Extra Virgin Olive Oil (I used Private Reserve Greek olive oil)
Unsalted butter
10 garlic cloves, roughly chopped
1.5 lb calamari, sliced into rings
2 to 3 tbsp white wine
Juice of 1 1/2 limes
Salt and pepper
Pinch cayenne pepper, optional
3 tbsp chopped fresh dill

Steps:

  • In a large cast iron skillet, heat 1/4 cup of olive oil and 1 tbsp of unsalted butter. Turn heat to medium-high and add the garlic, saute briefly, tossing regularly, until fragrant (this should take seconds, garlic should only gain a little color, do not burn it.)
  • Pat calamari dry and add to the pan, cook for 1 to 2 minutes over medium-high heat (calamari will release some liquid.) Add white wine and lime juice. Cook briefly to warm though (do not overcook or calamari will turn rubbery. You are just looking for the sauce to warm through) Season with salt and pepper. If you like a little spice, add a pinch of cayenne.
  • Finally, stir in the fresh dill. Remove from heat and serve (see serving suggestions in notes)

Crispy, succulent calamari rings, coated in seasoned flour and quickly fried to crispy perfection. Budget 30 minutes to soak the calamari in milk. This helps tenderize them while taming their fish smell. It also allows the flour coating to better stick on the rings. Be sure to read the post for more tips!

1 pound frozen calamari tubes (thawed)
Kosher salt
½ cup 2% milk
1 1/2 cup all purpose flour
1/3 cup cornstarch
½ teaspoon baking powder
¾ teaspoon dry oregano
½ teaspoon black pepper
½ teaspoon cayenne pepper
Grape seed oil as needed
1 lemon (cut into wedges to serve)

Steps:

  • Slice the calamari tubes into ¾-inch thick rings.
  • In a medium bowl, stir 1 teaspoon Diamond Crystal kosher salt in ½ cup milk.
  • Add the calamari rings to the milk mixture and refrigerate for 30 minutes.
  • In a large bowl, whisk together the flour, cornstarch, baking powder, oregano, black pepper, and cayenne (make sure the mixture is well combined).
  • Prepare a large colander and set it on top of a large bowl. Using a pair of tongs, take a portion of the calamari rings (about ½ of them) shake off excess milk and toss the calamari in the flour mixture. Toss the calamari to coat evenly. Put the coated calamari in the colander. Repeat with the rest of the calamari.
  • Turn your oven on a low 150 degrees F. Prepare a large sheet pan and set a wire rack on top. Top the wire rack with paper towel.
  • Heat 4 inches of grape seed oil in a small cooking pot (I used a 2.5 quart pot) to somewhere between 350 and 365 degrees F. To test your oil, drop one calamari ring, many bubbles will form around it and the calamari will begin to float.
  • Once your oil is ready, using a pair of tongs, gently add some of the calamari in and fry for about 3 minutes or until golden brown. Remove the calamari from the oil and arrange it on the paper towel on top of your prepared wire rack. Immediately season with kosher salt, then transfer to your warm oven to keep warm while you work on the rest. Repeat until you have fried all the calamari.
  • Transfer the fried calamari to a serving plate and finish with a squeeze of lemon juice!

12 young squid, about 1 1/2 pounds total
Filling
1/2 pound ground pork
4 dried shiitake mushrooms, reconstituted (page 332), stemmed, and finely chopped
1 bundle (1.3 ounces) cellophane noodles, soaked in hot water until pliable, drained, and cut into 1/4-inch lengths
1/2 small yellow onion, finely chopped
1/2 teaspoon peeled and minced fresh ginger
2 teaspoons fish sauce
1/8 teaspoon black pepper
1/4 teaspoon sugar
1/4 cup canola or other neutral oil
2/3 cup Ginger-Lime Dipping Sauce (page 309)

Steps:

