2 cups half-and-half
1/2 cup packed dark brown sugar
3 tablespoons cornstarch
Pinch salt
2 large egg yolks
1 tablespoon butter
2 teaspoons vanilla

Steps:

  • Whisk together the half-and-half, brown sugar, cornstarch, salt and egg yolks in a medium saucepan. Heat, stirring, until thick, about 2 minutes. Remove from the heat and stir in the butter and vanilla. Let cool. Store covered.

3 tablespoons butter
1 1/2 cups brown sugar
3/4 cup boiling water
3 egg yolks
1 1/2 cups milk
6 tablespoons flour
3/8 teaspoon salt

Steps:

  • Melt butter.
  • Add sugar and allow to brown.
  • Gradually add water.
  • Beat egg yolks.
  • Add a small of measured milk and flour.
  • Stir until smooth.
  • Add rest of milk and salt. Mix.
  • Pour this slowly into the sugar mix and cook until thick.
  • Cool.

½ cup packed brown sugar
¼ cup cornstarch
¼ teaspoon salt
½ cup water
1 tablespoon butter

Steps:

  • Mix together the brown sugar, corn starch, salt, and water in a small saucepan. Bring mixture to a boil, and stir constantly for 1 minute. Remove from heat, and add the butter or margarine.
  • Allow the mixture to cool slightly, and spread between layers.
