EASY SPICY BAKED CAJUN SHRIMP

Whenever I make this for friends I usually triple the recipe, everyone fights over the last shrimp lol! Serve this with a long crusty baguette and lemon wedges. Plan ahead the shrimp needs to marinate for 1 hour. recipe#186029 works great for this!

1 cup olive oil
3 tablespoons creole seasoning (try The Best Creole/Cajun Seasoning Mix for this)
1/4 cup lemon juice
1/4 cup chopped fresh parsley
2 tablespoons honey
2 tablespoons soy sauce
1 pinch cayenne pepper (optional)
salt (use only if you Cajun seasoning does not have salt in it)
2 lbs large raw shrimp, shelled and deveined

Steps:

  • Butter a 13 x 9-inch baking dish.
  • In a bowl combine the oil, Cajun seasoning, lemon juice, parsley, honey and soy sauce.
  • Pour over the shrimp and toss to coat; cover and chill for 1 hour.
  • Set oven to 450°F.
  • Bake the shrimp in the sauce/marinade for about 10 minutes, or until the shrimp are cooked through.
  • Serve with lemon wedges and crusty bread.

Plan ahead the shrimp needs to marinade for about 1 hour. I have also made this same recipe using jumbo shrimp grilled on skewers, this is an amazing recipe for shrimp! To save time peel the shrimp a day ahead.

3 lbs medium tiger shrimp, peeled and deveined
1/4 cup melted butter
2 tablespoons Worcestershire sauce
2 tablespoons fresh lemon juice
2 teaspoons Old Bay Seasoning
2 teaspoons black pepper
2 tablespoons minced fresh garlic (or to taste)
2 -3 teaspoons cajun seasoning
2 teaspoons hot sauce

Steps:

  • Combine the uncooked shrimp with all remaining ingredients.
  • Place in a buttered shallow baking dish; toss to coat.
  • Chill for 1 hour.
  • Bake at 350 degrees for about 15 minutes, stirring occasionally or until the shrimp are pink and completely cooked.

SUNNY'S CAJUN BAKED SHRIMP AND GRITS

1 stick salted butter, at room temperature
1 tablespoon seafood seasoning, such as Old Bay
2 scallions (white and green parts), finely chopped
1 large clove garlic, grated on a rasp
Grated zest of 1 lemon
2 pounds frozen shelled and deveined jumbo shrimp, defrosted and roughly chopped
1 cup heavy cream
Kosher salt and coarsely ground black pepper
Kosher salt and coarsely ground black pepper
3/4 cup quick grits
1 cup shredded smoked Gouda
Lemon wedges, for serving

Steps:

  • For the compound butter and shrimp. In a medium bowl, add the butter, seafood seasoning, scallions, garlic and lemon zest and mash together until combined. Scrape the mixture into plastic wrap and make into a log, or cover it in the bowl. Refrigerate at least 30 minutes.
  • Preheat the oven to 400 degrees F.
  • Divide the shrimp into 2 foil packets, top each with 2 thick slices of the compound butter, fold up and bake for 8 to 10 minutes.
  • For the grits. In a large pot on medium-high heat, add the heavy cream, a pinch of salt, a few grinds of black pepper and 2 cups water. Bring to a gentle boil, then add the grits and cook, stirring, until thickened, about 5 minutes. Stir in the cheese.
  • Serve the grits in a bowl topped with a tablespoon or so of the compound butter and the shrimp. Serve with lemon wedges for squeezing.

3 pounds uncooked large shrimp, unpeeled
3/4 cup (1 1/2 sticks) butter
1 1/2 cups bottled Italian dressing
1/2 cup fresh lemon juice
1/2 cup chopped fresh mint
2 tablespoons Worcestershire sauce
1 tablespoon hot pepper sauce
4 bay leaves, crumbled
2 teaspoons ground black pepper
1 teaspoon salt

Steps:

  • Place shrimp in 13x9x2-inch glass baking dish. Melt butter in medium saucepan over medium heat. Whisk in Italian dressing, lemon juice, mint, Worcestershire sauce, hot sauce, bay leaves, pepper, and salt. Cool sauce to room temperature; mix into shrimp. Refrigerate at least 1 hour and up to 3 hours, tossing occasionally.
  • Preheat oven to 450°F. Bake shrimp until just opaque in center, about 15 minutes, and serve.

This is an easy and quick recipe for a midweek meal. The flavor is spicy but yummy. I use Emeril's Creole seasonings for the cajun spices. I love to serve this over rice and with a green vegetable or salad.

1 1/2 lbs shrimp, peeled and deveined
1/3 cup olive oil
1/8 cup butter, melted
2 tablespoons soy sauce
2 tablespoons honey
2 tablespoons cajun seasoning
2 tablespoons lemon juice
2 tablespoons parsley, minced
1/4 teaspoon thyme
lemon wedge, as garnish

Steps:

  • In a bowl combine olive oil, butter, soy sauce, honey, cajun seasonings, lemon juice, thyme and parsley. Mix together well. Set sauce aside.
  • Lay out shrimp, in single layer, in greased baking dish. Pour sauce over top of shrimp and turn shrimp to coat well. (you can do this up to 2 hours in advance).

Look for shrimp that has been deveined to save prep time. I like to completely shell the shrimp but you could leave tails on if you like. This is a nice blend of spicy, tangy and sweet. This increases in heat as leftovers!

1/2 cup E.V.O.O.
1 T. Old Bay Seasoning
1 t. jerk seasoning
1/2 t. creole seasoning
1/4 t. black pepper
2 T. Worchestershire sauce
1 T. honey
2 minced garlic cloves
juice of 1/2 lemon
2 lb. peeled/deveined 20 - 25 count shrimp

Steps:

  • Mix all ingredients in large zip-lock bag then add shrimp. Marinate overnight. Bake at 350 degrees until shrimp are pink and opaque, approximately 15 minutes. Serve atop couscous with crusty bread.
