1 (8 ounce) package refrigerated crescent rolls
1 (3 ounce) package cream cheese, softened
1 tablespoon butter
¼ teaspoon salt
⅛ teaspoon ground black pepper
2 tablespoons milk
1 tablespoon minced onion
2 cups chopped cooked chicken
2 tablespoons butter, softened
3 tablespoons cracker crumbs, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Unroll crescent roll dough onto a work surface; make 4 rectangles by placing 2 dough triangles next to each other. Pinch perforations closed.
  • Mix cream cheese, 1 tablespoon butter, salt, black pepper, milk, and minced onion in a bowl until evenly combined; gently stir chicken into cream cheese mixture. Spoon 1/4 the chicken mixture onto each dough rectangle. Roll dough over the filling and pinch seams closed. Place onto a baking sheet. Spread about 1 1/2 teaspoons butter on each pocket and sprinkle with cracker crumbs.
  • Bake in the preheated oven until browned and filling is hot, 20 to 25 minutes.

This is a nice savory chicken sandwich pocket that is full of flavor. It makes a great dish for a sit down dinner or when the guys come over to watch the big game.

8 boneless skinless chicken breast halves
1 teaspoon salt
1 teaspoon pepper
1 tablespoon crushed thyme, divided
35 -40 large spinach leaves
2 (8 ounce) cartons of your favorite cream cheese with herbs or 2 (8 ounce) cartons vegetables
1/2 cup chopped pecans, toasted
2 sheets frozen puff pastry, thawed
1 egg
1/2 teaspoon cold water
1 tablespoon poppy seed

Steps:

  • Cut a lengthwise slit in every chicken breast to within a 1/2 inch of the the other side, open so they lay flat.
  • Cover each chicken breast with plastic wrap; pound to 1/8 inch thickness. Remove plastic wrap and sprinkle chicken with salt and pepper.
  • Stir half of the thyme into each carton of cream cheese and set aside.
  • Place spinach leaves over chicken breasts.
  • Spoon 2 Tbs. of the cream cheese mixture down the center of each chicken breast.
  • Sprinkle the toasted pecans over the cream cheese and lightly press so that they stick.
  • Roll up the chicken breasts to cover the filling and tuck in the ends.
  • Unroll the puff pastry; cut into 8 even portions. Roll each into an 8-in.x7-in. rectangle.
  • Combine egg and cold water; brush over edges of pastry.
  • Place chicken at one short end; roll up tightly and tuck in ends as you go.
  • Place pockets on a greased cookie sheet. Brush them with remaining egg and water mixture, and sprinkle with poppy seeds.
  • Bake at 350 degrees for 25-30 minutes or until golden brown.

EASY CHICKEN POCKETS

This quick recipe came from my sister-in-law. We found it works better to fold the crescent rolls in half, making a square rather than a triangle (using 2 roll sections to make one square).

  • Mix chicken, cream cheese, soup, milk, salt & pepper.
  • Separate dinner rolls into 8 squares on cookie sheet.

My Mother-in-Law used to make these after Thanksgiving and Christmas dinners with the left over turkey. I got the recipe from her and does what every cook does, altered it a bit and made it my own. I like it so much, I find myself going to Costco and getting a few of those 'Rotisserie Chickens" and not waiting for them to be...

3-4 oz cream cheese
3 Tbsp butter, melted
2 c chicken, cooked and cut up, left overs works great
2 Tbsp milk
2 Tbsp green onion, whites and green parts sliced
1/2 tsp garlic powder
salt to taste
pepper to taste
1 pkg refrigerated crescent rolls or
4 rhodes rolls or other frozen roll dough thawed, or
fresh yeast dough of your choice

Steps:

