2 cups frozen peas
1 pound baby carrots (or 4 large carrots)
2 tablespoons finely chopped white onion (or shallots)
4 tablespoons butter
1/2 cup water (or chicken stock )
1 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Heat butter in sauté pan over medium heat. Use a pan that has a lid so you can cover it for the final cooking step.
  • When the butter foams, add finely chopped onion.
  • Cook and stir for 2 minutes.
  • Add carrots and cook until they are tender.
  • Add frozen peas and stir to coat them well.
  • Add water or chicken stock, salt, and pepper.
  • Cover and cook for 6 to 8 minutes or until the peas are cooked through.

1 large onion, chopped
1/4 cup water

Steps:

  • In a 3-qt. slow cooker, combine the first 9 ingredients. Cook, covered, on low 5 hours. Stir in peas. Cook, covered, on high 15-25 minutes longer or until vegetables are tender.

8 ounces sugar snap peas, stringed
1 teaspoon butter
1/3 cup canned low-salt chicken broth
1/2 teaspoon cornstarch

Steps:

  • Cook carrots in large saucepan of boiling salted water 2 minutes. Add peas; cook until carrots and peas are crisp-tender, about 2 minutes longer. Drain. (Can be made 1 day ahead. Cover and chill.)
  • Melt butter in skillet over medium heat. Add vegetables; sauté to coat. Mix broth and cornstarch in small bowl add to skillet. Sauté until vegetables are heated through and liquid thickens, about 1 minute. Season with salt and pepper.
