2 tablespoons vegetable oil
1 onion, chopped fine
salt and pepper
1 tablespoon cajun seasoning
1/8 teaspoon cayenne pepper
1 lb ground beef, 85 percent lean
1 cup tomato puree
1/4 cup ketchup
4 hamburger buns

Steps:

  • Heat oil in 12-inch skillet over medium heat until shimmering. Add onion and ½ teaspoon salt, cover, and cook, stirring occasionally, until onion is soft, about 5 minutes. Add Cajun seasoning and cayenne and cook until fragrant, about 1 minute. Add meat and cook, breaking up pieces with spoon, until just pink, about 3 minutes.
  • Stir in tomato puree, ketchup, and ¼ teaspoon pepper. Simmer until sauce is slightly thicker than ketchup, 8 to 10 minutes. Season with salt and pepper to taste. Spoon meat onto hamburger buns and serve.

2 pounds ground sirloin
2 cups diced yellow onions
1 green bell pepper, diced
1 cup diced celery
2 tablespoons minced fresh garlic
2 (10.75 ounce) cans tomato purée
1/4 cup tomato paste
1/4 cup packed brown sugar 1/4 cup water
1 tablespoon Tabasco sauce
2 teaspoons kosher salt
2 teaspoons paprika
2 teaspoons dried oregano
2 teaspoons dried thyme
2 teaspoons freshly ground black pepper
2 loaves soft French bread, halved lengthwise, slightly hollowed, quartered, and toasted

Steps:

  • Brown sirloin in a sauté pan over medium-high heat until cooked through, crushing with a potato masher; drain all but 1 tablespoon drippings. Transfer chuck to a 4 - 6-quart slow cooker. Sauté onions, bell pepper, and celery in reserved drippings in same pan over medium heat until softened, 5-6 minutes. Add garlic and cook one minute more; transfer to slow cooker. Whisk together tomato purée, tomato paste, brown sugar, water, Tabasco, salt, paprika, oregano, thyme, and black pepper, then add to slow cooker. Cover slow cooker and cook sloppy Joes until flavors have blended on high-setting, 2 hours, or low-setting, 4 hours. Serve sloppy Joes on toasted French bread.

2 pounds ground beef
1 small white onion, diced
1 small green bell pepper, seeded and diced
1 (16 ounce) can tomato sauce
1 cup ketchup
1 tablespoon Worcestershire sauce
2 teaspoons prepared yellow mustard
2 teaspoons brown sugar
1 teaspoon Creole or Cajun Seasoning
1 teaspoon garlic powder
1 teaspoon crushed red pepper (adjust amount as needed)
½ teaspoon fresh ground pepper
8 Kaiser rolls or hamburger buns, toasted

Steps:

  • In a large skillet over medium heat, cook the ground beef, onions, and bell pepper until meat crumbles and no pink remains. Drain well and return skillet to heat.
  • Add tomato sauce, ketchup, Worcestershire, mustard, brown sugar, Creole seasoning, garlic powder, crushed red pepper, and fresh ground pepper. Stir well to combine and reduce heat to low. Simmer 20 minutes, stirring frequently.
