Normally, I'm a pretty decent cook, but I've never been able to get pumpkin bread right. This recipe is fool-proof and so easy that my 11-year-old can make it!

1 (18.25 ounce) package spice cake mix
¾ cup white sugar
1 (15 ounce) can solid-pack pumpkin
2 eggs, beaten
¼ cup milk
½ cup mini chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan and 24 mini-muffin cups.
  • Stir cake mix and sugar together in a large bowl. Beat pumpkin, eggs, and milk with the cake mix mixture until you have a smooth batter. Stir chocolate chips through the batter.
  • Drop batter into prepared muffin cups with a small cookie scoop. Pour remaining batter into greased bread pan.
  • Bake muffins in preheated oven until tops of muffins are golden and spring back when lightly pressed, 12 to 14 minutes.
  • Bake bread in preheated oven until top is golden and springs back when lightly pressed, 55 to 60 minutes.

1 (16 ounce) can pumpkin (not pumpkin filling)
1 (510 g) box yellow cake mix (or carrot cake mix)
2 tablespoons canola oil
4 eggs
1/3 cup molasses
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/3 cup raisins (optional)
1/3 cup walnut pieces (optional)

Steps:

  • Lightly grease two 9x5 loaf pans.
  • Preheat oven to 350°F.
  • Beat eggs, then add all ingredients and mix well.
  • Pour into pan(s) and bake in oven until inserted toothpicks come out clean (50 to 65 min depending on oven).

I wanted something quick and easy to make that tasted like pumpkin spice. I found this recipe on the internet and it came together quickly and easily. Definitely hit the mark for pumpkin spice taste.

1 box spice cake mix, any brand
1 can(s) (15 oz) pumpkin puree (not pumpkin pie mix)
1/2-1 c semi-sweet chocolate chips
1/2-1 c chopped pecans (optional)

Steps:

  • 1. Preheat oven to 350^ and grease (or spray with cooking spray) a 9' x 5" loaf pan.
  • 2. In a large bowl, completely mix the box of cake mix and the can of pumpkin, making sure any lumps are broken up and blended in.
  • 3. Add 1/2 to 1 cup of semi-sweet chocolate chips and 1/2 to 1 cup chopped pecans (if using); blend well.
  • 4. Pour batter into prepared pan (top with additional chocolate chips, if desired) and bake for 50-60 minutes or until it tests done with a toothpick.
  • 5. When you remove loaf from oven, allow to sit in pan for around 5 minutes before removing from pan.
  • 6. NOTE: I used 1 cup of chocolate chips in the batter. I felt like there were too many. The chocolate flavor overpowered the pumpkin spice flavor. In the future I will only use 1/2 cup. Also, I sprinkled additional chips on top, but this makes it difficult to tip out of the pan without making a big chocolate mess on your counter top.

For variety these are some optional ingredients that can be added:
1 boxed cake mix (white or yellow)
1 (15-ounce) can of pumpkin (not pie filling)
Nuts, raisins, or cranberries
Pumpkin spice, cloves, and nutmeg
Chocolate Chips
Sour Cream

Steps:

  • Preheat oven to 350°F. Completely mix pumpkin and dry cake mix. Spoon batter into cupcake tins, filling them about 3/4 full. The batter is pretty dense and does not settle so if you care about how the final product looks, you may want to smooth the tops of each muffin before baking. I just use a spoon. Bake for 25 minutes. NOTES: For variety, these are some optional ingredients that can be added - nuts, raisins, cranberries, chocolate chips I also like to mix in about a half of a cup to a whole cup (I don't measure so this is a guess) of sour cream for a heavier finish. It also makes them especially moist. For more flavor, I usually sprinkle in pumpkin spice, clover, and nutmeg with a dash of my homemade vanilla. Can also be used to make small bread loaves, but you'll have to check for doneness because depending upon the size of pan they while need to bake longer.
