2 ½ cups fresh corn kernels
1 tablespoon olive oil
¼ cup chopped onion
1 clove garlic, minced
1 pound zucchini, sliced
3 roma (plum) tomatoes, chopped
1 fresh poblano chile pepper - seeded, deveined, and chopped
salt and black pepper to taste
¼ cup crumbled cotija cheese

Steps:

  • Place the corn in a saucepan with enough water to cover; bring to a boil. Place a cover on the saucepan, reduce heat to medium, and cook until tender, about 10 minutes. Drain.
  • Heat the olive oil in a large skillet over medium-high heat; cook and stir the onion and garlic in the hot oil until fragrant, about 5 minutes. Mix the zucchini and tomato into the onion and garlic; cook together 5 minutes. Stir the corn kernels into the mixture; add the poblano pepper. Season with salt and pepper; stir. Cover the skillet with a lid and cook until the zucchini is tender, about 10 minutes. Sprinkle with the cotija cheese to serve.

6 medium zucchini, peeled and diced
1 can sweet corn, drained
1 medium onion, chopped
1 can Rotel Tomatoes (diced)
2 cloves garlic, finely chopped
4 tablespoons olive oil
1/2-1 lb colby-monterey jack cheese, shredded (or a little less, according to your taste)

Steps:

  • Place oil and chopped garlic in a large skillet, over medium heat.
  • Add zucchini and onion, cooking until onion is tender.
  • Add corn and tomatoes.
  • Cover skillet, and simmer over low heat 10-15 minutes, stirring occasionally.
  • When mixture is well heated, add cheese, mix and serve.

There are as many recipes for calabacitas as there are cooks. Here's how DH and I like it. We especially enjoy this in August when zucchini and corn are fresh from the garden. It is a versatile dish - the measurements are estimated. Use whatever fresh vegetables you have on hand...red peppers, grated carrots, jalapenos, diced tomato... For example, if I'm making it for my Yankee parents I omit the poblano and cilantro, and add parsley, resulting in a mild but tasty saute of summer vegetables. Have fun experimenting and enjoy!

1 tbsp olive oil
16 Roma tomatoes, quartered
1 medium onion, sliced
6 cloves garlic, peeled
2 tsp chili powder
2 tsp ground cumin

Enchiladas
1 tsp paprika
1 tsp chili powder
1 tsp ground cumin
1 tsp olive oil
4 boneless, skinless chicken breast halves (about 3 oz each), fat trimmed
4 medium (about 6-inch) whole-wheat flour tortillas
1/2 cup shredded cheddar
1/2 cup diced green chile (Anaheim chile, fresh or canned)
Calabacitas
1 tbsp plus 2 tsp canola oil
1 small zucchini, sliced 1/2 inch thick in half-moon shapes
1 small yellow squash, sliced 1/2 inch in half-moon shapes
1 Roma tomato, diced
1 small onion, diced
1/2 cup frozen or fresh corn
1 tsp chopped fresh oregano
1/2 tsp salt
1/2 tsp black pepper

Steps:

  • For sauce, preheat oven to 400°F. Lightly coat a baking sheet with oil. Place tomatoes, onion and garlic on baking sheet. Roast 15 minutes or until onion and garlic turn golden brown. While the vegetables are roasting, start preparing the enchiladas (see below). Remove vegetables from oven. Cool. Place in a blender along with chili powder, cumin, salt, and pepper and puree until smooth. Set aside.
  • For the enchiladas, combine paprika, cumin, and chili powder in a small bowl. Add oil and 2 tsp water and mix to form a paste. Pat all of spice paste on chicken. Grill or broil chicken 3 to 5 minutes on each side or until juices run clear when pierced with a fork. Cool and slice each breast into long strips (about 3/4 inches wide and 4 inches long). Lay tortillas on a flat surface. Place 3 chicken strips, 2 tbsp cheese, and 2 tbsp green chile on each tortilla. Roll and place in a 9" x 13" baking pan. Cover with sauce. Reduce oven heat to 350°F. Cook enchiladas 15 to 20 minutes or until sauce is bubbly.
  • While the enchiladas are cooking, prepare the calabacitas. Increase oven heat to 425°F. Lightly coat a sheet pan with 1 tbsp oil. Lay zucchini and yellow squash on sheet pan and roast 5 to 10 minutes or until golden brown. Lightly coat a sauté pan with 2 tsp oil. Add zucchini, squash, tomato, onion, and corn. Sauté over medium heat about 5 minutes. Add oregano, salt, and pepper. Serve with enchiladas.

