STUFFED CABBAGE CUPS

This fresh and faster take on classic steamed cabbage rolls takes half the time but does not sacrifice on flavor. It's also a cinch to prepare, with no fussy filling and rolling each cabbage leaf before cooking. Instead, the sauteed filling is simply scooped into boiled cabbage leaves and topped with a creamy tomato sauce before serving. It's a meaty, hearty and completely satisfying meal for a busy weeknight.

1 tablespoon extra-virgin olive oil
1 small yellow onion, diced
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
One 28-ounce can crushed tomatoes
2 tablespoons light brown sugar
1 teaspoon Worcestershire sauce
1/4 cup sour cream
8 Savoy cabbage leaves
1 tablespoon extra-virgin olive oil
1 medium yellow onion, diced
1 clove garlic, minced
1 small green bell pepper, diced
1 stalk celery, diced
1 teaspoon paprika
4 ounces ground beef
4 ounces ground pork
1 cup cooked rice (any kind)
1/2 cup fresh parsley, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • For the sauce: Heat the olive oil in a medium saucepan over medium-high heat. Add the onion and cook until translucent, stirring occasionally, about 5 minutes. Add the garlic, 1 teaspoon salt and a few grinds of black pepper and cook, stirring, until fragrant, about 1 minute. Add the crushed tomatoes, brown sugar and Worcestershire and bring to a boil. Reduce heat to low and simmer until thickened, about 15 minutes.
  • For the cabbage cups: Meanwhile, add the cabbage leaves to the pot of boiling salted water and cook until softened, about 2 minutes. Remove with tongs and place in a colander. Rinse under cold water, then drain and pat dry.
  • Heat the olive oil in a large saute pan over medium-high heat. Add the onion, garlic, green pepper, celery and 1 teaspoon salt and cook, stirring occasionally, until softened, 4 to 5 minutes. Sprinkle with the paprika and cook, stirring, until fragrant, about 1 minute. Add the beef and pork and cook, stirring and breaking it apart with a wooden spoon, until no longer pink, about 7 minutes. Add the cooked rice and stir to combine and warm through, about 2 minutes. Stir in the parsley.
  • Finish the sauce by stirring in the sour cream until fully incorporated. To serve, divide the beef mixture among the cabbage leaves and top each with some sauce.

This is a family tradition for holidays. It is delicious and goes well with any meats.

1- 3 oz. pkg orange gelatin, can use sugarfree
1- 3 oz. pkg lemon gelatin, can use sugarfree
1/2 small head of cabbage, grated fine --or--
1 small bag(s) coleslaw mix, grated fine in a food processor
1 can(s) crushed pineapple, drained but save juice
1 large carrot, grated fine

Steps:

  • 1. Mix the dry jello flavors together. Add 2 cups of boiling water and stir until completely dissolved, about 2 minutes.
  • 2. Pour pineapple juice into a measuring cup and add cold water to measure 1 1/2 cups (since you are adding veggies, the liquid is reduced). Add this to the jello and stir to mix. Put into the refrigerator to slightly thicken to the consistency of egg whites.
  • 3. Stir in the cabbage, carrots and pineapple and mix thoroughly. Chill until set. If made in a pan, cut into squares and serve.

LIME JELLO CABBAGE SALAD

This Jello salad is a tradition in our family to serve with ham or pork. It has shredded cabbage and carrots in it which give it a nice crunch. My Mom always served it when I was a kid and she can't remember where she got the recipe from. My kids love it. You can make with with regular or sugar free jello.

1 (3 ounce) box lime Jell-O gelatin (or Sugar Free)
1 cup water
1 cup water, with leftover pineapple juice
1 cup cabbage, shredded very fine
1/2 cup carrot, grated
1 cup crushed pineapple in juice, drain and save juice

Steps:

  • Shred cabbage in food processor to be very fine and to equal 1 cup. Grate carrots to equal 1/2 cup. Add both to an 8 x 8 square dish.
  • Drain crushed pineapple, reserving liquid in a measuring cup. Add ice to the juice so it will equal exactly one cup. Set aside.
  • In a small pan on low heat, heat one cup water. Add jello to dissolve and turn off heat. Add the pineapple juice/ice to the pan and stir until ice melts.
  • Pour jello mixture into the 8 x 8 dish with the cabbage, carrots and pineapple. Refrigerate for 2 hours unti firm.
  • Cut into 9 square servings and and enjoy!

1 medium carrot, peeled and julienned
2 cups shredded green cabbage
1 cup shredded red cabbage

pepper
2 teaspoons peeled and grated ginger
Juice of 1 large lime

Steps:

  • Put the cucumber, carrot and cabbage in a large bowl. Season with salt and pepper and toss well.
  • Add the ginger and lime juice, then toss again. Let the vegetables marinate for at least 10 minutes.

1 package (3 ounces) lemon gelatin
1/2 cup boiling water
1 medium cucumber, peeled and diced
4 green onions, chopped
1 cup 4% cottage cheese
1/2 cup mayonnaise

Steps:

  • In a bowl, dissolve gelatin in boiling water. Add the cucumber and onions. Stir in cottage cheese and mayonnaise until blended. Pour into two 1-1/2-cup molds coated with cooking spray. Refrigerate overnight or until set. Unmold just before serving.
