1 pound chicken, cut into bite-sized pieces
½ teaspoon kosher salt
freshly ground black pepper to taste
4 tablespoons extra-virgin olive oil
14 ounces smoked sausage, sliced on the diagonal
4 cloves garlic, minced
2 cups low-sodium chicken broth
1 ¼ cups heavy cream
2 cups dried penne pasta
1 ½ tablespoons Cajun seasoning, plus more to taste
½ cup freshly shredded Parmesan cheese
1 tablespoon minced Italian flat-leaf parsley

Steps:

  • Season chicken with salt and pepper. Heat olive oil in a large, covered cooking pot over medium-high heat. Brown chicken in the hot oil, 5 to 7 minutes.
  • Add sausage to the pot and continue to cook until lightly browned, about 5 minutes more. Stir in garlic and cook for about 2 minutes. Add chicken broth, heavy cream, pasta, and Cajun seasoning. Stir together and bring to a simmer over medium-high heat, about 5 minutes.
  • Reduce heat to low, cover the pot, and cook until pasta is tender, 15 to 20 minutes.
  • Remove the pot from heat and stir in Parmesan cheese. Stir in chopped parsley and sprinkle with additional Cajun seasoning if desired.

1 skinless, boneless chicken breast half
½ teaspoon Cajun seasoning, or to taste
1 link pork sausage with jalapeno pepper
4 ounces farfalle (bow tie) pasta
2 tablespoons butter
1 green bell pepper, chopped
½ red bell pepper, chopped
½ onion, chopped
1 clove garlic, chopped
1 ½ cups fat-free half-and-half, divided
1 tablespoon cornstarch, or as needed
1 pinch Cajun seasoning, or to taste
1 pinch dried basil, or to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Sprinkle both sides of chicken breast with 1/2 teaspoon Cajun seasoning, or to taste.
  • Grill chicken breast and pork sausage on the preheated grill until browned and no longer pink inside, about 5 minutes per side. Transfer to a plate and let rest for 5 minutes. Cut chicken and sausage into bite-size pieces.
  • Bring a large pot of lightly salted water to a boil. Cook the farfalle pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain.
  • Melt butter in a large skillet over medium heat. Cook and stir green bell pepper, red bell pepper, onion, and garlic in hot butter until slightly softened, 2 to 3 minutes. Stir chicken and sausage pieces into vegetables, reduce heat to medium-low, and pour 1 cup half-and-half into skillet. Stir to combine.

1 lb smoked andouille sausage, sliced into bite size pieces
2 -3 teaspoons cajun seasoning
2 tablespoons butter, unsalted
2 cups half-and-half
1/4 cup sun-dried tomato, seeded and sliced
1/2 red bell pepper, seeded, sliced into 1/4 inch wide strips
1/2 green pepper, seeded, sliced into 1/4 inch wide strips
1/2 medium red onion, sliced into 1/4 inch strips
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground
1/4 dried basil
2 garlic cloves, crushed, peeled and minced

Steps:

  • Place chicken pieces in a medium bowl, sprinkle the cajun seasoning over and toss to coat.
  • In a large, deep skillet sauté the garlic in the butter for about two minutes. Add chicken and andouille pieces. Sauté for about 4 minutes.
  • Add the red and green peppers to the skillet. Cook for about 2 minutes, then add the red onion.

2 Tbsp olive oil
1/2 lb boneless skinless chicken breast
8 oz hot or mild sausage links, casing removed.
1 medium onion, chopped
2 stick celery, chopped
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1/2 tsp dried thyme
1/4 tsp oregano, dried
1/4 tsp paprika
1/2 tsp salt
1/4-1/2 tsp cayenne pepper (optional)
1/2 tsp cajun seasoning (optional)
1 c rigatoni pasta, cooked
1 can(s) 14 oz diced tomatoes with juice
1 can(s) 16 oz tomato sauce
8 oz medium shrimp peeled and cut in half
2 Tbsp fresh chopped parsley

  • 1. Cook pasta per directions on box, set aside.
  • 2. In large Dutch oven, brown chicken and sausage in hot oil. Remove and drain.

blackened seasoning---mix together the following and store in a empty spice container
2 tsp salt
2 tsp oregano
2 tsp thyme
1 tsp black pepper

CREAMY CAJUN SPINACH INGREDIENTS
4-5 boneless skinless chicken breasts
8 oz angel hair or linguine, cooke al dente
2 Tbsp butter
1 bunch green onions sliced thin
1/2 c chopped red pepper
3 c thinly sliced fresh spinach leaves
1/3 c sundried tomatoes, chopped
1 c milk, 2%
1 can(s) cream of chicken soup
2 c whipping cream
1/4 tsp salt
1/2 tsp dried basil
1/4 tsp black pepper
1/2 tsp garlic powder
1 tsp blackened seasoning from above
2 tsp adobe sauce from canned chipotle pepper, i always have these in the refrigerator for different recipes just store in a plastic container after opening lasts like salsa
1/2 c parmesan cheese
oil for frying chicken

Steps:

