I threw this together one night when I was craving a Cajun chicken pasta dish I used to make. I've missed it since going low-carb. This dish was a perfect substitute! Great texture and a very, very mild vegetable flavor. Mostly just Cajun yumminess! Adjust the spices to your taste.

1 teaspoon chili powder
1 teaspoon dried thyme
1 teaspoon smoked paprika
1 teaspoon dried oregano
½ teaspoon ground cayenne pepper
½ teaspoon ground cumin
½ teaspoon onion powder
1 teaspoon salt
2 tablespoons butter
1 small onion, sliced
3 cloves garlic, minced
1 small head cabbage, finely shredded

Steps:

  • Combine chili powder, thyme, smoked paprika, oregano, cayenne pepper, cumin, onion powder, and salt in a bowl.
  • Melt butter in a large skillet over medium heat; cook and stir onion in hot butter until translucent, about 5 minutes. Add garlic and cook until soft, about 2 minutes; stir shredded cabbage into onion and garlic. Cook and stir cabbage mixture until cabbage starts to soften, about 5 more minutes.
  • Stir spices into cabbage mixture and cook, stirring often, until spices are evenly mixed in and cabbage is tender, 3 more minutes.

This easy skillet dinner comes together quickly, making it a perfect option for a weeknight. We used spicy andouille sausages to give the dish a little kick, but any type of sausage would work. Cooking at medium-high heat allows the sausage and vegetables to get nice and caramelized in a short amount of time, but if they ever start to overcook, stir in a splash of cold water to cool the pan down.

2 tablespoons canola oil
8 ounces chicken andouille sausages, sliced diagonally 1/4-inch thick (about 1 heaping cup)
1 small yellow onion, thinly sliced (about 2 scant cups)
Kosher salt
1/2 small head green cabbage, cored, halved crosswise and sliced 1/4-inch thick (about 6 cups)
1/4 teaspoon crushed red pepper
2 cloves garlic, minced
3 tablespoons apple cider vinegar
1 tablespoon unsalted butter
1/2 small sweet-tart apple such as Gala or McIntosh, cored and sliced 1/8-inch thick (about 3/4 cup)
1 large scallion, thinly sliced (about 1/4 cup)
Hot sauce, for serving

Steps:

  • Heat a large cast-iron skillet or high-sided saute pan over medium-high heat. Add the oil and swirl the pan to coat evenly. Add the sausage slices in a single layer and cook until browned on the first side, about 2 minutes. Flip and cook until browned on the second side, about 2 minutes. Use a slotted spoon to remove the sausage slices to a bowl and set aside.
  • Add the onion, a splash of water and large pinch salt to the pan and cook over medium-high heat, using a wooden spoon or heatproof rubber spatula to scrape up any browned bits from the bottom of the pan. Cook, stirring occasionally, until the onion is lightly browned in spots and starting to get tender, 5 to 7 minutes. Add the cabbage, crushed red pepper and another pinch salt and cook until cabbage is crisp-tender, 6 to 8 minutes, stirring occasionally. If the pan seems dry at any point, stir in another splash of water.
  • Add the garlic and cider vinegar and cook until the vinegar is mostly evaporated, about 1 minute, stirring constantly. Stir in the butter until melted, then return the sausage to the pan along with the apple and cook until the apple slices are just tender, 3 to 4 minutes, stirring occasionally.
  • Sprinkle with the scallion and serve immediately with hot sauce alongside.

