125 g flour
1/4 teaspoon salt
125 g caster sugar
3 teaspoons baking powder
90 g butter or 90 g margarine
1 egg
1 banana
1 1/4 teaspoons vanilla extract
140 g brown sugar
1/4 cup golden syrup
250 g boiling water

Steps:

  • PREHEAT oven to 180 C/ 350°F.
  • COMBINE brown sugar, golden syrup and boiling water in a put; bring to a boil for about 2- 3 minutes; set aside.
  • SIFT flour, sugar, baking powder and salt into a bowl.
  • ADD beaten egg, melted butter, vanilla extra and mashed banana.
  • POUR combined mixture (Steps 3 and 4)into greased casserole dish (use 3.5 Litre pyrex). THEN very slowly, pour brown sugar/golden syrup over what is in the casserole dish.
  • Bake uncovered 30-40 minutes.
  • ENJOY!
  • Can serve with you favourite ice cream!

Oh my, this is good! Imagine the best of bread pudding combined with the best of Bananas Foster!

BREAD PUDDING:
7 c chopped potato bread
2/3 c chopped macadamia nuts
1/2 c shredded coconut
1/2 c butterscotch chips
4 eggs
1 (12 oz.) can evaporated milk
1 (14 oz.) can sweetened condensed milk
2 Tbsp light brown sugar
1 tsp vanilla extract
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
1/4 tsp salt
2 Tbsp butter, cut into small pieces
SALTED BUTTERSCOTCH SAUCE
1/2 c butter
1/2 c light brown sugar
1/4 c light corn syrup
1/2 c heavy cream
1/4 tsp kosher salt
CARAMELIZED BANANAS:
3 Tbsp butter, divided (as needed)
3 Tbsp light brown sugar, divided (as needed)
4 bananas (not too ripe), peeled, sliced
1 vanilla ice cream, if desired

Steps:

  • 1. To make bread pudding: Preheat oven to 350 F. Spray a 13x9 pan with nonstick cooking spray. Set aside. In a large bowl, toss together bread, nuts, coconut, and butter scotch chips. Spread on pan. In a medium bowl, whisk together eggs, evaporated milk, condensed milk, light brown sugar, vanilla extract, nutmeg, cinnamon, and salt. Pour over bread mixture in baking dish, making sure bread is completely soaked in egg mixture. Cover; let sit 30 minutes. Dot with small pieces of butter. Bake, uncovered, 45-55 minutes or until top is crisp and golden brown.
  • 2. To make butterscotch sauce: In a medium saucepan, over medium heat, melt butter. Stir in light brown sugar, and corn syrup. Bring to a simmer. Cook, stirring, until thick, syrupy and golden in color, about 10 minutes. Remove from heat; stir in cream and kosher salt. Cover to keep warm.
  • 3. To make caramelized bananas: In a large, nonstick skillet, over medium high heat, melt 2 tablespoons butter and 2 tablespoons light brown sugar. Once butter-sugar mixture becomes bubbly, add bananas. Cook, flipping once, about 2-3 minutes per side, or until caramelized on both sides. Remove to a plate. (May need to work in batches to avoid overcrowding bananas. If so, add 1 tablespoon butter and 1 tablespoon light brown sugar to skillet before adding second batch of bananas.)
  • 4. To serve, top bread pudding with bananas and spoon butterscotch sauce over top. Serve immediately. If desired (to make this an even more decadent dessert), serve with vanilla ice cream.

GRILLED BANANA BUTTERSCOTCH TOFFEE PUDDING

One 3.4-ounce box instant butterscotch pudding
One 14-ounce can sweetened condensed milk
3 cups heavy whipping cream
4 bananas, peel on, stems cut off and sliced in half lengthwise
1 tablespoon unsalted butter, melted
One 11-ounce box vanilla wafers
Two 1 1/2- to 2-ounce toffee bars, such as Butterfinger or Heath, crushed

Steps:

