A caffe latte (a coffee drink made with frothed milk and espresso) is traditionally enjoyed in the morning in Italy -- but it makes a wonderful afternoon pick-me-up, too.

- Using the steam attachment on an espresso machine, warm and froth milk. Divide espresso between 2 coffee cups. Pour 1 cup of the warmed milk from beneath the froth into each cup. Spoon milk foam on top and serve.

ICE CAFFE LATTE

- Combine the espresso, flavored simple syrup, and milk in a small pitcher. Fill each of the mason jars with crushed ice. Pour the latte mixture over the ice and serve immediately.
- In a saucepan combine water, sugar, and cinnamon sticks over medium heat. Bring to a boil, reduce heat and simmer for 5 minutes, until the sugar has dissolved. Take the pan off the heat and cool the syrup. Any extra cooled syrup can be saved in an airtight container in the refrigerator.
CAFFE LATTE GELATO
Gelato is an Italian form of ice cream with very little air beaten in, which makes it extremely rich. This recipe requires an ice cream maker.

- Combine milk and ground coffee in a medium saucepan and bring to a low simmer.
- Cook for 20 minutes.
- After 20 minutes, remove the milk from the heat and let stand for 30 minutes (you can also refrigerate it overnight).
- Strain the milk through a fine-meshed strainer.
- Heat until bubbling, then cover to keep hot and remove from heat.
- Blend sugar and egg yolks in a blender or food processor until thick and smooth.
- Gradually add the hot milk until the mixture is combined.
- Pour the mixture into a saucepan and cook over medium heat until the mixture thickens and will coat the back of a spoon (about 6-8 minutes; be sure to stir constantly).
- Remove the pan from heat and place in a bowl of ice water; stir until mixture is cool (about 2 minutes).
- Cover and refrigerate until the mixture is completely cool (probably at least 2 hours).
- Whip the cream until soft peaks form and fold into cooled custard mixture.
- Freeze in an ice-cream maker; for a silky texture, you should use less salt and a slower churning speed (fast, cold churning can make a gelato coarse).
- Serve with whipped cream and chocolate-covered coffee beans for garnish.

- Take everything you need out of the fridge to bring to room temperature. Preheat the oven to 180°C
- Butter and line a 23cm springform tin with baking parchment.
- Melt the dark chocolate and butter and set aside to cool slightly.
- Beat the eggs, sugar and vanilla together until thick, pale and fluffy - about 7 minutes. They should have at least doubled in volume, even tripled.
- Gently fold the flour and espresso powder, taking care not to lose the air you have created, and finally add the melted chocolate and butter, folding gently again.
- Pour into the prepared tin and cook for 35-40 minutes, by which time the top of the cake should be firm, and the underneath a bit gooey.
- Let the cake to cool completely on a wire rack before releasing from the tin.
- For the cream, melt the white chocolate, and let it cool. Fold in the cream and espresso powder, whipping the latte cream together to thicken it a little.
- Sit the sprung cake on a plate, fill the middle sunken crater with the latte cream and dust with a little cocoa powder.

SIMPLE CAFFE LATTE (CAFE QUALITY AT HOME!)
Make a fancy coffee house beverage from your own home. No special equipment required. I learned to make my own coffee house espresso beverages at home and save money. I use a french press (also known as a plunger pot or "Bodum" pot) to brew the coffee. It is the next best brew to Espresso. You can also of course use an espresso machine if you have one, or use strong freshly brewed coffee (preferably double strength at least). The lower-end espresso machines are really not worth the money, they don't work that well. I have one and use the french press instead!
