4 medium (blank)s red bell peppers, quartered
¼ cup olive oil
6 links pork sausage, sliced
1 pound campanelle pasta
¾ cup pitted kalamata olives
2 tablespoons roasted almonds, roughly chopped
ground thyme to taste
salt and freshly ground black pepper to taste
2 tablespoons freshly grated Parmesan cheese, or to taste

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place bell peppers on a baking sheet skin-side up and broil until blackened, 8 to 10 minutes. When the peppers are cool enough to handle, scrape away the blackened skins with a knife and discard. Cut the flesh into 1-inch pieces.
  • Bring a large pot of lightly salted water to a boil. Cook pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and reserve 1/4 cup of the cooking water.
  • Meanwhile, heat olive oil over medium-high heat and cook sausage until well browned on both sides, about 5 minutes. Add roasted red bell pepper and continue cooking for about 3 minutes. Add olives, almonds, and thyme. Cover and simmer until flavors are combined, about 5 minutes.
  • Add 2 tablespoons of reserved cooking water and pasta to the sauce and season with salt and pepper. Toss until well combined, adding more cooking water if pasta seems too dry.
  • Serve with freshly grated Parmesan cheese, if desired.

1 tablespoon butter
1 tablespoon olive oil
1 1/2 pounds large Italian sausage links
1 1/2 large onions, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
4 large russet potatoes, scrubbed and washed, cut into 1-inch pieces
2 large garlic cloves, chopped
1 cup white wine
Salt and freshly ground cracked black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • In large frying pan over medium heat, melt butter and olive oil and fry Italian sausage until brown on all sides. Place sausage in a casserole dish and add the onions, bell peppers, potatoes, garlic, wine and salt and pepper, to taste. Bake for 45 minutes or until potatoes are tender when pierced with a fork.

2 medium red bell peppers, four flat sides sliced off core, ribs and seeds discarded
2 medium yellow bell peppers, four flat sides sliced off core, ribs and seeds discarded
Coarse salt and ground pepper
1 pound orecchiette or other short pasta
2 teaspoons olive oil
1 pound sweet Italian sausage, removed from casings
1 tablespoon butter, cut into small pieces
1/3 cup grated Parmesan cheese

Steps:

  • Heat broiler. Place peppers, skin side up, on a foil-lined baking sheet; broil 4 inches from heat until charred, 18 to 20 minutes. Transfer to a large bowl. Cover with plastic wrap; steam 2 to 3 minutes. Using a paper towel, rub off pepper skins, reserving any juices in bowl. Thinly slice peppers crosswise into 1/4-inch strips; return to bowl. Set aside.
  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Drain, reserving 1/2 cup pasta water.
  • Meanwhile, heat oil in a large skillet over medium heat. Cook sausage, breaking it up with a spoon, until browned, 7 to 10 minutes. Add roasted peppers; cook until heated through.
  • Transfer sausage mixture to bowl; add pasta, butter, reserved pasta water, and Parmesan. Season with salt and pepper. Toss to combine.

1 head of garlic, left whole, plus 2 garlic cloves thinly sliced
2 tablespoons olive oil
1/2 lb fresh sweet Italian sausage, casings discarded
1/2 cup thinly sliced shallot
1/8 teaspoon dried hot red pepper flakes
1 (14-oz) can diced tomatoes in juice, drained, or 2 large fresh plum tomatoes, cut into 1/4-inch dice
1 (15- to 19-oz) can small white beans, drained and rinsed
2 cups chicken stock or broth
1 lb campanelle (bell-shaped pasta), rotini (corkscrew pasta), or medium shells
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh basil
1/2 oz finely grated Pecorino Romano (1/4 cup)

Steps:

  • Preheat oven to 400°F.
  • Cut off and discard top of garlic head to expose cloves, then wrap head in foil and roast in middle of oven until cloves are tender, about 45 minutes. Open foil carefully and cool to warm. Squeeze garlic from skins into a small bowl, then mash to a paste with a fork.
  • Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook sausage, stirring and breaking up large pieces, until browned, about 4 minutes. Add sliced garlic, shallot, and red pepper flakes and cook, stirring occasionally, until shallot is pale golden, about 2 minutes. Stir in tomatoes, beans, garlic paste, and stock and simmer, uncovered, stirring occasionally, until slightly thickened and reduced by half, 15 to 20 minutes.
  • Meanwhile, cook pasta in a 6- to 8-quart pot of boiling salted water until al dente, then drain in a colander. Toss pasta with sausage mixture, parsley, basil, cheese, and salt to taste in a large bowl (or in pasta pot) until combined well. Serve with additional cheese, if desired.

4 cups uncooked egg noodles
1/2 pound bulk Italian sausage
1 small onion, chopped
1 small green pepper, chopped
1/2 cup chopped fresh mushrooms
2 jars (7-1/2 ounces each) roasted sweet red peppers, drained and coarsely chopped
1 can (10-3/4 ounces) condensed golden mushroom soup, undiluted
3 ounces cream cheese, cubed
1/3 cup 2% milk
1/2 cup shredded smoked provolone cheese

Steps:

  • Cook noodles according to package directions; drain. Meanwhile, in a large skillet, cook sausage, onion, green pepper and mushrooms over medium heat until sausage is no longer pink and vegetables are tender, breaking up sausage into crumbles; drain., Stir in red peppers, soup, cream cheese and milk; heat through. Stir noodles into sausage mixture; sprinkle with provolone cheese. Let stand, covered, 5 minutes or until cheese is melted.
