BACON SPINACH CHICKEN: A FAST AND SATISFYING CHICKEN DINNER RECIPE
Bacon spinach chicken is the fast, easy, and deeply satisfying dinner recipe you need to add to your weeknight rotation. Made with lean chicken breasts, soft cream cheese, healthy spinach smoky bacon, and melty mozzarella, you can't go wrong with this flavor-packed stuffed chicken recipe.

Steps:
- Preheat the oven to 400°F. Line a large baking sheet with parchment paper or aluminum foil.
- Place the chicken on a cutting board and slice slits on one side of each chicken breast. Be sure not to cut all the way through the chicken, as you don't want the filling to fall out. Sprinkle each chicken breast with salt and pepper on all sides and transfer to the prepared baking sheet.
- In a mixing bowl, combine the cream cheese, drained spinach, sundried tomatoes, and mozzarella. Season with salt, pepper, and red pepper flakes. Fill every other slit in the chicken breasts with the cream cheese mixture. Fill the remaining slits with a slice of bacon.
- Sprinkle the parmesan cheese on top of each chicken breast.
- Bake until the chicken is cooked through, cheese is melted and bacon is crispy, about 35 minutes.

Steps:
- In a shallow bowl add three eggs and beat. In another shallow bowl combine panko crumbs, instant potatoes, garlc powder, salt & pepper and parmesan cheese.
- Dip each piece of chicken in beaten egg then in crumbs. Place in a 9x13 baking dish.
- Place chicken in oven; broil for 10 minutes on each side or till browned. (Check to make sure it doesn't get burnt.)
- Remove from oven and place cheese on top of chicken then bacon and top with spinach. Combine soup and milk adding more parmesan to the mixture. Mix well. Pour soup all over the chicken to cover. Bake in a 350F oven, covered with foil for 45 minutes.

Steps:
- Cook the bacon in a large pot over medium-high heat until crispy.
- Add the chicken and cook until no pink is showing. Remove the chicken.
- Cook the spinach, garlic, salt, and pepper with the bacon until the spinach has wilted.
- Put the chicken back in, add the milk, then stir.
- Bring the milk to a boil, then add the pasta.
- Stir constantly for about 10 minutes until the pasta is cooked.
- Add the parmesan, then mix until the cheese has melted. Serve!

BAKED EGGS WITH CANADIAN BACON, SPINACH, AND AGED CHEDDAR
Steps:
- Heat oven to 350 degrees F and arrange rack in middle. Butter 4 (6-ounce) ramekins and set aside.
- Melt 1 tablespoon butter in a large frying pan over medium heat. When it foams, add onion, season well with salt and freshly ground black pepper, and cook until softened, about 1 minute. Add spinach and cook until spinach is well wilted, about 2 minutes.
- Place ham on bottom of ramekins and top with spinach. Crack eggs into ramekins, place 1 tablespoon cream over each egg, and divide half of cheese evenly among ramekins.
- Put ramekins on a baking sheet and bake, rotating pan halfway through baking, until whites are just set but yolks are still runny, about 15 to 18 minutes.
- Meanwhile, spread remaining 2 tablespoons butter on 4 slices sourdough bread. Top with grated cheese and toast until golden brown. Serve eggs with toast.
