These bright orange candied kumquats make perfect garnishes for wintertime cakes and cocktails, like the Kumquat Sour.

- Cut kumquats in half crosswise, and remove pits. Place in a medium saucepan with enough water to cover, and bring to a boil over medium-high heat. Drain in a sieve, and repeat process three more times.
- Place sugar and 1 cup water in a medium saucepan, and bring to a boil. When all sugar has dissolved, reduce heat to low, and add kumquats. Cover, and cook 40 to 45 minutes, until translucent. Remove from heat, and allow to cool completely in syrup. Candied kumquats can be stored in the syrup in an airtight plastic container up to 3 days.

- Cut a round of parchment paper to fit inside a small heavy saucepan and set aside. Put kumquats in saucepan with enough cold water to cover and bring just to a boil. Drain in a colander and rinse with cold water, then return to pan with 1 1/2 cups sugar, water (3/4 cup) , and a pinch of salt. Cover with parchment round and gently simmer until kumquats are tender and translucent, about 30 minutes. Cool completely in syrup.
- Just before serving, strain kumquats through a sieve set over a bowl and let stand 15 minutes (reserve syrup for another use; see note, above). Roll kumquats in remaining 1/2 cup sugar.

- Candied kumquats keep in syrup up to 3 months, chilled. Stain before coating with sugar.

SEARED DUCK BREASTS WITH RED-WINE SAUCE AND CANDIED KUMQUATS
Steps:
- Combine Beaujolais, chopped shallots, balsamic vinegar, crushed peppercorns, and crushed coriander seeds in medium saucepan. Boil until reduced to 1 1/2 cups, about 12 minutes. Add orange juice and boil 5 minutes. Add chicken broth and boil until reduced to 3 cups, about 15 minutes. Strain. Do ahead Sauce can be made 2 days ahead. Cover and chill.
- Preheat oven to 250°F. Using sharp knife, score skin of duck breasts diagonally to create 3/4-inch-wide diamond pattern. Sprinkle duck with salt and pepper. Heat 1 large and 1 medium skillet over medium-high heat. Place 2 duck breasts, skin side down, in large skillet and remaining duck breast in medium skillet. Cook until skin is brown and crisp, about 8 minutes. Turn; cook until brown and thermometer inserted into center registers 130°F for medium-rare, about 6 minutes. Transfer to rimmed baking sheet and place in oven to keep warm.
- Drain kumquats , reserving syrup. Pour off fat from skillets, reserving 2 tablespoons fat in large skillet for sauce. Heat large skillet with fat over medium-high heat. Add reserved sauce and 4 1/2 tablespoons reserved kumquat syrup. Boil until sauce is thickened and reduced to 3/4 cup, about 5 minutes.
- Slice duck breasts crosswise into 1/2-inch-thick slices. Divide duck breast slices among 6 plates. Drizzle duck with red wine sauce, garnish with candied kumquats, sprinkle with crushed peppercorns, and serve.

GINGERBREAD TRIFLE WITH CANDIED KUMQUATS AND WINE-POACHED CRANBERRIES
Youll need a 7 3/4-inch-diameter trifle dish that is at least 4 3/4 inches deep. The recipe makes an extra gingerbread cake; have it for breakfast the next morning. If you prefer to make 12 individual trifles, use all three gingerbread cakes and cut each in half horizontally. Using a pretty glass as a guide, cut out 4 cake rounds from each cut cake layer. Alternate 2 cake rounds with 2 to 3 layers of the mascarpone cream, a few candied kumquats, and some poached cranberries in each glass.

- For gingerbread cake:
- Combine stout and molasses in large saucepan. Bring to boil over medium-high heat, stirring occasionally. Remove from heat; stir in baking soda (mixture will foam up). Let stand until completely cool, about 1 hour.
- Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 350°F. Generously butter three 8-inch-diameter cake pans with 1 1/2-inch-high sides. Dust pans with flour; tap out excess. Whisk 2 cups flour and next 6 ingredients in large bowl to blend. Whisk eggs and both sugars in medium bowl to blend. Whisk oil, then stout mixture into egg mixture. Gradually whisk stout-egg mixture into flour mixture. Stir in fresh ginger. Divide batter among prepared pans (about 12/3 cups for each).
- Place 2 cake pans on top rack and 1 cake pan on bottom rack of oven. Bake until tester inserted into center of cakes comes out clean, reversing position of pans halfway through baking, about 28 minutes total. Cool cakes in pans on rack 15 minutes. Invert cakes onto racks; cool completely. DO AHEAD: Can be made 1 day ahead. Wrap in plastic; store at room temperature.
- For mascarpone cheese:
- Using electric mixer, beat mascarpone in large bowl until smooth. Add all remaining ingredients and beat until peaks form and mixture is smooth (do not overbeat or mixture may curdle). Cover and chill up to 2 hours.
- Using serrated knife, cut each of 2 cakes in half horizontally for a total of 4 cake layers. (Reserve remaining cake for another use.) Trim 1 cake layer to 7-inch round. Place trimmed cake round in bottom of 7 3/4-inch-diameter, 43/4-inch-deep trifle dish. Scatter scant 1/2 cup drained kumquats in single layer over cake. Top with 11/3 cups mascarpone cream, spreading evenly to sides of dish. Sprinkle 1/2 cup drained cranberries over. Repeat 2 more times with cake layer, kumquats, mascarpone cream, and cranberries. Top with fourth cake layer. Spread 1 1/3 cups mascarpone cream over. Spoon remaining cream into pastry bag fitted with large star tip. Pipe rosettes of mascarpone cream around top edge of dish. Tent loosely with foil; chill at least 4 hours. DO AHEAD: Can be made 1 day ahead. Keep chilled. Cover and chill remaining kumquats and cranberries separately.
- Scatter remaining kumquats and cranberries over center of trifle and serve.

