9 cups cubed day-old white bread (about 8 slices)
1/2 cup chopped pecans
1/2 cup butterscotch chips
4 large eggs
2 cups half-and-half cream
1/2 cup packed brown sugar
1/2 cup butter, melted
1 teaspoon vanilla extract
Whipped cream and butterscotch ice cream topping

Steps:

  • Place bread, pecans and butterscotch chips in a greased 4-qt. slow cooker. In a large bowl, whisk eggs, cream, brown sugar, melted butter and vanilla until blended. Pour over bread mixture; stir gently to combine., Cook, covered, on low until a knife inserted in center comes out clean, 3-4 hours. Serve warm with whipped cream and butterscotch topping.

Butterscotch sauce:
1 cup (packed) light brown sugar
1/2 cup light corn syrup
3 tablespoons unsalted butter
1 1/2 teaspoons kosher salt
1/2 cup heavy cream
1 tablespoon bourbon (optional)
Pudding:
1 pound day-old rustic white bread, crusts removed, cut into 1/2" cubes (12 cups)
1/2 cup (1 stick) unsalted butter, melted
2 tablespoons plus 1 1/2 cups sugar
5 large eggs
4 cups heavy cream
1 1/2 tablespoons poppy seeds
Pinch of kosher salt
3 tablespoons bourbon
1/2 vanilla bean, split lengthwise
2 cups pecan pieces

Steps:

  • For butterscotch sauce:
  • Bring brown sugar, corn syrup, butter, and salt to a boil in a medium saucepan over medium-high heat, whisking to dissolve sugar. Boil until mixture is syrupy and measures 1 1/3 cups, about 3 minutes. Remove from heat; add cream and bourbon, if desired, and stir until smooth. Let cool. DO AHEAD: Can be made 3 days ahead. Let cool completely, cover, and chill. Rewarm before serving.
  • For pudding:
  • Toss bread, melted butter, and 2 tablespoons sugar in a large bowl and set aside. Using an electric mixer, beat eggs and remaining 1 1/2 cups sugar in another large bowl until pale yellow and fluffy, about 3 minutes. Add cream, poppy seeds, and salt; beat to blend. Place bourbon in a small bowl; scrape in seeds from vanilla bean (reserve bean for another use). Whisk to distribute seeds, then add to egg mixture, whisking to blend well. Pour egg mixture over bread mixture in bowl. Add pecans and toss to coat well. Transfer mixture to a 13x9x2" glass or ceramic baking dish, spreading out in an even layer. Cover with plastic wrap and chill overnight.
  • Preheat oven to 325°F. Remove plastic wrap and bake until top is browned in spots and a tester inserted into center comes out clean, 1 1/4-1 1/2 hours. Serve bread pudding with butterscotch sauce.

1/2 cup butter, softened
1/2 cup sugar
3 eggs
3 teaspoons vanilla extract
2 cups all-purpose flour
1 package (3.4 ounces) instant butterscotch pudding mix
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1-1/2 cups chopped pecans

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs and vanilla; mix well. Combine the flour, pudding mix, baking powder and salt; add to creamed mixture alternately with milk. Fold in pecans., Transfer to a greased 9x5-in. loaf pan. Bake at 350° for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

8 cups Rhodes™ Bread or Rolls, baked and cut into 1-inch cubes
12 ounces butterscotch morsels, divided
1/2 cup chopped pecans
2 cups milk, divided
3 tablespoons sugar
3 large eggs
1 teaspoon vanilla

Steps:

  • Spread bread or roll cubes, 2/3 cup butterscotch morsels and pecans in the bottom of a sprayed 9x13-inch baking pan. In a heavy saucepan, cook 1 cup milk over medium heat, stirring often, 3 to 5 minutes (do not boil). Remove from heat and add remaining butterscotch morsels, stirring until melted. Add sugar, stirring until dissolved. In a medium bowl, combine remaining 1 cup milk, eggs and vanilla. Gradually stir about 1/4 of hot butterscotch mixture into egg mixture. Add egg mixture to remaining hot butterscotch mixture stirring constantly. Pour over bread cubes in baking pan. Press bread cubes down to absorb mixture. Bake at 350°F 30-35 minutes. Serve warm with vanilla ice cream, if desired.

From Generations of Recipes, I'm not sure how butterscotch-y this would turn out but it still looks utterly delicious. Could probably also make in a bread machine using the quickbread cycle.

1 egg
1 cup brown sugar
1 tablespoon butter, melted
2 cups all-purpose flour, sifted
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1/2 cup pecans, chopped

Steps:

  • Lazy way: put everything into a bread machine according to manufacturer's directions, and use the Quickbread cycle! (Mine works quite well.).
  • Real way: Beat the egg. Add the sugar gradually, continually beating.
  • Add the butter and blend.
  • Add the dry ingreidents alternately with the buttermilk, and blend well until mixed.
  • Add the nuts.
  • Pour into a buttered loaf pan (book recommends 8 1/2 x 2 3/4, I think 9 x 4 would work too) and bake at 350F for 35-40 minutes.
