1/2 cup butter, softened
3/4 cup sugar
1 large egg
1-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2-1/2 cups pitted dates, chopped
1/2 cup each chopped candied cherries and pineapple
3/4 cup coarsely chopped Brazil nuts, toasted
3/4 cup chopped almonds, toasted

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and cinnamon; gradually add to the creamed mixture and mix well. Fold in fruits and nuts. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 8-10 minutes or until lightly browned. Remove to wire racks.

1/2 cup shortening
1 cup sugar
1 egg
2 1/2 cups flour
1/2 teaspoon salt
3 teaspoons baking powder
1 teaspoon vanilla
1/2 cup milk
1 cup assorted candied fruit

Steps:

  • Cream shortening with sugar until fluffy.
  • Blend in unbeaten egg.
  • Sift flour with salt and baking powder.
  • Add vanilla to milk and add to creamed ingredients alternately with flour.
  • Cut candied fruits fine and add to mixture.
  • Drop on greased baking sheet.
  • Top each cookie with half candied cherry.
  • Bake in a moderate oven -- (375 degrees) for about 10 minutes.

1 package (10 to 12 ounces) vanilla wafers, crushed
2 cups chopped pecans or walnuts
1 can (14 ounces) sweetened condensed milk
1 cup chopped candied pineapple
1 cup red and green candied cherries, chopped
1/4 cup confectioners' sugar

Steps:

  • In a large bowl, mix the first five ingredients until blended. Divide mixture into three portions. Shape each portion into a 10x2-in. rectangle. Roll each rectangle in confectioners' sugar to coat. Wrap in plastic; refrigerate 2 hours or until firm., Unwrap and cut logs crosswise into 1/2-in. slices. Store in airtight containers in the refrigerator.

1 cup butter, softened
1 cup confectioners' sugar
1/2 cup sugar
1 large egg
2 teaspoons vanilla extract
2-1/4 cups all-purpose flour
1/2 teaspoon baking soda
2/3 cup chopped candied pineapple
1/2 cup chopped pecans
1/3 cup red candied cherries, chopped
CARAMEL GLAZE:
1/2 cup packed brown sugar
1/4 cup butter, cubed
2/3 cup confectioners' sugar
2 tablespoons 2% milk

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour and baking soda; gradually beat into creamed mixture. Stir in pineapple, pecans and cherries. Divide dough in half; shape each into a 9-in.-long roll; wrap each in plastic. Refrigerate 2 hours or until firm., Preheat oven to 350°. Unwrap and cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake 7-9 minutes or until lightly browned. Remove to wire racks to cool completely., In a small saucepan, combine brown sugar and butter. Bring to a boil over medium heat. Cook and stir 30 seconds. Remove from heat; cool 5 minutes. Beat in confectioners' sugar and milk. Immediately drizzle over cookies. Let stand until set., To Make Ahead: Dough can be made two days in advance. Wrap in plastic and place in a resealable plastic bag. Store in the refrigerator., Freeze option: Place wrapped rolls in a resealable plastic freezer bag. To use, unwrap frozen rolls and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Bake and decorate as directed, increasing time by 1-2 minutes.

2 egg yolks
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 lb chopped candied fruit or 1 lb dried fruit

Steps:

  • In a large bowl, using an electric mixer on high, beat butter and sugar until light and fluffy, about 3 minutes. Beat in eggs yolks and vanilla. Reduce speed to low; add flour, baking powder, salt and dried fruit. Mix just until a stiff dough forms. Turn onto a floured work surface, cut dough into halves, and form each half into a 1½-inch thick log. Wrap in plastic and refrigerate at least 2 hours or up to 2 days.
  • Preheat oven to 375F and line 2 large baking sheets with parchment paper.
  • Cut logs into ¼-inch-thick slices and arrange about 1 inch apart on pans. Refrigerate 10 minutes, then bake until lightly browned around the edges and firm in the center, 12 to 15 minutes. Let cookies cool 5 to 10 minutes on the pan before transferring to wire racks to cool completely. Decorate with your favorite icing if desired.

1 cup powdered sugar
1 whole egg
1/4 teaspoon salt

1/2 cup candied pineapple, diced
1 cup candied red cherries or 1 cup green cherries (or mixture of both)

Steps:

  • Cream butter and sugar together.
  • Beat in eggs.
  • Stir in dry ingredients.
  • Stir in pecans and fruit.
  • Form into rolls 1 1/2 inches in diameter.
  • Wrap in plastic wrap; place in resealable plastic bag.
  • Freeze.

2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 cup chopped pecsns or walnuts
1 cup candied cherries, chopped
4 slices candied pineapple, red and green, chopped

Steps:

  • 1. Cream butter, and sugar until fluffy. Stir in beaten eggs. Mix well.
  • 2. Sift flour and soda together - add to butter and sugar mixture.
  • 3. Mix candied fruit and nuts with 1/4 cup of flour and add to the mixture. Mix well.
  • 4. Drop by teaspoons full on a greased cooking sheet. Bake at 350 degrees for about 10 minutes. Do not overcook or fruit will become hard.

I found this recipe in a Family Circle cookie collection booklet. I thought they would look so festive on a cookie tray. Plus, the similarity to fruit cake, would be a cookie, that my mother would love. So, I will make some for her at Christmas time. I tweaked the recipe a little & forgot to say so when posting recipe & updating. Prep time, does not include chill time, in refrigerator.

2 cup(s) all-purpose flour or unbleached all-purpose flour
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1/3 cup(s) butter, at room temperature
1/2 cup(s) light brown sugar, packed
1 large egg
1/3 cup(s) buttermilk
1 cup(s) golden raisins, optional
1/2 cup(s) chopped nuts
1/2 cup(s) candied fruit
1/2 cup(s) candied cherry halves
- i reduced the amount of fruit in my dough, as i would like just a bit more of the cookie part over the fruit. i just eye-balled it

Steps:

  • Preheat oven to 375°F. Grease baking sheets.
  • Combine flour, baking soda and salt, in a bowl. In another bowl, beat butter and brown sugar at medium speed, until light and fluffy. Beat in egg. At low speed, beat in dry ingredients. Also, at low speed, beat in buttermilk. Stir in fruits and nuts. Chill 1 hour.
  • Drop dough by Tbs. on prepared baking sheets, 2 inches apart. Shape into rough balls; flatten slightly. Dot with cherry half. Bake for 8-10 minutes, or until golden brown.
