Grilled Mushrooms Stuffed with Basil and Blue Cheese Butter image

This is simply mushrooms stuffed with the same blue cheese butter recipe I usually use to top grilled steak or burgers!

1 (6 ounce) package button mushrooms, stemmed
1 tablespoon olive oil, or as needed
⅓ cup crumbled blue cheese
2 tablespoons butter
2 cloves garlic, minced
1 tablespoon chopped fresh basil
salt and ground black pepper to taste

Steps:

  • Coat tops of mushrooms with olive oil. Place mushrooms top-down in a grill-safe dish.
  • Mix blue cheese, butter, garlic, basil, salt, and pepper thoroughly in a bowl. Scoop evenly into the mushroom caps.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Cook mushrooms until tender and heated through, about 5 minutes.

Garlic Butter Stuffed Mushrooms with Swiss Cheese image

32 - button mushrooms stems removed
1 stick(s) butter softened
6 clove(s) garlic minced
3 tablespoon(s) white wine
1/3 cup(s) italian bread crumbs
1 tablespoon(s) fresh parsley minced
1/2 cup(s) shredded swiss cheese

Steps:

  • Preheat oven 400 degrees Spray a 9 x 13 pan Place the mushrooms open side up.
  • Mix the butter, garlic, wine, bread crumbs, and parsley together. Fill the mushrooms with the bread crumb mixture.
  • Bake for 15 minutes. Sprinkle the cheese over top and bake another 5 minutes until cheese is melted

Yield makes 4 appetizer servings

Number Of Ingredients 9

8 large mushroom caps for stuffing
1/4 lb. sweet butter
2 T. shallots chopped fine
2 T. green onions, white and part of the green, chopped fine
1 clove garlic, pressed
1 T. finely chopped parsley
1 T. fresh lemon juice
fresh ground pepper
1/2 c. dry white wine

Steps:

  • wash and dry mushroom caps. in cuisinart, blend the butter with the chopped shallots, onions and garlic, parsley, lemon juice and fresh ground pepper. stuff each mushroom cap with the mixture in a mound. Place in a pie plate or oven proof dish. Pour in wine around mushrooms (not on top of them) to about 1/4" depth. Bake mushrooms @ 425F for 8-10 minutes or til the butter is melted and the mushrooms are just beginning to crisp. Remove carefully so as not to spill the butter and serve hot.
