CABBAGE WITH TOMATOES, BULGUR AND CHICKPEAS
This recipe is based on a Greek dish made with red cabbage. I've used both green and red cabbage, and I like it both ways. It's a comforting vegan dish that works as an entree or a side.

Steps:
- Heat the olive oil over medium heat in a large, heavy lidded skillet or Dutch oven. Add the onion, and cook, stirring often, until tender, about five minutes. Stir in a pinch of salt and the paprika. Cook, stirring, until the onion is thoroughly tender and infused with paprika, three to four minutes.
- Add the cabbage, and cook, stirring, for three minutes or until it begins to wilt. Stir in the tomatoes, sugar and vinegar, and add salt to taste. Bring to a simmer, lower the heat, cover and simmer 15 minutes until the cabbage is thoroughly tender.
- Stir in the dill and the water, and bring a to a boil. Add the bulgur and chickpeas. Stir to combine. When the water comes back to a boil, reduce the heat to low and cover. Simmer 10 minutes or until all of the water has been absorbed. Remove from the heat, taste and adjust seasonings, and serve hot or at room temperature.

Steps:
- Put cabbage and tomatoes in saucepan, and bring to boil.
- Reduce heat and simmer, covered, for about 10 minutes.
- Add salt, pepper, and caraway seed, and simmer for 5 minutes.
- Cream butter with flour, and stir into vegetable mixture.
- Cook, stirring, until thickened.
- Makes 4 servings.

Steps:
- Heat oil in a large saucepan.
- Cook onions 5 minutes, at medium heat, until lightly golden.
- Add ground beef and keep cooking 8 to 10 minutes, while breaking it with a fork, until no more pink.
- Add cabbage and keep cooking 4 to 5 minutes.
- Add tomatoes, tomato juice, soy sauce, oregano, basil, italian seasoning and tabasco. Add pepper to taste.
- Keep cooking 10 minutes, stirring from time to time, until the cabbage is cooked. (I let mine cook maybe 30 minutes, maybe it all depends on the size of the cabbage).
GARLIC-OLIVE OIL BAKED CHICKEN W/ TOMATOES, CABBAGE AND BEANS
Make the marinade in the morning, leave the chicken soaking all day and when you get home all you have to do is a quick chop, assemble and bake. I made this up in one of my "clean out" weeks. I used bone, skin-on chicken breasts and the skin came out so crispy. I never measure so these are my best estimate, feel free to adjust. Prep time does not including marinating time.

- For Marinade.
- In a glass bowl or casserole large enough to hold the chicken mix together olive oil, white wine vinegar, lemon zest, juice from 1/2 the lemon, garlic,oregano and red pepper flakes. Add chicken and coat well. Marinate all day or overnight.
- To Bake.
- If you are using the same casserole dish that you marinated it in to bake it remove chicken and set aside, leaving marinade. Place onions, then cabbage in casserole. Pour stewed tomatoes and beans over and mix well. Try to cover all the cabbge with liquid.
- Place chicken on top of vegetable-bean mixture. Bake at 450 degrees for approximatley 1 hour 15 minutes or until juices run clear.
- Serve with crusty peasant bread and a Caesar salad.

SIMMERED CABBAGE AND TOMATOES
A meatless cabbage skillet dish. This works in the crockpot, too. Just put everything in the crockpot at once EXCEPT the cream cheese and cook on low 6-8 hours or high for about 3 hours. Stir the cream cheese in when done.

- In a large, deep skillet, melt the butter over medium heat. Saute onions in the butter for about 5 minutes or until softening.
- To the skillet, add the crushed tomatoes, vinegar, sugar, garlic, salt, pepper, oregano and clery seeds; stir well and bring to just a soft boil.
- Place chopped cabbage on top (the skillet will be full, but the cabbage will wilt down); reduce heat to medium-low, cover tightly and simmer for 15 minutes.
- Remove lid and stir. Replace lid and simmer for an additional 20-25 minutes, (stirring once halfway through) or until desired tenderness is reached. If it appears to drying, just add a little water/broth.
- Turn off heat. Stir in the cream cheese; heat through and serve.
- ***For Crockpot: Put everthing in the crockpot EXCEPT the cream cheese. Cook on low for 6-8 hours or high for about 3 hours (depends on how tender you like your cabbage). When done, stir in the cream cheese.

I found this in "The Fresh Fruit & Vegetable Cook Book". Well I had some fresh cabbage and fresh tomatoes I needed to use up, found this recipe to try. Wow was it good. It was even better the next day. I didn't have any marjoram on hand so I omitted it. It still tasted great and don't think I'll use next time either.

- Wash the cabbage and cut into quarters. Discard the core and shred coarsely. Cook in water for about 8 minutes, until tender then drain.
- Heat oil in saucepan. Add onion and saute until transparent.
- Blend in flour, salt, pepper, marjoram and stir until thickened, adding tomatoes last.
- Place 1/3 of tomato mixture in casserole. Add1 part cabbage, repeat.
- Cover with cracker crumbs and grated cheese.

- Trim the fat from under the skin around the duck legs. Combine the salt, pepper and rosemary. Sprinkle the mixture on the legs and let them marinate at room temperature for two hours.
- Preheat oven to 350 degrees. Heat a cast iron casserole and place the duck legs skin side down. Cook slowly for 20 minutes, until the legs are evenly browned. Pour the excess fat off as you cook.
- Remove the legs from the pan and leave in one tablespoon duck fat. Add the onion and cook until soft. Add the cabbage, balsamic vinegar, pepper to taste and cook until the cabbage is wilted. Place the cabbage in a baking dish and put the duck legs on top. Spread the tomatoes over the top, cover and bake for one-and-a-half hours or until the duck legs are tender.
