After some looking at different recipes, I thought I would experiment with making an Indian Tomato Soup, as I once had in a restaurant. This comes close. Warning! Indian Chili powder is much spicier than your ordinary store-bought.

2 tablespoons olive oil
1 onion, chopped
2 bay leaves
1 tablespoon all-purpose flour
1 tablespoon ginger-garlic paste
1 teaspoon garam masala
½ teaspoon ground turmeric
1 tablespoon Indian chili powder
½ cup water, or as needed
1 (28 ounce) can tomato puree
1 tablespoon white sugar
salt to taste
⅓ cup heavy cream or half-and-half

Steps:

  • Heat oil in a large saucepan over medium heat; stir in onions and bay leaves, and cook about 5 minutes until the onions begin to soften. Add flour, ginger-garlic paste, garam masala, turmeric, and Indian chili powder. Cook and stir until fragrant, about 1 minute.
  • Pour the water into the pan, and bring to a boil while scraping the browned bits of food off of the bottom with a wooden spoon. Pour in the tomato puree and thin with additional water to desired consistency. Add sugar and salt; cook until sugar is dissolved and soup is hot, about 5 minutes.
  • Remove bay leaves and serve with cream if desired.

200 g smoked sausage
2 tablespoons olive oil
1 onion, chopped
200 g smoked sausage
2 tablespoons olive oil
1 onion, chopped
2 garlic cloves, chopped
400 g diced tomatoes, from a can, undrained
1/2 teaspoon sugar
1/4 teaspoon sea salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried basil
1 tablespoon fresh parsley leaves, chopped
1/2 teaspoon cajun seasoning
200 g whole kernel corn, from a can, washed and drained
800 ml water
cajun seasoning
3 tablespoons sweet paprika
2 tablespoons sea salt
1 tablespoon ground black pepper
1 tablespoon white pepper
2 teaspoons cayenne pepper

Steps:

  • Split the sausage lengthwise into fourths and then slice. Heat the olive oil over medium high heat in a stockpot. Add the sausage to the pot and cook for 3 -4 minutes until lightly browned.
  • Add the onion and garlic and cook until tender.
  • Add diced tomatoes with their liquid, to the sausage mixture; add the sugar and bring to a boil. Boil for 3 minutes.
  • Add the salt, pepper, basil, parsley and Cajun seasoning; stir and add corn and water. Bring to a boil, reduce heat and simmer, uncovered, for 15 minutes.
  • Homemade Cajun seasoning:.
  • Mix all ingredients in a glass jar and store in the refrigerator. Shake the jar before using.

2 carrots, peeled and chopped
1 small onion, chopped
1 clove garlic, minced
1 (26-ounce) jar marinara sauce (recommended: San Marzano brand)
2 (14-ounce) cans chicken broth
1 (15-ounce) can cannellini beans, drained and rinsed
1/2 teaspoon red pepper flakes
1/2 cup pastina pasta (or any small pasta)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Warm the olive oil in a large soup pot over medium-high heat. Add the carrots, onion, and garlic and saute until soft, about 2 minutes. Add the jar of marinara sauce, chicken broth, cannellini beans, red pepper flakes, pasta, salt and pepper. Simmer for 10 minutes. Ladle into bowls and serve.

1/2 cup dry-packed sun-dried tomato
1 (8 ounce) package reduced-fat cream cheese
1/2 cup nonfat plain yogurt
1/4 cup chili sauce
1/4 cup chopped green pepper
1/4 cup chopped green onion
1 garlic clove, minced
1/2 teaspoon celery seed
1/8 teaspoon ground red pepper (cayenne)

Steps:

  • In small bowl, pour 1 cup boiling water over tomatoes.
  • let stand at room temperature 5-10 minutes.
  • Drain and chop tomatoes.
  • meanwhile, in another small bowl, combine cream cheese, yogurt and chili sauce.
  • mix well.
  • Add tomatoes and all remaining ingredients; mix well.
  • refrigerate till serving time.
  • Just before serving; stir dip.
  • serve with cut up fresh veggies or garlic flavored bagel crisps.

1 cup chopped onion
1 cup chopped green pepper
6 green onions, sliced
1/2 cup canola oil
1/2 cup all-purpose flour
3 cups water
2 packages (16 ounces each) frozen corn
1-1/2 pounds smoked sausage, cut into 1/4-inch pieces
3 cups cubed fully cooked ham
1 can (14-1/2 ounces) stewed tomatoes
2 cups chopped peeled tomatoes
1 can (6 ounces) tomato paste
1/8 teaspoon cayenne pepper or to taste
Salt to taste
Hot pepper sauce to taste

Steps:

  • In a Dutch oven, saute the onion, green pepper and green onions in oil for 5-6 minutes or until tender. Stir in flour and cook until bubbly. Gradually add water; bring to a boil. Add the corn, sausage, ham, tomatoes, tomato paste, cayenne, salt and pepper sauce., Reduce heat; simmer, uncovered, for 1 hour, stirring occasionally.
