PALEO CANDIED BACON WITH CASHEWS
Paleo Candied Bacon with Cashews

Steps:
- Preheat oven to 400 degrees.
- Line a rimmed baking sheet with foil and place a wire rack onto the baking sheet. Spread the 6 slices of bacon evenly over the wire rack.
- Cook bacon for 10 minutes and remove from the oven. Reduce heat to 350 degrees.
- Using a paper towel, blot the oil from the top of the bacon. Spread ½ of the maple syrup over each slice of bacon (you only need a small amount of maple syrup here). Next, sprinkle half of the coconut sugar over the bacon slices, as well as a sprinkle of cayenne pepper.
- Return bacon to the oven and cook for 10 minutes. Remove bacon, flip, and blot the oil from the other side of the bacon. Add another thin layer of maple syrup, coconut sugar, and cayenne pepper. Sprinkle the chopped cashews over the bacon slices.
- Return bacon to the oven and cook for an additional 12-15 minutes, until the bacon is well cooked but not burnt. (Keep an eye on the bacon after 10 minutes as it can go from done to overdone quickly.)
- Remove the bacon from the oven and allow it to cool on the wire rack until it firms up. (You can move it around a bit while it's still warm so that it doesn't stick to the rack as it cools.) Candied bacon is best served on the day it is made.
SWEET AND SALTY BACON AND NUTS

- Preheat the oven to 325 degrees F. Cook the bacon over medium heat in a large skillet until brown and crisp, 8 to 9 minutes. Remove the bacon using a slotted spoon and drain on paper towels. Pour 1/4 cup of the bacon fat on a heavy rimmed baking sheet and spread evenly.
- Beat the egg white and salt until just foamy using a whisk in a medium bowl. Gradually add the sugar and beat until just blended. Add the almonds, walnuts and cayenne pepper. Toss until the nuts are coated.
- Spread the nut mixture in a single layer on the baking sheet. Bake until the nuts are crisp and brown, about 35 minutes, turning and stirring the nut mixture with a metal spatula every 10 to 15 minutes. Cool for 2 hours.
- Transfer the nut mixture to a bowl; add the bacon pieces and toss to blend. This recipe can be prepared 1 day ahead and stored in an airtight container in the refrigerator.

- Preheat the oven to 350 degrees F. Place the cashews on a baking sheet and place in the oven. Toast the cashews for 10 minutes, or until golden brown. Be sure to watch the cashews carefully so they don't burn! Remove the cashews from the oven and cool. In a saucepan (copper works best), add the sugar and the water. Bring the mixture to a boil. Once the mixture is boiling and the sugar has dissolved, add the cashews. Continue cooking the mixture, stirring constantly. The sugar will thicken, and then become granular again, continue stirring. The sugar will then begin to turn back into a clear liquid. When all of the sugar has turned into a clear liquid, remove the pan from the heat, stirring constantly. Once the sugar begins to turn a golden color, spoon the nuts onto a parchment paper lined sheet pan. Allow to cool.;
CANDIED BACON
Steps:
- Preheat the oven to 375 degrees F. Set a wire rack over a baking sheet.
- Spread the brown sugar on a plate. Coat the bacon on both sides of with the brown sugar, pressing to adhere. Lay the slices on the rack.
- Bake until dark brown and almost completely crisp (the bacon will continue to crisp as it cools), 20 to 25 minutes. Transfer to paper towels to cool. Crumble or chop before using.

- Combine sugar and water in a saucepan and heat until boiling. Add the cashews and stir continuously. When the water evaporates and the sugar is caramelized, stir in the bacon. Turn off the heat and add the bacon fat and butter, and smoked salt to taste Transfer to greased cookie sheet to cool, then break apart.