  • Clean the squid as directed on page 323, reserving the tentacles. Finely chop the tentacles, and then put them in a bowl.
  • To make the filling, add the pork, mushrooms, noodles, onion, ginger, fish sauce, pepper, and sugar to the tentacles and use your fingers or a spatula to mix well.
  • Stuffing the squid bodies is difficult at first, but you will quickly get the hang of it. First, use a sharp knife to remove a scant 1/8 inch of the pointy tip of the squid bodies. This hole acts as a vent, so that air bubbles don't form that would prevent you from filling the entire cavity. Next, hold a body with one hand and use your other hand to stuff. Start out with a small amount of filling and push it in with your index or middle finger, gently squeezing the squid tube to force the filling to the tail end. (Or, fill a pastry bag outfitted with a 1/2-inch round tip and pipe in the filling.) Continue stuffing until only 1/2 to 3/4 inch of the body remains unstuffed. Do not overstuff the squid, or it may burst during cooking. "Stitch" the opening closed by inserting a toothpick down through the wide end (head hole) and then back up again. As the squid are stuffed, place them on a paper towel to blot up excess moisture. Discard any left over filling or save for another use.
  • The initial searing of the squid can be fairly dramatic, so you may want to have a splatter guard handy. In a large skillet, heat the oil over medium-high heat. When it is hot, add the squid and sear, turning as needed, for about 2 minutes, or until lightly golden on all sides. Reduce the heat to medium and continue frying, moving the squid around to ensure even cooking. After 10 minutes, the squid should be tight and firm, like a well-filled balloon, and be nicely browned. Remove from the pan and let cool for 5 to 10 minutes.
  • To serve, remove the toothpick from each squid. Cut each squid on the diagonal into slices about 1/4 inch thick. Arrange the slices on a platter, with the dipping sauce in a bowl in the center for people to help themselves. Serve the squid hot or at room temperature.

1 pound cleaned squid
8 ounces rice noodles
Kosher salt
1/3 cup chicken broth
1 tablespoon molasses (not blackstrap)
1 tablespoon soy sauce
2 tablespoons vegetable oil
2 red bell peppers, seeded and cut into strips
1 bunch chopped scallions, whites and greens reserved separately
One 2-inch piece peeled fresh ginger, julienned
1 tablespoon finely chopped garlic
1 1/2 tablespoons lime juice (from 1 to 2 limes)
Freshly ground black pepper
1 small cucumber, thinly sliced

Steps:

  • Cut the squid bodies on one side so they open up flat. Score with a sharp knife in a 1/4-inch crosshatch pattern. Slice into 1/2-inch strips. Cut any tentacles in half.
  • Cook the noodles in a pot of boiling salted water until tender, about 8 minutes. Drain and run under cold water until cool.
  • Stir together the broth, molasses and soy.
  • Heat the oil in a wok or large heavy skillet over high heat. When it just begins to smoke, add the bell peppers, 1 teaspoon salt and 1/2 teaspoon pepper and cook, stirring, until charred in places and crisp tender, about 3 minutes. Stir in the scallion whites, ginger and garlic and cook, stirring, until very fragrant, about 2 minutes. Add the squid and sauce to the wok and cook, stirring until the squid is just cooked, about 1 minute. Stir in the lime juice, and then toss the squid mixture with the noodles. Chill until cool, about 30 minutes or up to overnight.
  • Season with salt and pepper. Serve sprinkled with the cucumbers and scallion greens.

2 large limes
3 tbs oriental sesame oil
3 tbs peanut oil
2 lbs squid, cleaned, cut into 1/4 in. wide pieces
Salt and freshly ground pepper
2 small green onions, chopped
2 tbs (generous) finely chopped peeled fresh ginger

Steps:

  • Remove peel and white pith from limes. Working over bowl to catch juice, cut between membranes with small sharp knife to release segments. Reserve lime segment and and juices separately in small bowls. Heat both oils in heavy large skillet over medium -high heat. Season squid with salt and peper. Add to skillet and saute until opaque, about 1 minute. Remove from heat. Mix in onions, ginger and reserved lime juice to taste. Transfer squid to serving platter. Garnish with line segments and serve.

3/4 cup cornstarch
1/2 cup all-purpose flour
Salt and freshly ground pepper
1 1/2 pounds calamari, cleaned, tubes cut into 1/4-inch-thick rings
1/4 cup soy sauce
2 tablespoons sweet chili sauce
2 tablespoons lime juice
2 teaspoons minced garlic
2 scallions, sliced
1/2-inch piece fresh ginger, peeled and grated

Steps:

  • For the calamari: In a large heavy-bottomed skillet, heat the canola oil over medium-high heat to 360 degrees F.
  • In a large bowl, stir together the cornstarch and flour with a generous amount of salt and pepper. Toss the squid in the cornstarch, being sure to completely coat.
  • Working in batches, lift the squid from the cornstarch, shaking to remove any excess, and carefully place in the oil. Fry until lightly golden and crisp, 3 to 4 minutes. Remove from the oil and drain on a baking sheet lined with a brown paper bag. Repeat with the remaining squid.
  • For the dipping sauce: Combine the soy sauce, chili sauce, lime juice, garlic, scallions and ginger in a small bowl. Stir together and serve with the calamari.