  • 1. heat oil in pan (I prefer cast iron) sprinkle all sides of chicken (I coat quite heavily), fry chicken in hot oil approimately 4-5 minutes per side until cooked through. remove from pan and allow to cool. when cool slice diagonally or into whatever size pieces you want. set aside
  • 2. in a large pan over medium heat, melt butter, saute green onions (I save about a 1/4 cup out for garnish), red pepper, spinach, and sundried tomatoes until just turning tender.
  • 3. reduce heat add milk, cream,chicken soup,salt, basil, black and white pepper, garlic powder, blackened seasoning, adobe sauce and chicken. heat through and stir in parmesan to cheese to thicken. (if this is not thick enough you can thicken with a small amount of cornstarch dissolved in small amount of water)
  • 4. pour over hot pasta and garnish with grated parmesan cheese and green onions. ENJOY

1 teaspoon cajun seasoning (to taste)
1/3 cup light cream
1 teaspoon cornflour, more if needed

  • Cook pasta according to directions.
  • Dice chicken and remove all fat.
  • Spray a small frypan with non stick spray and cook chicken until brown.
  • Add cajun spice and cook for a couple minutes. You could also add the spice at the beginning of cooking the chicken.

8 ounces whole wheat linguine or 8 ounces fettuccine
1 lb chicken breast, strips
3 teaspoons cajun seasoning, divided
1 teaspoon olive oil
1 small red pepper, thinly sliced
1 small green pepper, thinly sliced
1 (8 ounce) package fresh mushrooms, sliced
4 green onions, chopped and divided
1/2 teaspoon lemon pepper
1/4 teaspoon dried basil

Steps:

  • Cook the pasta in a large amount of boiling water until al dente; drain and set aside.
  • Sprinkle the chicken with 2 t of the Cajun seasoning and mix until coated evenly.
  • Spray a large nonstick skillet with nonstick cooking spray and heat over medium-high heat.
  • Add the chicken to the hot pan and cook for 2 minutes without stirring.
  • When the chicken is lightly browned on one side, stir it to cook the other side (leaving it to cook without stirring helps to keep it from sticking).
  • Cook for about 5 more minutes, or until no longer pink inside.
  • Remove from the pan and keep warm.
  • Spray the pan again with the nonstick cooking spray and add the olive oil.

This is so delicious and rather fast, even though the cook time says it takes about an hour. All time really is chopping and prep work. The cooking goes quick after you get all that done. It is great for using up fresh veggies in your drawer that need to go or if you have some serious cravings like me, a quick fix for that. Delicious with any kind of pasta, I like angel hair.

1 lb angel hair pasta
1 lb chicken breast, cut into bite-sized pieces
2 tablespoons cajun seasoning
1 tablespoon oil
1 large onion, sliced
1 large green bell pepper, sliced
8 ounces fresh mushrooms, sliced

1/4 cup heavy cream
2 medium tomatoes, chopped (sub. 1 can diced tomatoes, drained if no fresh tomatoes)
1 cup fresh basil leaf, chopped

Steps:

  • Cook the spaghetti as per instructions.
  • Meanwhile, in a large non-stick skillet, fry the chicken seasoned with the Cajun seasoning in 1 tbsp of the oil just until done, stirring frequently. Place in a bowl and set aside.
  • In the same skillet, heat the remaining oil and add the onion and pepper; cook covered, about 8-10 minutes until browned. Stir occasionally.
  • Add the mushrooms and salt, cooking 5 minutes covered. Stir occasionally.
  • When the spaghetti is done, turn it off but leave in the water. When the mushrooms are done, drain the spaghetti and reserve 1/2 cup of the water. Place the noodles, water, and the cream back into the saucepan and bring to a boil over medium heat. Stir in the onion mixture from the skillet. Heat through and remove from heat. Add the chicken with it's juices, the tomatoes and the basil leaves. Toss to mix well.

5 Tbsp. flour, divided
1/2 tsp. ground red pepper (cayenne)

2 Tbsp. oil, divided
1-1/2 cups chopped green bell peppers
3/4 cup chopped onions
1 Tbsp. chopped jalapeño peppers

1-1/4 cups fat-free reduced-sodium chicken broth
2/3 cup milk
1-1/2 tsp. LEA & PERRINS Worcestershire Sauce

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, mix 2 Tbsp. flour, red pepper and black pepper in bowl. Add chicken; toss to coat. Heat 1 Tbsp. oil in large skillet on medium heat. Add chicken; cook and stir 6 to 8 min. or until done. Remove from skillet.

10 oz. cooked fettuccine (cooked al dente)
1 cup Spicy Cajun Pasta Sauce (recipe follows)
1 boneless chicken breast, cooked and sliced in strips
1 tablespoon Parmesan cheese
1 teaspoon chopped parsley
Spicy Cajun Pasta Sauce:
2 oz. olive oil
1 tablespoon fresh chopped garlic
1/2 cup coarsely chopped onion
1/2 cup coarsely chopped green peppers
1/2 cup coarsely chopped red peppers
1/8 teaspoon cayenne pepper
1 cup chicken stock
1 cup V-8 juice
cornstarch (mix about a table spoon with a couple tablespoons cold water to form a slurry)
salt and pepper, to taste

Steps:

  • Prepare sauce: Heat oil in saute pan; add garlic; saute for 30 seconds; add onions and saute for 1 minute; add peppers and continue to saute for another minute. Deglaze with chicken stock and reduce to half. Add V-8 juice and cayenne pepper; bring to boil; simmer 10 minutes.
  • Thicken to consistency with cornstarch; season to taste with salt and pepper.
  • Add cooked pasta to sauce and heat through until hot.
  • Arrange on serving dish and top with chicken breast. Sprinkle with Parmesan and parsley.
  • Makes 4 Servings
