2 lbs fish fillets (of your choice)
1/2 cup all-purpose flour
1/2 cup milk
1 egg
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon oregano leaves
1/2 cup yellow cornmeal
1/2 cup vegetable oil

Steps:

  • in 9" pie pan stir together all ingredients except cornmeal, fish and oil.
  • on waxed paper place cornmeal, dip fish into batter, then coat both sides of fish with cornmeal.
  • in 10" skittle heat oil until hot.
  • place 3 or 4 fish fillets in hot oil.
  • cook over med heat until golden brown.
  • turn and continue cooking until golden brown and fish flakes with a fork.
  • repeat with remaining fish, place fried fish on paper towel to drain any excess oil.
  • Serve with potatoes or rice.

Adapted from Betty Crocker with minor changes. Not the typical Louisiana cornmeal fry batter, but pretty good. I've had great success with copycat Bisquick recipes from Zaar. Double the recipe for a batch of onion rings on the side. If desired, season the batter to taste with Old Bay or Cajun Seasoning blends in place of salt and pepper.

vegetable oil (for frying)
1 lb fish fillets (lightly seasoned) or 1 lb uncooked peeled deveined large shrimp, thawed if frozen (lightly seasoned)
3 -4 tablespoons original Bisquick baking mix (or cornstarch)
1 cup original Bisquick baking mix
1/2 cup beer
1 egg
1/2 teaspoon salt
black pepper or cayenne

Steps:

  • Heat oil (1 1/2 inches) in heavy saucepan or deep fryer to 350ºF.
  • Lightly coat fish with the 3 to 4 tablespoons Bisquick mix (or cornstarch).
  • Mix remaining ingredients with hand beater until smooth. (If batter is too thick, stir in additional beer, 1 tablespoon at a time, until desired consistency.)
  • Dip fish into batter, letting excess drip into bowl.
  • Fry fish about 2 minutes on each side or until golden brown; drain. Serve hot.

3 lb fish (any type, cut to your liking)
16 oz mr. pete's seasoned fish fry
16 oz beer (your choice)
cooking oil (peanut or vegetable)

Steps:

  • 1. In a large mixing bowl, pour the contents of the bag of Mr. Pete's Seasoned Fish Fry. With a large spoon, begin stirring the batter as you pour the can of beer into the bowl.   • 2. Clean fish and let soak in mix for 5 minutes. While waiting, heat the oil to 350 degrees. When oil reaches the correct temperature, place the fish in the cooking oil. Cook the fish until light golden brown. Cooking times depend on the type of fish and cuts of filets. Throughout the cooking process, make sure to monitor the temperature. Serve hot. Optional: Garnish with leaf lettuce and lemons. Serve with tartar sauce or ketchup.

8 - bass fillets or any kind of white fish like cod, haddock,, etc..
1 cup(s) flour
1 cup(s) yellow cornmeal
1 tablespoon(s) baking powder
2 teaspoon(s) salt
1 1/2 tablespoon(s) cajun seasoning
12 ounce(s) amber beer
- oil for deep frying
SAUCE
1/2 cup(s) miracle whip
2 tablespoon(s) creole brown mustard
2 tablespoon(s) honey
1 teaspoon(s) worcestershire sauce
- salt and pepper to taste

Steps:

  • Mix the flour, cornmeal, baking soda, salt, cajun seasoning and beer together.
  • Dredge the fillets in the beer mixture and deep fry at 350 degrees until golden brown about 4 minutes.
  • Mix the ingredients for sauce together and serve with fish.

1/2 cup cornstarch
1-1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon Creole seasoning
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1 cup all-purpose flour, divided
1/2 cup 2% milk
1/3 cup beer or nonalcoholic beer
2 cups crushed unsalted top saltines (about 40)
4 cod fillets (6 ounces each)
Oil for deep-fat frying

Steps:

  • In a shallow bowl, combine the cornstarch, baking powder, salt, Creole seasoning, paprika, cayenne and 1/2 cup flour. Stir in milk and beer until smooth. Place crackers and remaining flour in separate shallow bowls. Coat fillets with flour, then dip in batter and coat with crackers., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry fish in batches for 2-3 minutes on each side or until golden brown. Drain on paper towels.
