1 pound cooked crayfish tail meat
2 pounds cooked rice
2 large eggs
1 bunch chopped scallions
1 pound grated Parmesan
Hot pepper sauce
Garlic powder
Salt and freshly ground black pepper
Flour, for dredging
Vegetable oil, for sauteing

Steps:

  • Mix the crayfish, rice, eggs, scallions, cheese, hot pepper sauce, garlic powder, and salt and pepper together. Test seasoning by cooking a tablespoons-worth; adjust seasonings. Mold the correctly seasoned cakes into round or oval cakes. Lightly dust in flour and saute in vegetable oil until golden brown on both sides.

3/4 cup celery, chopped
1/3 cup bell pepper, chopped
1 cup onion, chopped
1 teaspoon garlic, minced
1 teaspoon creole seasoning
4 (15 ounce) cans whole kernel corn, drained
1 lb louisiana crawfish tail
2 1/2 cups white rice, cooked
salt, to taste
cayenne pepper, to taste
3/4 cup green onion, chopped, white parts only

Steps:

  • Melt butter over medium heat in a large, heavy bottomed Dutch oven.
  • Add celery, onion, bell pepper, garlic, and Creole seasoning. Saute for 10 minute.
  • Add corn and cook for 15 minute.
  • Add crawfish tails and cook for an additional 15 minute
  • Gently stir in cooked rice and mix thoroughly.
  • Remove from heat. Add salt and cayenne to taste. Finish with the chopped green onions.

3/4 cup mayonnaise
1/3 cup thousand island dressing
1/4 cup finely chopped parsley
2 teaspoons cajun seasoning
1 tablespoon fresh lemon juice
1 1/2 teaspoons fresh lime juice
1 lb frozen crawfish meat
3 eggs, divided
1/4 cup diced yellow bell pepper
1/4 cup diced red bell pepper
1/2 cup finely diced Spanish onions or 1/2 cup yellow onion
1/4 cup plus 1 cup all-purpose flour, divided
5 tablespoons italian-seasoned dry breadcrumbs
2 tablespoons cajun seasoning
2 tablespoons Dijon mustard
2 tablespoons finely chopped fresh cilantro
1 cup olive oil

Steps:

  • To prepare aioli: Whisk together mayonnaise, dressing, parsley, Cajun seasoning, lemon juice and lime juice. Cover and refrigerate until needed.
  • To prepare crawfish cakes: Thaw crawfish. Strain liquid from meat; set liquid aside in a medium bowl. Squeeze as much additional liquid from the crawfish meat as possible; add to the bowl. (You will need 2 tablespoons liquid.).
  • Beat 1 egg in a large bowl. Add crawfish meat, bell peppers, onion, 1/4 cup flour, bread crumbs, Cajun seasoning, mustard and cilantro; mix gently but thoroughly. Form into 8 cakes, each about 1 inch thick and 2 to 3 inches in diameter.
  • Divide the remaining 1 cup flour between 2 shallow bowls. Whisk together the remaining 2 eggs and 2 tablespoons liquid from the crawfish in a third bowl.
  • Coat both sides of each cake in flour, then in egg wash, then in flour from the second bowl.
  • Heat oil in a medium frying pan over medium-high heat. Add cakes to pan, working in batches if necessary; cook until golden brown on both sides, about 2 - 3 minutes per side.
  • Drizzle aioli over the crawfish cakes and serve.

The fish, shrimp, and scallops may be steamed, broiled, or placed in a saucepan with a bit of water and white wine, covered, and cooked slowly for about 10 minutes, until opaque and cooked through. You may substitute canned tuna or splurge with fresh crab in this recipe. If you prefer, make these cakes without shellfish. 1 lb idaho potato, peeled and cut into 2 inch dice
1/2 cup canola oil
1 tablespoon canola oil
1 large onion, minced
1 1/2 teaspoons garlic, minced (3 cloves)
1/4 cup celery, thinly sliced
2 teaspoons cajun spices
1 tablespoon dried Italian herb seasoning
1 lb fish fillet, assorted, cooked and flaked
1/4 lb shrimp, cooked (size ( small)
1/4 lb bay scallop (or 1/4 lb sea scallops,)
2 cups fresh parsley, chopped and divided
4 cups breadcrumbs, dried and divided
2 teaspoons salt (to taste)
1 teaspoon pepper, freshly ground
1/8 cup szechwan chili sauce
2 teaspoons lemon juice

Steps:

  • Cover the potatoes with cold water and bring to a boil. Simmer uncovered for 12 to 15 minutes, until tender. Drain and mash lightly with a fork or potato masher.
  • Preheat oven to 375°F In a nonstick pan, heat the 1 tbsp canola oil over medium heat. Saute the onion, garlic, celery, Cajun spices, and Italian herbs for 2 minutes, until lightly browned.
  • Place the fish along with the shrimp and scallops in a large bowl, add the onion mixture, cooked potatoes, 1 cup of the parsley, 1 cup of the bread crumbs, salt, pepper, Szechwan sauce, and lemon juice. Mix the remaining 3 cups bread crumbs and the remaining 1 cup parsley together in a shallow bowl.
  • Using an 8 oz scoop as a measure, form the mixture into 10 (1/2 inch thick) slightly flattened cakes. Dredge eash in the bread crumb mixture, gently pressing the crumbs onto the outside of the cakes.
  • Heat some of the remaining 1/2 cup canola oil in a large saute pan. Saute the cakes in the oil for 2 minutes and each side, until the cakes are golden brown. Be sure to change the oil in the pan if it gets too dark.
  • Place the browned seafood cakes on a sheet pan in the oven for 15 minutes, until the cakes are cooked through. Serve with Creole Remoulade sauce Recipe #373985.

1 1/2 tablespoons soy sauce
2 teaspoons toasted sesame oil, divided
2 garlic cloves, minced
2 teaspoons minced gingerroot
3 teaspoons Tabasco sauce
1/2 lb peeled crayfish tails or 1/2 lb shrimp
3 eggs
1 1/4 teaspoons salt, divided
3 tablespoons peanut oil, divided
1 small onion, quartered and thinly sliced
3 cups cold cooked rice
1 1/2 cups bean sprouts
3/4 cup frozen green pea
pepper

Steps:

  • In small bowl combine soy sauce, 1 tsp sesame oil, garlic, ginger, and 2 tsp Tabasco.
  • Mix well; stir in crawfish and set aside.
  • In another bowl beat eggs with 1/4 tsp salt, remaining sesame oil, and Tabasco.
  • Heat wok or large skillet until hot.
  • Add 1 tbsp oil and crawfish mixture.
  • Stir-fry 3-4 minutes or until crawfish are done.
  • Remove from wok and set aside.
  • Add another tbsp oil to wok; add onion.
  • Stir-fry 1-2 minutes and remove.
  • Heat remaining 1 tbsp oil in wok; add egg mixture.
  • Stir-fry 1 minute or until done.
  • Add cold rice and stir-fry 3-4 minutes.
  • Add everything to wok and cook 2 minutes longer.
