These are pretty yummy. The original recipe had all heavy cream and I have lightened it up somewhat. These are rich so save then for special meals. I do not add salt as I have used salted stock, and cheese. You may adjust the seasoning to your taste.

5 large yukon gold potatoes, peeled and sliced thinly
1 small onion, finely chopped
1 garlic clove, finely minced
3 tablespoons butter
3 tablespoons flour
2 cups chicken stock
1 tablespoon thyme
1/2 teaspoon white pepper
1/2 teaspoon nutmeg, fresh grated
1 1/2 cups heavy cream
1/2 cup grated parmesan cheese
4 ounces cambazola cheese, diced

Steps:

  • Butter a 9 x13 baking dish.
  • Melt butter in saucepan.
  • Add garlic and onion, and saute till translucent but not brown.
  • Stir in flour and cook a minute to loose rawness.
  • Add chicken stock and cook till thickened add spices, parmesan cheese and cream
  • Bring to gentle boil and remove from heat.
  • Drizzle a little sauce in bottom of pan.
  • Arrange potato slices on top.
  • Sprinkle with small pieces of Cambozola cheese.
  • Drizzle with more sauce.
  • Repeat layers until all the potato and Cambozola cheese are used up.
  • Bake at 350° F 45 - 60 min or until fork tender.

Creamy, cheesy and perfectly indulgent, scalloped potatoes are a classic for good reason. While cooking, the starch from the potatoes thickens the cream into a luscious sauce while the cheesy topping becomes golden and nutty in the oven. Allowing the casserole to rest for 10 minutes before serving makes it easier to slice.

2 tablespoons unsalted butter, plus more for the baking dish
4 medium russet potatoes (about 2 pounds)
1 1/2 cups heavy cream
1/2 cup whole milk
2 cloves garlic, minced
1/2 teaspoon fresh thyme leaves
Kosher salt and freshly ground black pepper
Pinch freshly grated nutmeg
1 cup shredded Gruyere (about 4 ounces)
1/2 cup finely grated Parmesan (about 1 1/2 ounces)

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8-inch square baking dish with unsalted butter.
  • Peel the potatoes and cut them into 1/8-inch-thick slices using a mandoline or sharp knife.
  • Add the sliced potatoes, heavy cream, whole milk, 2 tablespoons butter, garlic, thyme, 1 1/2 teaspoons salt, 1/2 teaspoon pepper and the nutmeg to a medium saucepan. Bring to a simmer over medium heat and cook, stirring occasionally, until the potatoes are tender and almost cooked through but still hold their shape, about 5 minutes. (They should not be soft and falling apart.) Remove the saucepan from the heat.
  • Add the Gruyere and Parmesan, stirring gently to combine. Pour the potato mixture into the prepared baking dish. Bake until the top is light golden brown and the potatoes are cooked through and tender, about 45 minutes. Let rest for 10 minutes before serving.

6 cups Simply Potatoes Homestyle Slices
1 cup heavy cream
1/2 teaspoon salt
1/2 cup chicken broth
1 1/2 cups shredded cheddar cheese

Steps:

  • Arrange layer over potatoes in greased casserole dish.
  • Sprinkle with salt.
  • Repeat layering, ending in potatoes.
  • Mix cream and broth, pour over potatoes.
  • Sprinkle cheese over top and cover dish with foil.
  • Preheat oven to 400 degrees and bake for 30 minutes.
  • Remove foil and continue baking for another 10 minutes.

1/4 cup butter or 1/4 cup margarine
1/4 cup all-purpose flour
3 cups milk
1 (10 ounce) package cheddar cheese, shredded (use a good quality block cheddar, such as Cabot or Cracker Barrel, and shred yourself)
1/2 cup thinly sliced green onion
1 teaspoon salt
1/4 teaspoon pepper
4 lbs potatoes, peeled and thinly sliced
1 1/2 cups soft breadcrumbs
1/4 cup butter or 1/4 cup margarine, melted
1/4 cup grated parmesan cheese

Steps:

  • Melt 1/4 cup butter in a large saucepan over medium heat. Whisk in flour, and cook, whisking constantly, 2 to 3 minutes or until flour is lightly browned. Whisk milk into butter mixture and bring to a boil. Reduce heat and simmer 6 minutes or until thickened. Stir in cheddar cheese and next 3 ingredients, stirring until cheese melts.
  • Spread a 1/4 cup of cheese sauce evenly into a lightly greased 13"x9" baking dish. Layer half the potatoes over the sauce. Top with half the remaining sauce. Repeat with remaining potatoes and cheese sauce.
  • Bake at 325 degrees Fahrenheit, covered, for 1 1/2 to 2 hours.
