1 (12 inch) pre-baked pizza crust
1 cup spicy barbeque sauce
2 skinless boneless chicken breast halves, cooked and cubed
½ cup chopped fresh cilantro
1 cup sliced pepperoncini peppers
1 cup chopped red onion
2 cups shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place pizza crust on a medium baking sheet. Spread the crust with barbeque sauce. Top with chicken, cilantro, pepperoncini peppers, onion, and cheese.
  • Bake in the preheated oven for 15 minutes, or until cheese is melted and bubbly.

You can make this special barbecue chicken pizza at home, our copycat recipe is no secret.

8 ounces boneless and skinless chicken breasts
1 tablespoon olive oil
2 tablespoons barbecue sauce
16 ounces pizza dough
2 tablespoons semolina (or cornmeal)
½ cup barbecue sauce
2 tablespoons Gouda cheese (shredded)
2 cups mozzarella cheese ( shredded )
¼ cup red onion (sliced)
2 tablespoons chopped fresh cilantro

Steps:

  • In a large frying pan, cook the chicken in olive oil over medium-high heat until just cooked, 5 to 6 minutes. Do not overcook.
  • Set cooked chicken aside in the refrigerator until chilled through.
  • Once chilled, coat the chicken with two tablespoons BBQ sauce. Place it back in the refrigerator.
  • Place a pizza stone in the center of the oven and preheat to 500 degrees for one hour before cooking pizzas.
  • Sprinkle semolina on a work surface.
  • Place half of the pizza dough on the semolina and roll out the dough.
  • Use a large spoon to spread ¼ cup BBQ sauce evenly over the surface of the prepared dough within the rim.
  • Sprinkle 1 tablespoon Gouda cheese over the sauce.
  • Cover with ¾ cup shredded mozzarella.
  • Distribute half the chicken pieces evenly over the cheese (approximately 18 pieces).
  • Place approximately 18 to 20 pieces of red onion over the surface.
  • Sprinkle an additional ¼ cup mozzarella over the top of the pizza.
  • Transfer the pizza to the oven and bake until the crust is crisp and golden and the cheese in the center is bubbly, about 8 to 10 minutes.
  • When the pizza is cooked, carefully remove it from the oven and sprinkle 1 tablespoon cilantro over the hot pizza. Slice and serve.
  • Repeat with the remaining ingredients for a second pizza. The two pizzas may be prepared simultaneously if you are careful in placing the pizzas at opposite corners of your pizza stone.

1/4 teaspoon pepper
1 cup barbecue sauce, divided
1 tube (13.8 ounces) refrigerated pizza crust
2 teaspoons olive oil
2 cups shredded Gouda cheese
1 small red onion, halved and thinly sliced
1/4 cup minced fresh cilantro

Steps:

  • Sprinkle chicken with pepper; place on an oiled grill rack over medium heat. Grill, covered, until a thermometer reads 165°, 5-7 minutes per side, basting frequently with 1/2 cup barbecue sauce during the last 4 minutes. Cool slightly. Cut into cubes., Divide dough in half. On a well-greased large sheet of heavy-duty foil, press each portion of dough into a 10x8-in. rectangle; brush lightly with oil. Invert dough onto grill rack; peel off foil. 1 teaspoon extra-virgin olive oil, plus more for brushing
1/2 pound prepared pizza dough, at room temperature
1/3 cup plus 2 tablespoons dark barbecue sauce
1 8-ounce skinless, boneless chicken breast
Kosher salt and freshly ground pepper
2/3 cup grated smoked gouda cheese (about 3 ounces)
2/3 cup grated part-skim mozzarella cheese (about 3 ounces)
1/2 small red onion, thinly sliced
Fresh cilantro, for topping

Steps:

  • Brush a large bowl with olive oil. Shape the pizza dough into a ball, add it to the bowl and turn to coat with the oil. Cover tightly with plastic wrap and set aside in a warm place, 30 to 40 minutes.
  • Position racks in the upper third and middle of the oven. Place a pizza stone or inverted baking sheet on the top rack and preheat the oven to 425 degrees F for at least 30 minutes.
  • Meanwhile, lay out a sheet of parchment paper and brush with olive oil. Transfer the ball of dough to the parchment and roll it out into a 10-inch round, stretching it with your hands as needed. Lightly brush the dough with olive oil, cover with another piece of parchment and set aside to let rise slightly, about 30 minutes.
  • While the dough rises, mix 2 tablespoons barbecue sauce and 1 teaspoon olive oil in a small bowl. Put the chicken in a baking dish, season with salt and pepper and brush with the barbecue sauce mixture. Bake on the middle oven rack until cooked through, about 20 minutes. 1/3 cup barbecue sauce, divided
1/2 cup smoked gouda cheese, shredded

Steps:

  • Position an oven rack in the lowest position and place a pizza stone on it. Preheat the oven to its highest setting, 500°F or higher, for 30 minutes to 1 hour.
  • While the oven is preheating, allow the dough to come to room temperature on the counter. Toss the chicken with 2 tablespoons of the barbecue sauce and set aside.
