6 tablespoons unsalted butter
¾ cup light brown sugar, lightly packed
1 teaspoon kosher salt
water, as needed
1 cup unsalted butter
4 ice cubes
¾ cup granulated sugar
1 ½ cups dark brown sugar, packed
2 teaspoons espresso powder
2 teaspoons kosher salt
½ teaspoon baking soda
2 large eggs
2 teaspoons vanilla extract
2 ½ cups all purpose flour
6 oz cacao chocolate, 50-70% cacao, chopped
flaky sea salt, for sprinkling

Steps:

  • Make the toffee: Line a baking sheet with parchment paper.
  • In a medium nonstick saucepan over medium heat, melt the butter, brown sugar, and salt, stirring until evenly incorporated. If there are grainy lumps or if the fat starts to separate, add a couple splashes of water and stir vigorously to emulsify. Continue to cook, stirring constantly, until the mixture reaches 290°F (143°C), about 10-15 minutes.
  • Pour the toffee onto the prepared baking sheet and spread out slightly with a spatula. Freeze until ready to use, about 30 minutes.
  • Make the cookie dough: Add the butter to a medium nonstick saucepan over medium-high heat. Cook, stirring occasionally, until the butter turns dark brown and smells nutty. Watch carefully so the butter does not burn. Remove the pot from the heat.
  • Add an ice cube to the butter and slowly let it melt. It may froth and bubble. Add the remaining 3 ice cubes and gently stir until melted.
  • In a large bowl, combine the granulated and brown sugar, espresso powder, salt, and baking soda.
  • Pour the brown butter into the sugar mixture and mix until combined. Don't worry if it looks separated.
  • In a small bowl, whisk together the eggs and vanilla. Pour into the sugar and butter mixture and whisk until glossy and smooth.
  • Add the flour and fold with a rubber spatula to incorporate until the dough has no visible flour streaks.
  • Remove the toffee from the freezer (it should be a frozen disc) and break it into chunks that will fit inside a gallon zip-top bag. Double bag the toffee and seal both bags. With a rolling pin, break the toffee into small pieces.
  • Fold the crushed toffee and chopped chocolate into the dough until evenly distributed.
  • Using a large ice cream scoop or a ½ cup (65 g) measure, scoop the dough onto a parchment-lined baking sheet. Wrap the baking sheet in plastic wrap, but leave a small opening at the corner of the tray. Let the dough rest in the refrigerator for at least 36 hours. This will allow the flavor to develop and the dough to dry out a little as it rests, which will result in less spread when it bakes.
  • When ready to bake, preheat the oven to 325°F (163°C). Line 2 baking sheet with parchment paper.
  • Arrange the cookies on the baking sheets, leaving at least 2 inches (5 cm) of space between the cookies and away from the edges of the pan.
  • Bake until the cookies are golden brown with crispy edges, but are still slightly soft in the center, 18-20 minutes.
  • Immediately sprinkle the cookies with flaky sea salt. then let cool completely. The cookies will be very soft at first but will set after they are fully cooled.

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda

3/4 cup honey roasted crunchy peanut butter (or you can use the Honey Roasted Creamy Peanut Butter, doesn't matter)

Steps:

  • In a mini food processor or blender, process 1 cup oats until ground fine.
  • Mix together ground oats, remaining 1/2 cup whole oats, flour, baking powder, baking soda and salt.
  • In a Kitchen Aide mixer (or whatever you have) beat together the softened butter and both sugars until light and fluffy.
  • Add in eggs, one at a time, the vanilla and peanut butter.