1 can(s) rorel tomatoes
1 c chopped onion
1 can(s) diced tomatoes

10 slices of bacon, cooked and crumbled
1 c water
2 Tbsp sugar
1 tsp Accent seasoning
1 tsp whole celery seed

6-8 Tbsp butter cut into tablespoons
2 can(s) diced tomatoes (reduced sodium can be used)
1/2 c long grain rice
1 pkg smoked sausage (kielbasa)
1 large cabbage
1/4-1/2 tsp cajun seasoning
1 c chopped onions
1/2 c green bell pepper, chopped
1-2 tsp diced garlic

Steps:

  • 1. Important: For this recipe there is no need to cook the meat and do NOT add water. The rice will cook in the juices from the vegetables.
  • 2. Slice smoked sausage. Cut up cabbage into quarter to half inch strips or pieces. Layer all ingredients in a large rice cooker. While doing this separate the ground round into clumps and layer throughout. You may have to make two batches. Make sure each ingredient is in the rice cooker before cooking. Turn on the rice cooker. Cook until rice cooker stops cooking - when you hear the 'click.' Unplug rice cooker and stir the pot. For serving you can put the cabbage casserole in a casserole dish.

1/2 tablespoon of bacon drippings or butter
1 cup of chopped onion
1/4 cup of chopped green bell pepper
1 stalk (rib) of celery, chopped
2 teaspoons of chopped garlic
1/2 pound of ground pork or beef
1/2 pound of of mild andouille or other spicy smoked sausage
6 cups of water
3 teaspoons of chicken or beef bouillon or base (like Better Than Bouillon)
1 (10 ounce) can of diced tomatoes with green chilies (like Rotel), undrained
1 medium head of cabbage, halved, cored and sliced
1 large carrot, scraped and diced
1 large potato, peeled and diced
Splash of apple cider vinegar
1/2 teaspoon of dried basil
1 teaspoon of dried parsley
Kosher salt and freshly cracked black pepper, to taste
1/4 to 1/2 teaspoon of Cajun seasoning, or to taste

Steps:

  • Saute the onion, bell pepper and celery in the bacon drippings or butter until softened; add the garlic and cook another minute. Add the garlic, ground beef and andouille sausage; cook until ground beef is browned. Drain off any excess fat that has accumulated. Add the water, bouillon and Rotel, bring to a boil, reduce heat to simmer, cover partially and let simmer at a low bubble for 1 hour. Stir in the cabbage, carrot, potato, vinegar and seasonings. Cover and continue to simmer another 25 to 30 minutes, or until cabbage and vegetables reach the desired level of tenderness. Taste and adjust seasonings as needed before serving. May serve as is, or over cooked rice. Cook's Notes: When using ground pork, I prefer chicken base and beef base with ground beef. Andouille sausage is a highly spiced smoked sausage that is blended with Cajun spices, adding a spicy kick and great flavor to these dishes. If you substitute kielbasa or other smoked sausages in recipes where it calls for Andouille, it will affect the outcome of your dish and you'll need to make adjustments in the seasonings you use. 1 garlic clove, minced
1 tablespoon cajun seasoning
1 teaspoon fresh cracked black pepper

3/4 cup chicken broth

Steps:

  • 1. Heat oil in Dutch oven, add garlic, and cook for 2 minutes over medium heat.
  • 2. Meanwhile, chop boiled cabbage into bite sized pieces.
  • 3. Mix seasonings with cabbage in a large bowl. Add cabbage mixture to Dutch oven and cook for about a minute.

1 Tbsp of Margarine
1/2 lb of Ham - Chopped or Shredded
1 Bag of Potatoes - Squared
2 Heads of Cabbage - Finely Chopped
2 Cups of Chicken Stock
1/4 Cup of Cilantro - Chopped
1/8 Cup of Green Onion - Chopped
1/8 Cup of Carrots - Chopped Fine
1 Tsp of Salt
1 Tsp of Pepper
David's Creole Seasoning

Steps:

  • Chop Onion, Garlic and Ham Using a Dutch Oven...add Olive Oil and Butter, browning Onion, Garlic and Ham. While Browning Process has begun chop Cabbage and peel Potatoes (Squares). Add Cabbage and Potatoes to the mix and add about 2 Cups of Chicken Stock. Add Salt, Pepper, Cilantro, Carrots, Green Onions and Seasoning...not too much Seasoning, adding Chicken Stock to gain the flavor. Sautee that and every once in a while slowly keep adding stock. DON'T OVERFLOW WITH STOCK. The key is Sautee it a little at a time and while not boiling.
