Here is a classic dessert with a bit of a twist that will stun your Thanksgiving guests, plus it's a great excuse to buy a kitchen torch if you don't already have one. If the idea of parfaits feels like a bit too much work here, feel free to bake the custard in the traditional way in ramekins, brulee the top, then garnish with the candied pumpkin. You can use a 2-inch round cutter for a round serving dish such as a stemmed champagne coupe. These can be made 2 to 3 days ahead, stored in the freezer. Remove 30 minutes before serving. Serve as-is or with whipped cream or caramel sauce.

5 egg yolks
1 large egg
2 teaspoons vanilla extract
1 teaspoon ground cardamom

1 quart heavy whipping cream

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Line a 9x13-inch baking pan with parchment paper; coat with cooking spray.
  • Mix 3/4 cup white sugar, egg yolks, egg, vanilla extract, 1 teaspoon cardamom, and 1/2 teaspoon salt together in the bowl of a stand mixer fitted with the paddle attachment; mix on low speed until well combined.
  • Heat cream in a small saucepan over medium heat, stirring often, until it begins to bubble, about 5 minutes; remove from heat. Add cream to the egg mixture slowly, mixing on low speed. Pour custard into the prepared baking dish.
  • Set the baking pan into a roasting pan; carefully pour enough boiling water into the roasting pan to come halfway up the sides of the baking pan.
  • Bake in the preheated oven until the custard is set when gently shaken, 45 to 50 minutes.
  • Remove baking pan from roasting pan. Cool to room temperature, about 30 minutes. Freeze until firm, at least 1 hour.
  • Melt butter in a skillet over medium heat. Add brown sugar, salt, 1/4 teaspoon cardamom, and cinnamon; stir to combine. Add frozen pumpkin and simmer, stirring often, until reduced, about 8 minutes. Cool candied pumpkin to room temperature, about 10 minutes.
  • Cut custard into 18 squares using a pizza cutter or sharp knife. Place 1 custard square in a serving dish, add a layer of candied pumpkin, and top with another square. Sprinkle each with 1 tablespoon of sugar. Use a kitchen torch to flame tops until deeply caramelized and a crunchy layer has formed.

1 1/2 pound pumpkin, peeled and seeded
3 cups sugar
Zest of 2 limes, cut into very thin strips

Steps:

  • Cut the pumpkin into wedges about 3 to 4 inches wide. Cut across wedges to form slices about 1/4 inch wide; set aside.
  • Combine 2 cups sugar, lemon juice, and zest in a medium bowl. Add pumpkin pieces; stir until well coated. Cover with plastic wrap; refrigerate overnight.
  • Transfer mixture to a medium heavy-bottomed saucepan; bring to a simmer over medium heat. Reduce heat to medium-low; cook, stirring occasionally, until pumpkin is translucent and sugar has formed a light-amber-colored caramel, 1 hour 10 minutes to 1 hour 15 minutes.
  • Remove pumpkin from caramel with a slotted spoon, and dry on a rack set over a cookie sheet for at least 12 hours, turning the pumpkin pieces once or twice.

1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 cup crystallized ginger, finely chopped

Steps:

  • Heat oven to 350°F. Line 15x10x1-inch pan with cooking parchment paper. Spray regular-size muffin cups with cooking spray.
  • In medium bowl, toss pecans with egg white until well coated. Add 3 tablespoons granulated sugar, 2 teaspoons ground ginger and the kosher salt; toss until coated. Spread in single layer on parchment-lined pan. Bake 10 to 12 minutes, stirring once, until golden brown. Cool completely, about 30 minutes. Coarsely chop; set aside.

1/4 cup finely chopped shallots
1/2 cup apple cider vinegar
1/4 cup honey
1/4 cup apple cider
1 cup raw, shelled pumpkin seeds
Neutral oil or nonstick spray, for the baking sheet
1 cup granulated sugar
1 cup water
1/2 teaspoon sea salt
Freshly cracked black pepper
1 pound Brussels sprouts
Neutral oil, for frying
Kosher salt

Steps:

