BEAN, GRAIN AND CANADIAN FETA SALAD WITH CORIANDER CHILI DRESSING image

1/2 cup (125 mL) soft wheat berries
1 can (19 oz/540 mL) black beans, drained and rinsed
1 cup (250 mL) halved cherry or grape tomatoes
1 each sweet red and yellow pepper, diced
2 green onions, thinly sliced
1 avocado (optional), peeled and cubed
1/2 cup (125 mL) crumbled Canadian Feta cheese
3 cups (750 mL) torn romaine lettuce
1 cup (250 mL) shredded kale
Coriander Chili Dressing:
2 tbsp (25 mL) chopped fresh coriander
2 tbsp (25 mL) each extra-virgin olive oil and canola oil
2 tbsp (25 mL) cider vinegar
1 tbsp (15 mL) minced shallot
1 small clove garlic, minced
1 tsp (5 mL) minced hot pepper
Pinch each salt and pepper

Steps:

  • Bring large saucepan of salted water to boil. Add wheat berries; cover and simmer over medium-low heat until tender, 45 to 60 minutes. Drain and transfer to large bowl; let cool for 15 minutes. Add black beans, tomatoes, red and yellow peppers, onions, avocado (if using) and Feta cheese. Coriander Chili Dressing: In small bowl, whisk together coriander, olive oil, canola oil, vinegar, shallot, garlic, hot pepper, salt and pepper; pour over salad, tossing to coat. Divide lettuce and kale among plates; top with wheat berry mixture.

I'm a chili fan, and over umpteen years of making the stuff, this is my present method. I've posted it in my "Camping" thread, but thought it should get shown on the Board as well, in order that a wider group should have access to it. Chili is what you want to make it, but this stuff tastes pretty good, has both Mexican and American influences, but is a simple thing to make for dinner after getting home from work; mind it does taste better the next day, also freezes well!

1 1/2 lbs ground beef
1 lb sirloin, chopped small
2 ounces bacon grease
3 tablespoons mccormick Tex-Mex seasoning
1 tablespoon chili powder
1 (15 ounce) can red kidney beans, drained
2 -3 tablespoons garlic, chopped
1 large onion, diced
1 -2 jalapeno pepper, cored and diced finely
2 celery ribs, finely chopped
15 ounces spaghetti sauce, classico d'sicilia
3 ounces tomato paste
1 green bell pepper, cored and chopped

Steps:

  • Melt fat, and brown meat, preserving the drippings in the pan and maintaining temperature at medium heat.
  • Add onion and garlic, allowing onion to wilt somewhat.
  • Add tomato sauce and tomato paste, mix well.
  • Add seasonings, jalapenos and kidney beans, mix well.
  • Add celery and allow celery to get to medium cooked texture.
  • Add bell pepper pieces, and cook until only slightly crisp in texture.
  • Serve with sourdough bread and crispy refridgerator dills.
  • Enjoy!

My mother's Canadian recipe, tweaked a bit when I moved south to Tennessee. Started as a Superbowl Sunday Special, now a weekly family favorite!

2 lb lean ground beef
1 onion, diced
1 green pepper, diced
1/2 large box pacific organic creamy tomato soup
1 can(s) hunt's "for meatloaf" tomato sauce
1 Tbsp chili powder (or more to taste)
1 tsp white vinegar
1 tsp white sugar
1 tsp red pepper flakes (or more to taste -- optional)
grated cheddar cheese

Steps:

  • 1. Spray skillet with non-stick spray. Cook ground beef in skillet until browned.
  • 2. Add ground beef and remaining ingredients except cheese to slow cooker; stir well. Cover.
  • 3. Cook on High 2-3 hours or Low 4-5 hours. Garnish with shredded cheddar cheese, serve and ENJOY!