  • 1. If using packaged crescents rolls, form squares with 2 pieces by pinching together one long edge. May also use your own fresh roll dough or other favorite frozen roll dough, thawed. Just roll them out thin.
  • 2. Mix together Cream Cheese Chicken, Milk, Salt, Pepper, Garlic, and green onion/chives slices, leaving the chicken in small chunks, and the cream cheese as well.
  • 3. Divide mixture between the 4 prepared roll squares. Pinch together the edges forming a pocket. If using frozen yeast dough, pockets will be more round, instead of the square-ish shape of the crescent rolls. Place on a baking sheet, I line with Parchment, Brush with melted Butter.
  • 4. Bake in a pre-heated 350 degree oven for 20-25 minutes. Serve with cranberry sauce if desired.
  • 5. These can be pre-prepared and frozen. After you have mixed the filling, and filled the pockets, place on a parchment paper square, brush with melted butter, gently fold paper around pocket, wrap in plastic wrap and freeze. To bake these from FROZEN, place in a covered shallow casserole dish and bake in a 350 oven, covered for 40-45 minutes, then uncovered for 20-25 minutes more, brush with butter when you take the lid off. Serve with cranberry sauce.

1/2 cup salsa, plus more for serving
1/2 cup sour cream
2 tablespoons taco seasoning
1 cup shredded rotisserie chicken
1 cup shredded cheddar cheese
Optional: Shredded lettuce, guacamole and additional sour cream

Steps:

  • Preheat oven to 375°. Unroll 1 tube crescent dough and separate into 2 rectangles; press perforations to seal. Repeat with second tube. In a bowl, combine salsa, sour cream and taco seasoning. Spoon chicken onto the left side of each rectangle; top with salsa mixture. Sprinkle with cheese. Fold dough over filling; pinch edges to seal., Place on an ungreased baking sheet. Bake until golden brown, 13-15 minutes. Cut in half. Serve with salsa and toppings as desired.

2 -3 small chicken breasts, diced
1/2 cup minced onion
2 garlic cloves, minced
1/4 teaspoon kosher salt
1/8 teaspoon ground black pepper
1 tablespoon butter, softened
3 ounces cream cheese, softened
1/4 teaspoon seasoning salt
2 tablespoons milk
1 (8 ounce) package refrigerated crescent dinner rolls
1 tablespoon butter, melted
1/4 cup Italian seasoned breadcrumbs (optional)

Steps:

  • Preheat oven to 375°F.
  • Heat the olive oil in a large skillet over medium heat. Cook the chicken with the onions and garlic.
  • Meanwhile, in a medium bowl, beat the cream cheese and 1 tablespoon melted butter until smooth. Stir in the cooked chicken, onions and garlic. Add the salts, pepper and milk. Mix well.
  • Separate the crescent roll dough into the eight triangles. Dollop a tablespoon of filling into the center of each triangle and fold the corners up to seal. Press and seal firmly.   • Heat oven to 350. In medium bowl, blend cream cheese and 2 T.butter until smooth. Add next 6 ing. Mixing well Separate crescent rolls into 4 rectangles;firmly press perforations to seal. Spoon ½ cup meat mixture onto center of each rectangle. Pull four corners of dough to top center of chicken mixture,twist slightly and seal edges. Brush tops with 1T.butter (or use the butter crescents and leave this step off). Place on ungreased cookie sheet. Bake at 350 for 20-25minutes or until golden brown.

This is my version of this well-known recipe. I have adapted it from other recipes to suite my own taste.

1 (8 ounce) can crescent rolls
1 (10 1/2 ounce) can cream of celery soup
3 ounces cream cheese (softened)
3 tablespoons frozen chopped onions (or to taste)
2 (5 ounce) cans chicken breasts (drained)
1 dash pepper (or to taste)

Steps:

  • Preheat oven to 350 degrees.
  • In a medium sized bowl, mix together chicken, cream cheese, ONE HALF of the cream of celery soup,the onions, and the pepper. Mix until thoroughly combined.
  • Seperate crescent rolls into 4 squares. One square equals 2 triangles put together. Press triangles together to form a square. Place these on a non-stick cookie sheet.
  • Place 1/4 to 1/3 cup of filling into each square, and pull up the corners of the crescent roll to the center to form a "pocket".
  • Bake at 350 for about 20 minutes or until golden brown.
  • If you have any filling left, mix it with the remaining cream of celery soup and heat it in a small saucepan over low heat and use this to top your cresent pockets.