  • Prepare the apple reduction: In a small sauce pot over medium heat, combine shallots, vinegar and honey. Simmer, stirring occasionally, until reduced by half, about 10 minutes. Add apple cider and continue to cook until the mixture is thick and syrupy, another 5 to 10 minutes.
  • Prepare the candied pumpkin seeds: Preheat oven to 350 degrees F.
  • Spread pumpkin seeds out on baking sheet and bake, stirring once, until nicely toasted and golden, about 10 minutes. Set the pumpkin seeds aside. Keep the oven on.
  • Heavily grease another baking sheet with neutral oil or nonstick spray and set aside.
  • Combine sugar and water in a medium sized sauce pot and mix well. Place pot on stove over medium heat and cook, stirring constantly, until the sugar is dissolved. Add pumpkin seeds to the syrup and simmer on low heat for 30 minutes, stirring occasionally.
  • Using a slotted spoon, drain pumpkin seeds out of the syrup, spread out onto the greased baking sheet and sprinkle with salt and pepper to taste. Toast seeds in the oven for about 15 minutes or until they are very crunchy. Let cool completely before using.
  • Prepare the Brussels sprouts: Trim the stem end of the Brussels sprouts and cut a cross about 1/4 inch deep in the top of the sprouts.
  • Heat the oil in a sauce pot to 315 to 325 degrees F.
  • Working in batches, fry the Brussels until dark golden brown and very crispy, 5 to 8 minutes per batch. Drain Brussels on a paper towel and sprinkle with salt immediately.
  • Put Brussels in a large bowl with the apple reduction and toss until the Brussels are well coated with the sauce. Plate the Brussels in a large bowl or platter and crush or chop the pumpkin seeds before garnishing on top.

1 pie pumpkin
4 tablespoons olive oil, divided
4 tablespoons unsalted butter, divided
1 onion, cut into half-moons
1 cup chopped walnuts
2 tablespoons white sugar
2 (14 ounce) cans vegetable broth
2 teaspoons dried sage, divided
1 cup Arborio rice
½ teaspoon dried rosemary
¼ cup dry white wine
½ cup grated Parmesan cheese
ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Slice top off of pumpkin and cut in 1/2. Scoop out and discard seeds and pulp. Place pumpkin cut-side down on a baking tray.
  • Bake in the preheated oven until easily pierced with a fork, 30 to 45 minutes. Scoop flesh from rind into a food processor and blend into a puree.
  • Meanwhile, heat 1 tablespoon olive oil and 1 tablespoon butter in a pan over medium-low heat. Add onion and cook, stirring frequently, until brown, wilted, and sweet, 15 to 30 minutes.
  • At the same time, heat 1 tablespoon olive oil in a small saucepan over medium heat. Add walnuts and cook for 5 minutes. Add sugar and stir constantly until coated, about 2 minutes. Remove from heat and set aside.
  • Whisk pumpkin puree and vegetable broth together in a medium saucepan over medium heat. Bring to a simmer, about 5 minutes, then reduce heat to low.
  • Warm 1 1/2 tablespoons butter in a small pan and add 1 teaspoon sage, about 1 minute. Set sage butter aside.
  • Warm remaining 2 tablespoons olive oil in a large saucepan over medium heat. Add rice; cook and stir until coated with oil and slightly translucent, about 3 minutes. Stir in remaining 1 teaspoon sage and rosemary. Add wine and stir until absorbed, 2 to 3 minutes.

2 teaspoons black sesame seeds
1 teaspoon vegetable oil

1/2 cup plus 1 teaspoon brown sugar
Salt and cracked black pepper
1 cup diced kabocha squash
1/4 pound fresh ginger, chopped
1/4 pound raspberries
1/4 pint blackberries
2 cups Greek yogurt
Zest of 2 limes

Steps:

  • Preheat the oven to 300 degrees F.
  • Toss the oats, pecans, pumpkin seeds, sesame seeds, vegetable oil, maple syrup and 1 teaspoon brown sugar together in a mixing bowl. Season with salt and cracked black pepper. Spread evenly on a baking sheet and bake for 1 hour. Let cool, then crumble.