  • Combine the butterscotch pudding mix, condensed milk and 1 1/2 cups water in a bowl and use an electric mixer to mix well. Refrigerate until set up according to the package directions.
  • Whip the cream in another bowl until soft peaks form. Gently fold half of the whipped cream into the set pudding. Fold in the second half until it's light and fluffy, taking care not to overmix. Refrigerate until ready to assemble the banana pudding.
  • Preheat an outdoor grill or a grill pan to medium-high heat.
  • Brush the cut side of each banana with the melted butter. Grill, cut-side down, until grill marks appear, about 2 minutes. Flip and let cook an additional 30 seconds to 1 minute. Remove from the grill and let cool until cool enough to touch. Peel, then slice 1/4-inch-thick.
  • Line the bottom of a 9-by-13-inch baking dish with a layer of vanilla wafers. Layer on half of the butterscotch pudding, then half of the bananas, then a light sprinkle of crushed toffee bar. Repeat the layers, for a total of 2 layers. Refrigerate 4 hours or up to overnight before serving.

1 tablespoon baking powder
1/2 cup superfine sugar
1 egg, beaten
1 banana, mashed
1 cup milk
1 teaspoon vanilla extract
6 tablespoons butter, melted
1/2 cup soft brown sugar
2 tablespoons corn syrup
2/3 cup boiling water
vanilla ice cream or softly whipped cream

Steps:

  • Preheat the oven to 350°F.
  • Sift the flour and baking and powder into a bowl. Add the sugar. Mix together the mashed banana, milk, butter, egg and vanilla extract. Pour into the dry ingredients and mix until well combined. Pour into a greased 9 inch pie dish and place on a baking sheet.

1 9" Uncooked Pie Shell
3/4 cup Brown Sugar
1/2 cup All-Purpose Flour
1 pinch Salt
3 cups Whole Milk
4 whole Egg Yolks, Whisked
2 tablespoons Butter
2 teaspoons Vanilla
3-4 whole Medium Bananas Sliced
Toffee Walnuts (see recipe below)
Lightly Sweetened Whip Cream
Toffee Walnuts
INGREDIENTS:
1 1/2 cups Walnuts
1/4 cup Brown Sugar
1/4 cup Granulated Sugar
1 tablespoon Water
2 tablespoons Butter
1/2 teaspoon Pure Vanilla Extract
INSTRUCTIONS:
Line a cookie sheet with parchment or silpat. Set aside.
In a medium-small sized saucepan attach a candy thermometer. Add walnuts, both sugar, and water. Stir until well combined. Add butter.
Cook over medium heat, stirring constantly, until mixture reaches 285-290 degrees, being careful not to burn. Remove from heat and stir in vanilla. If butter separates continue to stir until recombined.
Working quickly spread nuts on lined baking sheet. Use 2 forks to separate nuts. Allow to cool until hardened.

Steps:

  • Preheat oven to 450 degrees. Roll pie dough, and place into a 9" pie pan. Crimp edge, and use a fork to prick the bottom, and sides of the pie crust. Line with foil, pressing foil against the bottom, and sides of the crust, all the way to the crimp edge. Do not cover edge. Roll any excess foil inwards, to leave edge exposed. Bake for approximately 10 minutes until the crust is set and no longer dough like. Remove foil, and bake another 6-10 minutes, until crust is golden brown, watch carefully. Allow to cool.
  • In a medium-large sized saucepan whisk together brown sugar, flour, and pinch of salt. Slowly whisk in milk to prevent lumps.
  • Bring to a simmer over medium heat stirring constantly. Cook until thickened. Remove from heat.
  • Whisk in 1/2 cup at a time pudding mixture into egg yolks until 2 cups of pudding mixture has been added. Whisk egg yolk mixture back into pudding. Return to a simmer, and cook stirring constantly until thick like pudding.
  • Remove from heat, whisk in butter, and vanilla.
  • Place a thin layer of butterscotch pudding on bottom of pie crust. Cover with a single layer of bananas, then a thin layer of pudding. Repeat until 3 layers of bananas have been added. Then cover with remaining pudding.
  • Cover and refrigerate for 6 hours or overnight.
  • Slice pie, serve with lightly sweetened whip cream, and toffee walnuts.
