. I was pleasantly surprised! It's got a nice, sweet vanilla flavor. Next time I may add a few chopped pecans for some extra crunch. This a super easy side dish!

2 qt saucepan with lid
1 stick butter/margarine
1/2 c water
1 to 1-1/2 c light brown sugar
1 Tbsp vanilla flavoring
4 medium squash, washed and ends off, don't peel!!

Steps:

  • 1. Wash your 4 medium squash.
  • 2. Place squash and other ingredients together.
  • 3. Get a 2 qt. saucepan with lid, and put 1/2 cup of water and a stick of butter. Place pan on med-high heat.
  • 4. Place 1 to 1-1/2 cups of light brown sugar (depends on how sweet you like it). Add 1 tablespoon of vanilla flavoring.
  • 5. Take your squash and cut the ends off, but, don't peel. Cut squash about 1/2 inch slices.
  • 6. Add squash to saucepan and stir about twice, to mix the sugar, vanilla and butter on squash.
  • 7. Let your water and other ingredients come to a slow boil. Turn your burner to low.
  • 8. Place lid on saucepan, and cook for about 20 minutes, or, until squash is tender but not mushy.
  • 9. Take a slotted large spoon, and dip out the squash into a bowl. --------------------------------------------------------------------------------- While I was posting this recipes, I set and ate the whole bowl. And being a diabetic, my sugar count will be sky high. BUT, is was SOOOOO GOOOOOOD!!!!

1 lb panela sugar cane or 1 lb brown sugar, broken into chunks
5 cinnamon sticks
5 cloves
3 all spice bell peppers
3 cups water
queso fresco or fresh mozzarella cheese

Steps:

  • Wash the squash well, slice it open and remove all the seeds and membranes.
  • Cut the squash into medium sized pieces and place them in a large pot with the chunks of panela and spices.
  • Add the water and bring to a boil over medium heat, boil for about 30 minutes with the lid on.
  • Uncover and simmer for about 1 hour or until the syrup thickens.
  • Remove from heat and serve warm with a slice of fresh cheese.
