The best butter tart squares! These have a buttery shortbread crust and a layer of gooey brown sugar filling. You can add in walnuts, raisins, currants or leave them plain. Easier, quicker and more delicious than the original. This recipe can make 15 large bars or 36 more reasonable sized bars.

1 cup unsalted butter (softened)
1/2 cup powdered sugar
2 1/4 cup all-purpose flour
1/2 cup unsalted butter (softened)
1 cup brown sugar (light or dark)
2 tablespoons all-purpose flour*
4 large eggs
2 teaspoon vanilla extract
3/4 cup dark corn syrup*
2 tablespoons white vinegar*
1 cup raisins, currants or chopped walnuts - optional (I use 1/2 cup currants and 1/2 cup chopped walnuts)

Steps:

  • Preheat the oven to 350F degrees. Line the pan with parchment paper, leaving an overhang around the edges.
  • In a large bowl beat the butter and powdered sugar until fluffy.
  • Mix in the flour - the mixture will be thick.
  • Press the mixture into the bottom of the pan.
  • Bake in the preheated oven for 15-20 minutes or until the top looks set and is a pale, golden color. Remove from the oven and leave the oven turned on.
  • Make the filling as the base layer is baking.
  • Beat the butter, brown sugar and flour until evenly combined.
  • Beat in the eggs and vanilla extract.
  • Mix in the corn syrup and vinegar. Stir in the optional raisins, currants or walnuts.
  • Pour the mixture over the gently baked crust.
  • Bake in the preheated oven for 30-35 minutes, or until the top looks set and if you give the pan a nudge the filling layer doesn't look liquidy.
  • Remove from the oven and cool completely before slicing for clean cuts and to ensure that the bars are set.
  • When ready to slice, lift the bars out of the pan using the overhang of the parchment paper. Place on the cutting board and slice using a sharp knife. If the edges seem too crispy, simply slice off the edges.

My Grandma always made BUTTER TARTS, from a canadian recipe from her home Country of Canada. Since then I found this recipe Don't remember where, and its also very good. I have also added a "lemon Tart Squares" that you can make with this Same recipe.

BOTTOM CRUST BASE:
1 C flour
1/4 C sugar
1/2 C butter (do not use margarine)
FILLING/TOPPING
2 Tbs butter melted (not margarine)
2 eggs, beaten
1 C brown sugar
2 Tbs flour
1/2 tsp baking pdr
1 tsp vanilla
pinch/dash of salt
1 C raisins
1/2 C chopped pecans ( optional)

Steps:

  • 1. BASE: PREHEAT OVEN @ 350 in a bowl mix flour, sugar, then Cut in the butter until Crumbly Press into a 9" square pan. Bake @ 350 for 15 min.
  • 2. Topping: In Bowl Mix together, Butter and eggs; Blend in the Sugar, flour, Baking Pdr, Vanilla, & Salt. Stir in raisins, & (optional Nuts) if You dessire. Pour this over the Base.
  • 3. Bake: @ 350 for 20-25 min, or until top springs back when touched lightly. Cool completely before Cutting into Squares.
  • 4. TIP: LEMOM SQUARES: Substitute White granulated Sugar for Brn Sugar, and add 1 tsp grated Lemon rind and 3 TBS lemon Juice. Follow baking directions above. (OMIT RAISINS & NUTS)

1 cup all-purpose flour
2 tablespoons brown sugar
½ cup butter
2 eggs, beaten
1 ½ cups packed brown sugar
½ cup rolled oats
¼ teaspoon salt
½ teaspoon baking powder
1 teaspoon vanilla extract
½ cup raisins
¼ cup flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x9 inch baking pan.
  • In a medium bowl, combine flour and 2 tablespoons brown sugar. Cut in butter until mixture is crumbly. Press into the bottom of the prepared pan.
  • Bake for 15 minutes in preheated oven. Crust should not be fully cooked.
  • In a large bowl, mix together the eggs and remaining brown sugar. Combine the oats, salt, and baking powder; stir into the egg mixture along with the vanilla. Mix in raisins and coconut, if desired. Spread the mixture evenly over the partially baked crumb layer in pan.
  • Bake 20 minutes more. Cool, and cut into squares.

2 tablespoons confectioners' sugar
1 ¼ cups all-purpose flour
1 ½ cups packed brown sugar
¼ cup butter, melted
2 eggs, beaten
1 tablespoon distilled white vinegar
1 teaspoon vanilla extract
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Base: In a small mixer bowl, cream together 1/2 cup butter or margarine and confectioners' sugar. Blend in flour. Pat into 9X9 inch square pan. Bake in preheated oven for 5 minutes.
  • To Make Filling: In a large bowl combine brown sugar, melted butter or margarine, beaten eggs, vinegar, vanilla, and raisins. Pour over base and bake in preheated oven for 35 to 40 minutes, until set.

3 tablespoons sugar
1 cup all-purpose flour
1/8 teaspoon salt
1/4 cup unsalted butter, softened
1 cup light brown sugar
2 large eggs
1/4 cup light corn syrup
1 teaspoon pure vanilla extract
1 tablespoon all-purpose flour
1/8 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F.
  • Butter an 8 x 8 inch pan.
  • Shortbread Base: In the bowl of your electric mixer, or with a hand mixer, cream the butter and sugar until light and fluffy.
  • Add the flour and salt and beat until the dough just comes together.
  • Press onto the bottom of your greased pan and bake for about 20 to 25 minutes, or until pale golden in color.
  • Remove from oven and place on a wire rack to cool while you make the filling.

For these squares, rather than make individual pastry shells, you simply pour the butter tart filling over a shortbread base. Once baked, it can be cut into squares like a bar cookie.

1 1/4 cup/159 grams all-purpose flour
1/4 cup/55 grams packed brown sugar, light or dark
Pinch of fine sea salt
1/2 cup/113 grams cold unsalted butter, cubed
1/3 cup/76 grams unsalted butter, softened
2 tablespoons heavy cream
1 teaspoon vanilla extract
1/2 cup/72 grams raisins, roughly chopped (optional)
1 cup/220 grams packed brown sugar, light or dark
1 large egg, beaten
1 tablespoon all-purpose flour

Steps:

  • Heat oven to 350 degrees F (180 degrees C). Make the crust: In a bowl, combine flour, brown sugar and salt. Using a pastry blender or your fingers, cut in butter until well combined and crumbly.