4 ounces olive oil
4 ounces butter
1 cup sliced pepperoncini
1/2 cup chopped red onion
1/4 cup minced garlic
1/2 cup white wine
1/4 cup clam juice
1 teaspoon crushed red pepper
1 round loaf sourdough bread
1/2 teaspoon cornstarch
2 cups all-purpose flour
1 tablespoon seasoning salt
1/2 teaspoon cayenne
12 ounces calamari, tubes and tentacles, cut in 1/4-inch thick
3 ounces diced Roma tomatoes
3 ounces chopped scallions

Steps:

  • Heat canola oil in a deep pot to 350 degrees F.
  • In a skillet over high heat, combine olive oil, butter, pepperoncini and onion. Saute until lightly caramelized, then add garlic and cook until tender. Deglaze with white wine and cook until slightly reduced. Add the clam juice, red pepper, and lower heat to a simmer.
  • Core out bread and lightly toast the bread bowl. Set aside.
  • In a medium bowl, mix cornstarch, flour, seasoning salt and cayenne. Toss calamari in flour and shake off excess.
  • Fry calamari in oil until golden brown and crispy. Toss fried calamari with the sauce and pour into the toasted bread bowl. Garnish with Roma tomatoes and scallions.

CHILLI & LIME SQUID SALAD

3 red chillies , halved, deseeded and finely diced
2 tbsp garlic-infused olive oil , plus extra to serve
2 whole squid tubes about 400g/14oz, cleaned and prepared (see tip)
2 large ripe avocados , stoned, peeled and sliced
100g rocket
3 limes , halved
3 tbsp crispy onions (I used Fresh Gourmet crispy onions)

Steps:

  • Mix two-thirds of the chillies and the garlic-infused oil in a large bowl and add the squid. Cover with cling film and leave them to marinate for at least 1 hr or overnight in the fridge.
  • Just before serving, heat the barbecue or a griddle pan. Combine the avocado slices with the rocket. Divide between 6 small plates or bowls.
  • When the barbecue is hot or your griddle pan almost smoking, add the limes, cut-side down. Tip on the squid, pressing lightly with the back of a fish slice to create charred lines. When the squid feels slightly firm, about 1 min 30 secs into cooking, turn over and press down with the fish slice again, cooking for another 1 min 30 secs or until the squid feels firm. Remove and place on a board.
  • Slice the squid into 1-2cm rings and top each salad with a few rings and some crispy onions. Serve half a charred lime on the side for squeezing over, with the remaining chilli scattered over and a drizzle of garlic oil.

Calamari has an unfair reputation for being tricky to work with and that it's rubbery when cooked. Here's the secret: cook it in 45 seconds or 45 minutes--very quickly or a long slow simmer. For this marinara dish, I use the long simmer method.

2 tablespoons olive oil
1 yellow onion, sliced thin
1 serrano chile pepper, sliced thin
3 garlic cloves, crushed or minced
1 anchovy fillet
½ teaspoon red pepper flakes
½ teaspoon kosher salt, plus more as needed
½ cup dry white wine
1 cup clam juice
6 cups crushed or pureed Italian plum tomatoes
½ teaspoon dried oregano
2 pounds frozen calamari (tubes and tentacles), thawed, sliced into 1/2-inch pieces
¼ cup freshly chopped Italian parsley
1 tablespoon Freshly grated Parmigiano-Reggiano cheese
1 (16 ounce) package dry pasta

Steps:

  • Drizzle olive oil into saucepan (not over heat). Add onions, Serrano pepper, garlic, anchovy filet, red pepper flakes, and salt. Place pot over medium-high heat. When onions start to sizzle after a minute or so, stir and cook until onions and garlic just start to turn golden, 3 or 4 minutes. Stir in wine.
  • Cook until wine is reduced by about half, 3 to 5 minutes. Add clam juice, tomatoes, and oregano. Bring to a simmer over medium-high heat. When sauce begins to bubble, reduce heat to medium-low. Simmer gently for about 15 minutes.
  • Transfer calamari to sauce pot; stir gently. Simmer until calamari are tender, 35 to 45 minutes. Remove from heat. Stir in parsley.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes. Drain.
  • Stir some sauce into the hot, drained pasta. Serve in warm bowls topped with more marinara sauce and grated cheese.