Steps:

  • Make the cookies: In a food processor, process the toffee bits, sugar, baking soda and salt until the toffee is mostly ground and the mixture is sandy, about 1 minute.
  • Transfer the toffee mixture to the bowl of a stand mixer (or a large bowl if using a hand mixer). Add butter, egg white and vanilla. Mix together with the paddle attachment on medium until creamy and fluffy, stopping once to scrape the bowl and paddle, about 2 minutes.   • Once the cookies are cool, make the icing: Set a piping bag in a tall and narrow container, like a deli quart container, and fold over the top edge to secure. Flip over the cookies without almonds. (You need to pipe the icing onto the cookies immediately after mixing, so make sure you are set up.)
  • In a small saucepan over medium heat, melt butter until foamy, about 3 minutes. Continue cooking butter, stirring and scraping frequently with a stiff silicone spatula, until the sputtering has subsided and the butter solids look deeply browned, 3 to 5 minutes. Scrape the butter and any brown bits into the bowl of a stand mixer (or into a large bowl if mixing by hand).
  • Stir in the vanilla and salt. Sift over the powdered sugar. With the paddle attachment, mix on low until creamy and combined, about 1 minute, stopping once during mixing to scrape the bowl and the paddle. (You can also mix with a stiff silicone spatula until creamy and combined.)
  • Transfer the icing to the piping bag and cut a 1-inch wide opening at the tip. Pipe a scant tablespoon of filling onto a flipped cookie and immediately top with an almond-topped cookie. Gently press to adhere so that the filling reaches the edges of the cookie. Repeat with remaining cookies and icing. Store cookies in an airtight container at room temperature for up to 1 month.

2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1-1/2 sticks unsalted butter, softened
3/4 cup peanut butter
3/4 cup brown sugar, packed
3/4 cup granulated sugar
2 large eggs, lightly beaten
1 teaspoon vanilla
5 ounces peanut butter chips
5 ounces butterscotch chips
5 ounces toffee pieces
5 ounces chopped honey roasted peanuts

Steps:

  • Preheat oven to 350 degrees F and line baking sheets with parchment paper. Combine the flour, baking soda and powder, salt and sift together; set aside. With an electric mixer on high, whip the butter and peanut butter together until well combined and fluffy. Reduce mixer speed to low and add in the sugars. Increase the speed and whip until sugars are dissolved and mixture is airy. Add in the eggs one at a time and then the vanilla. Blend until well combined. With mixer on low, add in the flour mixture. Remove bowl from mixer and stir the peanut butter chips, the butterscotch chips, the toffee pieces and chopped honey roasted peanuts.
  • Let the dough rest for a half hour before scooping out onto the prepared baking sheets. Form into 1/2 inch balls and place 2 inches apart on the sheets. Dip a fork into some sugar and make criss-cross marks on each ball, flattening them a bit.
  • Bake cookies for 8 to 10 minutes or until golden brown. Let them cool on sheets slightly before moving them to a wire rack to cool completely.

1 cups Unsalted Butter (2 sticks)
2 cup All-purpose flour
1 teaspoon Baking soda
3/4 teaspoon Kosher salt
1 cup Brown Sugar, Dark (packed)
1/3 cup Sugar, granulated
2 l Eggs, room temperature
2 teaspoons Vanilla extract
2 bunches Toffee chocolate bar (preferably Skor), chopped into 1/4" pieces
1 1/2 cups chocolate wafers (disks, pistoles, fèves; preferably 72% cacao)
1 dash Flaky sea salt

Steps:

  • Cook butter in a medium saucepan over medium heat, stirring often, until it foams, then browns, 5-8 minutes. Scrape into a large bowl and let cool slightly.
  • Meanwhile, whisk flour, baking soda, and kosher salt in a medium bowl.
  • Add brown sugar and granulated sugar to browned butter. Using an electric mixer on medium speed, beat until incorporated, about 1 minute. Add eggs and vanilla and beat until mixture lightens and begins to thicken, about 30 seconds. Reduce mixer speed to low; add dry ingredients and beat just to combine. Mix in toffee pieces and chocolate wafers with a wooden spoon or a rubber spatula. Let dough sit at room temperature at least 30 minutes to allow the flour to hydrate. Dough will look very loose at first, but will thicken as it sits.
  • Place a rack in middle of oven; preheat to 375°. Using a 1½-oz. ice cream scoop, portion out 10 balls of dough and place on a parchment-lined baking sheet, spacing about 3" apart (you can also form dough into ping pong-sized balls with your hands). Do not flatten; cookies will spread as they bake. Sprinkle with sea salt.
  • Bake cookies until edges are golden brown and firm but centers are still soft, 9-11 minutes. Let cool on baking sheets 10 minutes, then transfer to a wire rack and let cool completely. Repeat with remaining dough and a fresh parchment-lined baking sheet to make 10 more cookies.
  • Do Ahead: Cookie dough can be made 3 days ahead; cover and chill. Let dough come to room temperature before baking.

Steps:

  • 1. Add oatmeal to a large bowl, dollop peanut butter on top, do not stir.
  • 2. Add all other ingredients except vanilla to a medium sauce pan on medium heat, stir frequently, bring to a boil and let boil for 1_1/2 minutes, remove from heat and add vanilla.
  • 3. Pour over the peanut butter and stir to combine.

FLOURLESS PEANUT BUTTER CHOCOLATE TOFFEE COOKIES



Flourless Peanut Butter Chocolate Toffee Cookies image

I'm not a fan of peanut butter, but for some reason, these don't taste overly peanutbutterish to me. These started out as your average flourless peanut butter cookies, but over the years they have been tweaked to perfection by adding chocolate chips and toffee bits. They are easy to make and I usually have all of the ingredients on hand. Since these cookies don't have flour they tend not to be dry like some cookies. The cookies will come together no matter how you make them, but here are some tips that I have discovered from playing around with this recipe over the years: 1) When combining the ingredients the order does seem to make a difference; 2) Yes, the recipe does call for one and a half eggs. This produces the best dough consistency. It's best to crack one egg into a bowl, beat it with a fork, then pour half of it into your cookie dough mixture along with one whole egg; 3) When adding the vanilla and peanut butter I tend to go slightly over the called for amount (e.g., the recipe calls for 1 cup of peanut butter so I usually fill the cup, then add roughly 2 tablespoons of PB more); 4) Try not to handle the dough too much. Since there's no flour to help hold it together, the dough can get a bit runny from the heat of your hands. I like to put the dough in the fridge for 10 minutes before spooning it onto the baking sheet (don't forget to place dough back into fridge between batches). Then simply use a tablespoon to scoop up the dough; 5) Set the timer for 11 minutes. If after 11 minutes they've turned a golden color and have puffed up a bit, they should be done. You may need an additional minute (as ovens can vary). Once they've finished baking, gently separate any cookies that have baked together with a knife, let them cool to the point you can pick them up with a spatula, then transfer them to a wire rack to cool completely. 2/3 cup(s) coarsely chopped peanuts

1 1/2 cup(s) caramels, unwrapped
2-3 tablespoon(s) whipping cream

Steps:

  • Preheat oven to 350. In large bowl, beat butter, sugar, brown sugar and peanut butter with electric mixer on medium speed until creamy. Beat in egg until blended. Add bisquick, beating on low just until blended. Stir in toffee bits, peanuts and 2/3 cups of the chocolate chips. Onto ungreased cookie sheets, drop dough by the rounded tablespoons 2 inches apart, flatten with hand.
  • Bake 10-12 minutes or until golden brown. Cool 1 minute, remove from cookie sheet to cooling racks. In microwaveable bowl, microwave caramels and 2 tablespoons of heavy whipping cream uncovered on high for 1 minute, stir. Microwave 1 minute longer, stirring every 30 seconds, until caramel is melted and mixture is smooth, add remaining tablespoon of heavy whipping cream, if necessary. Stir in vanilla. Spoon caramel mixture onto tops of cookies. Melt remaining chocolate chips, drizzle over caramel.