1/4 teaspoon cayenne
1/2 cup raw green (hulled) pumpkin seeds (pepitas)
1 tablespoon fresh pomegranate juice (see cooks' note, below) or cranberry juice cocktail
2 teaspoons Sherry vinegar
1 tablespoon minced shallot
6 tablespoons extra-virgin olive oil
1 small cheese pumpkin or butternut squash (2 lb), peeled, quartered lengthwise, and seeded
1 (6-oz) piece Parmigiano-Reggiano
8 oz arugula, trimmed

Steps:

  • Prepare polenta:
  • Bring cornmeal, water, and 2 1/4 teaspoons salt to a boil in a 4-quart heavy saucepan, stirring constantly. Reduce heat and simmer, stirring frequently, until polenta is creamy and tender, about 50 minutes. Remove from heat, then stir in 11/2 tablespoons butter and cool slightly.
  • Spoon polenta onto center of a lightly buttered large baking sheet, then spread evenly into a 10- by 7-inch rectangle (about 1/2 inch thick). Cover with plastic wrap, then poke several holes in wrap with a small sharp knife and chill 2 hours.
  • Candy pumpkin seeds:

  • Make vinaigrette:
  • Whisk together pomegranate juice, vinegar, and shallot and let stand 5 minutes. Whisk in 3 tablespoons oil, remaining 1/4 teaspoon salt, and pepper to taste.
  • Roast pumpkin:
  • Preheat oven to 450°F.
  • Cut pumpkin quarters crosswise into 1/2-inch-thick slices. Toss with 1 tablespoon oil and salt and pepper to taste in a shallow baking pan and arrange slices in 1 layer. Roast in middle of oven until just tender, about 20 minutes. Remove from oven, then cover with foil to keep warm.
  • Fry polenta while pumpkin roasts:
  • Trim polenta into a 9- by 6-inch rectangle. Cut polenta into 6 (3-inch) squares, then halve each square diagonally. Heat 1 tablespoon oil in a large nonstick skillet until hot but not smoking, then cook polenta in 2 batches, turning once, until golden brown, about 8 minutes (if necessary, use remaining tablespoon oil for second batch). Transfer as cooked to a plate and keep warm, covered.
  • Assemble salad:
  • Shave 12 strips from cheese with a vegetable peeler.
  • Whisk vinaigrette, then toss arugula in a large bowl with enough vinaigrette to lightly coat. Place several pieces of pumpkin and 1 piece of polenta on each of 6 plates. Top with arugula, more pumpkin, and remaining polenta. Sprinkle with candied pumpkin seeds and top with parmesan shavings, then drizzle with remaining vinaigrette.

A great little recipe adapted from Southern Living magazine. These are sweet, so you might want to reduce the sugar a little, starting at 1/3 cup.

2 cups raw pumpkin seeds (or pecan halves)
1/3-1/2 cup granulated sugar
1/3-1/2 cup firmly packed brown sugar
1 tablespoon paprika
3/4 teaspoon salt
3 tablespoons fresh orange juice

Steps:

  • Cook pumpkin seeds in a medium skillet over medium heat, stirring often, about 8-10 minutes or till puffed(don't brown). Watch closely so the don't brown. Move to a bowl.
  • Combine sugar, brown sugar, paprika and salt. Set aside.
  • Toss pumpkin seeds with orange juice. Stir in sugar mixture, tossing to coat. Spread in a single layer on wax paper lined jelly roll pan(or cookie sheet).
  • Bake at 350*F. for 6 minutes, stirring once. Cool in pan on a wire rack 30 minutes. Store in an airtight container up to 2 days.

1 - 15 oz candied yams - drained & pureed
1 - 15 oz can - pumpkin - not pie mix
3/4 c sugar
3/4 tsp cinnamon
2 tsp fresh grated ginger
1/4 tsp nutmeg - optional
1 tsp salt
1/4 c maple syrup
1 c each - milk & heavy cream
1 tsp vanilla
3 eggs + 2 yolks
1 prebaked warm pie crust

Steps:

  • 1. In a food processor or blender - add the yams and puree. In a large sauce pan or dutch oven, add the pumpkin, ginger, pureed yams, sugar, cinnamon, nutmeg and salt. Cook for 20 minutes. Stirring constantly.
  • 2. Remove from burner and cool to luke - warm. In a bowl whisk eggs, cream and vanilla.
  • 3. Whisk in the egg mixture to the pumpkin mixture, until well blended.
  • 4. Preheat oven to 400 degree F. Now, pour the yam - pumpkin filling into the prepared warm pre - baked pie crust and baked for 10 minutes. Reduce oven temp to 300 and bake until pie is set around the edges and center is just a little jiggly... about 30 - 35 minutes or longer depending on oven. If crust begins to get too dark, cover the crust with foil.
  • 5. Cool for at least 4 hours and serve alone or with a big dollop of whipped cream.

