2 (8 ounce) rounds Camembert cheese
oil for frying
1 cup all-purpose flour
2 eggs
¼ cup milk
1 cup bread crumbs
1 (16 ounce) can whole berry cranberry sauce

Steps:

  • Freeze Camembert cheese for 30 minutes.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Pour flour into a bowl. Beat eggs and milk together in a separate bowl. Pour bread crumbs into a third bowl.
  • Remove cheese from the freezer and cut each round into 6 wedges. Roll each wedge in flour and dip into the egg-milk mixture. Press each wedge into bread crumbs until evenly coated.
  • Fry each breaded wedge in the hot oil until bread crumbs are browned, 2 to 3 minutes per side. Transfer fried cheese to a paper towel-lined plate using a slotted spoon. Serve cranberry sauce on the side.

The holidays mean cranberry season, and here the cheerful and tart berries make an appearance atop sultry melted Camembert cheese.

2 tablespoons water
1/2 teaspoon unflavored gelatin
1/2 cup chopped fresh or frozen cranberries
1/4 cup sugar
1/4 cup port wine
1 cinnamon stick
1 teaspoon grated orange peel
1 (8-oz.) round Camembert cheese

Steps:

  • In glass measuring cup, combine water and gelatin; let stand 5 minutes.
  • In small saucepan, combine cranberries, sugar, wine, gelatin mixture and cinnamon stick. Bring to a boil. Reduce heat to low; simmer 2 to 3 minutes or until cranberries are tender. Remove from heat. Stir in orange peel. Cool 10 minutes.
  • Remove cinnamon stick; pour into small serving bowl. Cover; refrigerate at least 1 hour or overnight.
  • To serve, heat oven to 350°F. Place cheese on ungreased cookie sheet. Bake at 350°F. for 15 to 20 minutes or until thoroughly heated but not melted. Place cheese on serving plate. Spoon cranberry mixture around and on top of warm cheese. Serve with crisp crackers.

300ml port
175g light muscovado sugar
2 x 250g/9oz packs fresh or frozen cranberries

Steps:

  • Tip the port and sugar into a pan and bring to the boil. Add the cranberries, then cook for 5 mins for frozen and 8-10 mins for fresh until tender, but holding their shape. The sauce will thicken as it cools. Will keep in the fridge for 1 week or freeze for up to 6 weeks. Thaw for 2 hrs or overnight before serving.

1 8-ounce (4 1/2-inch-diameter) firm Camembert cheese with rind
1 large egg, beaten to blend
1 cup fresh breadcrumbs made from crustless French bread
1 cup ruby Port
1 cup dried black Mission figs, halved lengthwise
1 tablespoon sugar
2 tablespoons (1/4 stick) butter
1/3 cup crumbled blue cheese
Chopped fresh chives
1 French bread baguette, sliced into rounds, lightly toasted

Steps:

  • Brush Camembert on all sides with egg, then coat with breadcrumbs. Place on foil-lined plate and cover.
  • Bring Port to simmer in heavy small saucepan over medium heat. Add figs; simmer until slightly softened, about 5 minutes. Using slotted spoon, transfer figs to small bowl. Add sugar to Port in pan; boil until reduced to thick syrup, stirring occasionally, about 5 minutes. Pour syrup over figs. (Cheese and figs can be prepared 3 hours ahead. Refrigerate cheese. Let figs stand at room temperature.)
  • Melt butter in heavy skillet over medium-high heat. Add Camembert and cook until breadcrumbs are brown and cheese is warm, about 2 minutes per side. Transfer to platter. Top with blue cheese, figs and syrup. Sprinkle with chives and surround with toasts.

8 ounces camembert cheese
1/4 cup all-purpose flour
salt and pepper
2 eggs, lightly beaten
1/4 cup milk
1 cup stale breadcrumbs
1 (260 g) jar cranberry sauce, warmed

Steps:

  • Cut camembert into 2cm wedges.
  • Toss to coat in flour seasoned with salt and pepper.
  • Combine eggs and milk in a shallow bowl and toss camembert in the egg wash; drain and coat in breadcrumbs.
  • Heat oil to 180oC. Deep fry camembert pieces until golden and crisp; drain on kitchen paper and serve with warmed cranberry sauce.