I used to make this all the time and I'd forgotten all about it. This recipe is delicious. You can easily double this if you want to. It makes a great dinner, but also a great 1st course if you have company coming. Takes just minutes to make. It's from 1996 Bon Appetit. I'd serve it with garlic bread and a nice mixed salad. You are going to need to reserve some of the pasta water, so don't forget! ;-)

1/2 lb linguine
4 rolled anchovies over capers, from 2-ounce tin, anchovies crushed
oil, reserved
1/2 lb cleaned calamari, thinly sliced crosswise (squid)
3 large garlic cloves, chopped
1/4 teaspoon dry crushed red pepper (or more to taste)
3/4 cup dry white wine
1/2 cup thinly sliced fresh basil leaf

Steps:

  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain pasta, reserving 1/2 cup cooking liquid.
  • Meanwhile, heat reserved oil from anchovies (about 2 tablespoons) in large skillet over medium-high heat. Add calamari and toss just until opaque, about 1 minute. Add garlic, crushed red pepper and crushed anchovies with capers and stir 1 minute.
  • Add white wine; boil until sauce is slightly reduced, about 3 minutes. Mix in basil.
  • Add pasta to mixture in skillet. Toss until heated through and sauce coats pasta, adding reserved cooking liquid by tablespoonfuls if pasta seems dry, about 2 minutes.

1 garlic clove, minced
3 tablespoons white or light miso paste
3 tablespoons sake
2 teaspoons mirin
1 tablespoon soy sauce
1 tablespoon oyster sauce
8 calamari (bodies only), rinsed and dried
2 teaspoons grated fresh ginger
1 1/2 teaspoons cider vinegar
Juice of 1 lime
1/2 teaspoon sugar
Coarse salt, to taste
3 tablespoons vegetable or canola oil
5 celery stalks, halved lengthwise and sliced diagonally into 2 1/2-inch pieces
1 tart apple, such as Granny Smith, peeled and cut into matchsticks
2 scallions, white and pale-green parts only, halved lengthwise and sliced into 2 1/2-inch matchsticks
3/4 cup sunflower sprouts
1 serrano chile, halved lengthwise, seeded, and thinly sliced crosswise
1 teaspoon black sesame seeds

Steps:

  • Make the marinade: Cook garlic, miso, sake, mirin, soy sauce, and oyster sauce in a pan over medium-high heat, stirring occasionally, for 3 minutes. Transfer to a bowl. Let cool slightly.
  • Using a kitchen mallet, pound both sides of calamari a few times to tenderize. Insert a sharp knife into calamari, cut along seams, and then open like a book. Lightly score inner sides at 1/4-inch intervals. Add calamari to marinade, and let stand for 20 minutes.
  • Make the slaw: Whisk together ginger, vinegar, lime juice, sugar, and salt. Add oil in a slow, steady stream, whisking until emulsified.
  • Preheat grill to medium-high. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds.) Wrap 3 bricks or the bottom of a heavy skillet with heavy-duty foil. Remove calamari from marinade, and season scored sides with salt. Place calamari, scored sides down, on grill, and top with foil-lined weight. Grill until opaque, about 1 1/2 minutes. Cut into 3/4-inch-wide pieces.
  • Toss celery, apple, scallions, sprouts, and chile with 3 tablespoons dressing (reserve remaining dressing for another use). Arrange on a platter. Top with calamari, and sprinkle with sesame seeds.

SAUTEED SQUID WITH CHILES, MINT AND LIME

1 pound cleaned squid
4 tablespoons extra-virgin olive oil
Kosher salt, as needed
1 jalapeño chile, thinly sliced and seeded if desired
2 garlic cloves, finely chopped
Lime juice, as needed
1/4 cup chopped mint
Crusty bread, for serving
Sliced avocado, for serving

Steps:

  • Rinse the squid under cool running water. Drain and transfer to a paper towel to dry completely. Cut the bodies into 1/2-inch rings and leave the tentacles whole. Pat dry again with paper towels.
  • Place a large skillet over high heat. Let the pan get very hot, for a good 5 minutes. Move the squid from the paper towels to a bowl, so that they don't stick before you add them to the pan. Add half the oil to the skillet. Sprinkle half the squid with salt, slide them into the pan along with half the chiles and cook without moving for 1 minute. Flip squid and stir in half the garlic; cook 1 to 2 minutes more, until squid is tender. Transfer to a plate. Repeat with remaining squid, garlic, chiles and oil. Make sure not to overcrowd the pan; if your skillet doesn't fit the squid comfortably, cook them in smaller batches.
  • Squeeze lime all over the squid and sprinkle with mint.
  • Top the crusty bread with sliced avocado if you like, and season avocado with salt and lime juice. Serve with the squid.