- For cake:
- Preheat oven to 350°F. Butter and flour three nonstick 9-inch-diameter cake pans with 1 1/2-inch-high sides. Bring cola to boil in heavy medium saucepan. Remove from heat; whisk in baking soda, then molasses. Transfer to large bowl; cool to room temperature. Whisk flour and next 6 ingredients in medium bowl to blend. Whisk sugar, oil, and eggs into molasses mixture. Whisk in dry ingredients. Divide batter among prepared pans (about 1 2/3 cups batter for each).
- Bake cakes until tester inserted into center comes out clean, about 18 minutes. Cool cakes in pans on racks 15 minutes. Turn cakes out onto racks; cool cakes completely.
- For candied kumquats:
- Bring first 5 ingredients to boil in heavy large skillet, stirring to dissolve sugar. Scrape in seeds from vanilla bean; add bean. Add kumquats; reduce heat to medium and simmer until almost tender, stirring often, about 6 minutes. Using slotted spoon, transfer kumquats to plate. Boil syrup until reduced to 2/3 cup, stirring often, about 8 minutes. Cool syrup.
- For frosting:
- Stir brown sugar and whipping cream in heavy small saucepan over medium heat until sugar dissolves; cool caramel completely. Transfer 1/4 cup caramel to small bowl and reserve. Using electric mixer, beat cream cheese, butter, and vanilla in large bowl until smooth. Beat remaining caramel into frosting until well blended.
- Chop enough candied kumquats to measure 1/3 cup; mix in small bowl with 1 tablespoon kumquat syrup. Place 1 cake layer on platter. Spread 3/4 cup frosting over. Dot with half of chopped-kumquat mixture. Drizzle with half of reserved caramel. Top with second cake layer. Spread 3/4 cup frosting over. Dot with remaining chopped-kumquat mixture. Drizzle with remaining reserved caramel. Top with third cake layer. Spread remaining frosting over top and sides of cake. Arrange enough sliced kumquats in single layer atop cake just to cover. Mix pecans and ginger in small bowl. Press nut mixture halfway up sides of cake. Chill 1 hour. (Cake can be made 1 day ahead. Cover cake with cake dome; chill overnight. - For crust:
- Position rack in center of oven and preheat to 350°F. Combine cookie crumbs and brown sugar in medium bowl; add 6 tablespoons melted butter and stir until crumbs feel moist when pressed together with fingertips, adding remaining 1 tablespoon melted butter if mixture is dry. Press crumb mixture evenly onto bottom and 1 inch up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Bake crust until set and edges are golden brown, about 20 minutes. Cool crust in pan on rack. Maintain oven temperature.
- Wrap 4 layers of heavy-duty foil tightly around outside of pan with crust to make pan waterproof.
- For filling:
- Combine orange juice, 1/4 cup sugar, and orange peel in small saucepan. Bring to boil, stirring until sugar dissolves. Reduce heat. Simmer until mixture is reduced to 3/4 cup, about 10 minutes. Chill until cool.
- Meanwhile, using electric mixer, beat cream cheese and remaining 3/4 cup sugar in large bowl until smooth. Mix in sour cream, flour, and salt. Beat in eggs 1 at a time. Mix in cooled orange juice mixture. Pour filling into crust; place springform pan in large roasting pan. Pour enough hot water into roasting pan to come halfway up sides of springform pan.
- Bake cake until just set in center, about 1 hour 35 minutes. Remove cake from roasting pan; remove foil. Place cake directly in refrigerator and chill overnight. Arrange kumquat slices atop cake, covering completely. DO AHEAD: Can be made 1 day ahead. Tent cake with foil and refrigerate.
- Remove pan sides; place cake on platter. Cut cake into wedges; drizzle some kumquat syrup over and serve.