A popular sweet in Turkey, candied pumpkin requires few ingredients and a little time.

3 ⅓ lb (1.5 kg) sugar pumpkin, peeled, seeded, and cut into 2-inch (5-cm) wedges
2¼ cups (450 g) granulated sugar
tahini
date syrup
crushed walnuts

Steps:

  • Place the pumpkin or squash in a roasting dish and sprinkle with the sugar. Toss to ensure the pumpkin or squash is evenly coated, then let it rest for 30 minutes; after this time you should see that the sugar has begun to melt. Spoon this syrup back over the pumpkin or squash, then cover the dish with foil and let it rest on the work surface for at least 12 hours.
  • By the next day, the sugar should have completely dissolved and the pumpkin or squash will have released its juices.
  • Preheat the oven to 350°F (180°C).
  • Take off the foil and transfer the dish to the oven to bake for 1 hour, spooning the juices back over the pumpkin every 20 minutes. Remove from the oven and allow to cool completely in its dish.
  • To serve, place a pumpkin slice on a serving plate, drizzle with a couple of tablespoons of tahini and 1 tablespoon date syrup, and finish with a smattering of crushed walnuts.

3 oz sugar
3 oz light-brown sugar
1/4 cup neutral oil
7 oz pumpkin puree
Cinnamon Cream Cheese Frosting:
7 oz cream cheese, at room temperature
2 oz butter, softened
5 tablespoons powdered sugar
1 teaspoon cinnamon
Candied Pepitas:
1 egg white
6 oz pepitas
3 tablespoons white sugar
3 tablespoons brown sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Cupcakes: Preheat the oven to 350°F. Line a cupcake pan with paper liners. In a medium bowl combine flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves and salt. In a large bowl, whisk together eggs, sugar, light-brown sugar and oil. Add dry ingredients and whisk until smooth. Whisk in pumpkin puree. Divide the batter among liners, filling each about halfway. Bake for 20 minutes, or until a wooden skewer comes out clean. Transfer the cupcakes to a wire rack and let them cool completely. Cinnamon Cream Cheese Frosting: Place cream cheese and butter in a bowl. Using an electric mixer, beat until pale and smooth. Gradually add icing sugar, beating until combined. Finally, mix in cinnamon. Candied Pepitas: Preheat the oven to 350°F. Line a baking sheet with parchment paper. Whip the egg white until frothy. Add pepitas and mix them in until they are all evenly coated. In a separate bowl, combine the sugars, salt, cinnamon and nutmeg. Dump the mixture onto the pepitas and mix thoroughly until pepitas are all evenly covered. Spread evenly onto the lined baking sheet. Bake for 10 minutes. Stir once halfway through. 1 cup packed brown sugar
1 large Mexican cinnamon stick or 3 regular cinnamon sticks
1/2 pound pumpkin or acorn squash, peeled and cut into 2-inch cubes
1/4 cup heavy cream (optional)
1 1/2 - 2 pints vanilla ice cream

Steps:

  • In medium saucepan combine water, brown sugar, and cinnamon. Bring to a boil and cook until liquid has reduced by about one-quarter and a light syrup forms, about 15 minutes. Add pumpkin or squash, reduce heat to very low and simmer gently until the pumpkin is translucent, about 45 minutes. If preparing in advance remove the pumpkin from syrup with a slotted spoon and store pumpkin separately. When ready to serve, combine the pumpkin and syrup in a small skillet and reheat over low heat. Just before serving, stir in the heavy cream. Spoon over ice cream and serve.;

2 tablespoons minced crystallized ginger
1 cup coarsely crumbled store-bought gingersnap cookie (about 4 ounces)

Steps:

  • MAKE THE PUDDING: In a medium bowl, combine the egg yolks, sugar, cornstarch, cinnamon, nutmeg, cloves and salt. Using a handheld electric mixer, beat at medium speed until the egg yolk mixture is thickened and light yellow, about 4 minutes.
  • In a medium saucepan, heat the milk and half-and-half until small bubbles appear around the rim. Gradually beat 1 cup of the hot milk mixture into the egg yolk mixture, then add the egg yolk mixture to the saucepan.