1 small to medium yellow squash
1 large yellow skinned onion, chopped
1(14-ounce) can stewed tomatoes
2 teaspoons dark chili powder, just over 1/2 a palm full
Salt and pepper
1 (16-ounce) tubes prepared polenta
2 cups, 10 ounces, shredded Monterey Jack, available on the dairy aisle in pouches
3 scallions, chopped
2 tablespoons chopped cilantro leaves or flat-leaf parsley

Steps:

  • Preheat oven to 500 degrees F.
  • Heat a large skillet over medium high heat. Add remaining 2 tablespoons extra-virgin olive oil, corn, garlic and chiles. Saute 3 minutes, add zucchini and yellow squash and onions, season with salt and pepper, chili powder; cook 7 to 8 minutes. Add stewed tomatoes and heat through. Transfer to baking dish. Cut 1 tube of polenta in 1/2-inch slices lengthwise. Top vegetables with polenta and cheese. Place in hot oven to melt cheese and warm polenta, 8 to 10 minutes. 1 large onion, chopped
4 -6 garlic cloves, minced
4 small zucchini, diced
1 cup frozen corn, thawed
1 ripe tomatoes, chopped
1 -2 poblano chile, seeded and diced
1/2 teaspoon salt
1 1/2 cups queso fresco or 1 1/2 cups cheddar cheese, shredded

  • Heat oil or lard in skillet and cook onions until tender.

3 med size zucchini.
1 fresh corn.
1/3 c sweet onion (diced)
1 c fresh tomatoe (diced)
1/2 Tbsp salt
1/4 c cold water
1 c cheddar cheese or jack cheese, (shredded)

Steps:

  • 1. Wash and trim both ends of zucchini, and cut zucchini down the middle in a cross, and then slice across. Do not cut too thin or too thick.
  • 2. slice off kernels of corn from the cob.
  • 3. Place the above veg's in a med size skillet that has a fitting lid.
  • 4. Add the tomatoes and onions on top of veg's
  • 5. add salt.
  • 6. pour water over the top. cover and cook over med heat for approx. 15 min
  • 7. After 15 min, toss gently to mix ingredients and taste for salt.
  • 8. Lower heat to low, cover and simmer, and cook for add'l 5 to 7 min. till zucchini is tender. Turn off heat.

4 medium zucchini (1-lb.)
2 cups water
salt
2 tablespoons cilantro leaves
2 tablespoons butter
2 tablespoons onions, finely chopped
1 tablespoon all-purpose flour
1 (13 ounce) can evaporated milk
1 cup chicken broth
cilantro leaf (garnish)

Steps:

  • Wash zucchini. Cut off stem ends, then cut into large pieces. Place in a saucepan. Add water and a pinch of salt. Bring to a boil. Cover and cook until tender, about 20 minutes. Cool zucchini in cooking liquid.
  • Place zucchini, 1 cup cooking liquid and 2 Tablespoons cilantro in a blender; process until pureed.
  • Heat butter in a medium saucepan. Add onion. Cook until tender but not browned. Stir in flour. Cook 1 minute. Add pureed zucchini mixture, evaporated milk and chicken broth. Stir to blend. Season with salt if needed. Stir over medium heat until soup comes to a boil.
  • Serve at once or chill and serve cold. Garnish each serving with a few whole cilantro leaves.

2 tablespoons vegetable oil
1/4 medium onion, finely chopped
2 medium zucchini, chopped (not peeled)
2 garlic cloves, minced
1 (7 ounce) container frozen green chili peppers, BUENO Brand
3/4 cup frozen corn
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Heat oil over low heat in a non-stick skillet. Sauté onion in oil.
  • Add zucchini and cook over medium heat for 5 minutes, stirring occasionally.
  • Add garlic to green chile and add to zucchini mixture.
  • Cook for 3 minutes, stirring occasionally.
  • Add corn, salt and pepper.
  • Cover and cook over low heat for 8 minutes or until squash is tender.
  • Enjoy! ;).

I don't like squash, but I love this side dish! I take this to potlucks and I always gets compliments, and requests for the recipe!

4 yellow squash, sliced
1/4 cup butter
1 (15 ounce) can whole kernel corn, drained
1/2 cup thinly sliced onion
salt, to taste
pepper, to taste
1 (4 ounce) can chopped green chilies
1 cup milk
1/2 cup shredded cheddar cheese

Steps:

  • Saute squash in butter until tender.
  • Reduce heat and add corn, onions, salt, pepper, and green chilies.
  • Mix well and add milk.
  • Simmer until well blended.
  • Pour into a 1-quart casserole dish.
  • Top with cheese.
  • Cover and bake at 400F for 20 minutes.

I've also prepared this in my crock pot, add everything except the Velveeta and cilantro. Cook on low for 4-5 hours adding the Velveeta and cilantro during the last 30 minutes so it has a chance to melt. You can also substitute a can of Rotel tomatoes for the stewed tomatoes if you prefer it spicy.

1 tablespoon olive oil
1 small onion, chopped
2 garlic cloves, minced
1/2 teaspoon dried oregano
28 ounces chicken broth
1 (14 ounce) can Mexican-style tomatoes (I'm guessing at the size)
2 medium zucchini, sliced
2 medium yellow squash, sliced
1 (14 ounce) can corn (I'm guessing at the size)
1 (4 ounce) can diced green chilies
12 ounces Velveeta cheese, cubed
salt, to taste
pepper, to taste
cilantro, to taste

Steps:

  • Saute onion and garlic in 1 tablespoon olive oil.
  • Add oregano, chicken broth and tomatoes.
  • Cover and bring to a boil.
  • Stir in squash, corn and green chilies.
  • Return to boil and simmer till squash is tender.
  • Stir in Velveeta, salt, pepper and cilantro.