Once baked, they're slathered with even more citrusy goodness and topped with adorably tiny candied kumquat rings. Make the most of citrus season and experiment with different varieties-like zest from a Buddha's Hand lemon or the juice of a ruby red grapefruit!

- Make the candied kumquats: Prepare an ice bath in a medium bowl and set to the side with a medium fine-mesh strainer.
- Bring a small pot of water to a boil, then add the kumquats and blanch for 1 minute. Immediately pour through the fine-mesh strainer, then set the strainer with the kumquats in the ice bath to shock (this will help keep the bright orange color of the kumquats).
- In the same small pot, combine the sugar and water and cook over medium heat until the sugar dissolves, 2-3 minutes. Add the kumquats and reduce the heat to low. Simmer for 20-30 minutes, until the kumquats are soft and translucent. Use a small strainer or fork to remove the kumquats from the syrup and transfer to a wire rack to dry, making sure that none of the slices are touching. Let cool completely. Set the pot aside.
- Make the citrus poppy muffins: Preheat the oven to 375°F (190°C). Generously grease a standard or mini muffin tin with nonstick spray.
- Zest the kumquats, tangerines, and Meyer lemons into a small bowl. Set the citrus aside.
- In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter, 1 cup sugar, the salt, and citrus zest on medium-high speed until light and fluffy, about 2 minutes. Scrape down the sides of the bowl.
- Reduce the mixer speed to low speed and add the eggs and egg yolks, 1 at a time, mixing to incorporate between each addition.
- Turn the mixer off and add the flour, buttermilk, poppy seeds, vanilla, and baking powder. Mix on low speed until just barely combined; do not overmix.
- Use an ice cream scoop to scoop batter into the prepared muffin tin, filling each cavity half to three quarters of the way full.
- Bake the muffins until the edges are golden brown and a toothpick inserted into the center comes out clean, 12-15 minutes for regular muffins or 8-11 minutes for mini muffins.
- Meanwhile, add the remaining 5 tablespoons of sugar, the zested kumquats and tangerines, and juice of the zested Meyer lemons to a blender. Blend on low speed until the mixture is a chunky purée.
- Pour the purée into the same pot used to candy the kumquats. Bring to a simmer over low heat and cook for about 5 minutes, until the sugar is dissolved. Remove from the heat and let steep until ready to use.
- Once the muffins are done, remove from the oven. Set a wire rack over a baking sheet and place this upside down on top of the muffins. Carefully flip the upside down to turn the muffins out of the pan while still hot, then quickly flip them right-side-up on the rack. Strain the citrus purée to remove the solids, then use a pastry brush to brush a thick layer of the purée on top of each muffin while they are still warm. Before the glaze dries, decorate the tops of the muffins with the candied kumquats.
- The muffins are best the day they are made, but any leftovers will keep tightly wrapped at room temperature for up to 2 days.

- In a small saucepan, cover the fruit with cold water and bring to a boil. Drain. Cover the fruit with cold water and bring to a boil again. Drain and set aside.
- In the same saucepan, combine 1 cup water and the sugar, bring to a boil, reduce heat and simmer for 10 minutes.
- Pierce each piece of fruit 2 or 3 times with a paring knife. Drop the fruit into the sugar syrup and continue to simmer for 15 minutes for kumquats or 20 minutes for lemons.
- Remove from heat and leave the fruit steeping in the syrup unrefrigerated for 8 hours or overnight.
- Bring the syrup and fruit to a boil, then reduce to a simmer for 10 minutes. Cool and store in a glass jar. Fruit and syrup will keep in the refrigerator for 3 months.

- Cut the kumquats crosswise into 1/4-in/6-mm rounds, discarding the stems and seeds. Cut a piece of parchment paper into a round that is the same diameter as a medium, heavy-bottomed saucepan.
- In the saucepan over medium heat, combine the sugar and water and bring to a boil, stirring with a wooden spoon until the sugar dissolves. Add the kumquat slices, cover with the parchment, and weight down with a nonreactive heatproof plate. Reduce the heat until the liquid is gently simmering, then cook until the kumquat slices are tender and translucent, 30 to 45 minutes (the liquid should register about 230°F/100°C on an instant-read thermometer).
- Remove from the heat and, using a slotted spoon, transfer the candied kumquats to a heatproof container and ladle syrup over the fruit just to cover; discard any remaining syrup or save for sweetening cocktails. (The syrup will keep, refrigerated, for up to 1 month.) Let the kumquat slices cool completely in the syrup, then refrigerate for up to 1 month.
