A friend of mine, who picks pecans every year, brought me some of these yummy bars along with a sack of pecans. They are incredibly rich and gooey, and freeze like a dream. Easy and perfect for the holiday season.

¾ cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
1 cup pecan halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square baking pan.
  • In a medium bowl, cream together the butter, brown sugar, and white sugar. Beat in the eggs and vanilla. Stir in the flour and pecans until just blended. Spread the mixture evenly into the prepared pan.
  • Bake for 35 to 40 minutes in the preheated oven, or until edges begin to pull away from the sides of the pan. Allow bars to cool in the pan before cutting.

2 cups flour
3/4 cup light brown sugar
1/2 cup butter (no substitutions)
1 1/2 cups pecan halves
1/2 cup light brown sugar
1 cup butter (no substitutions)
1 1/2 cups milk chocolate chips

Steps:

  • Set oven to 350 degrees.
  • Prepare a 13x9-inch baking pan.
  • In a bowl, combine flour, 3/4 cup brown sugar and 1/2 cup butter; blend with fork until crumbly.
  • Pat the mixture onto bottom of prepared baking pan.
  • Sprinkle pecan halves evenly over the unbaked crust; set aside.
  • In a small saucepan, combine 1/2 cup brown sugar with 2/3 cup butter.
  • Cook, over medium heat, stirring constantly, until the mixture begins to boil; boil for 1 minute, stirring constantly.
  • Drizzle the caramel mixture over pecans and crust in baking dish.
  • Bake for 18-20 minutes, or until cacamel layer is bubbly, and crust is light brown.
  • Remove from oven, and immediately sprinkle with chocolate chips.
  • Spread chips evenly as they melt.
  • Cool completely before cutting into bars.

1 ½ cups pecan pieces
2 cups white sugar
1 cup butter
4 eggs
2 teaspoons vanilla extract
1 teaspoon butter extract
3 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup milk
6 ½ cups confectioners' sugar
11 ounces cream cheese, softened
⅔ cup butter, softened
1 ½ teaspoons vanilla extract
½ teaspoon almond extract
1 tablespoon milk, or more as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Melt 2 tablespoons butter in a small, heavy skillet over medium heat. Add pecans and cook until toasted, about 4 minutes. Remove from heat and let cool.
  • Combine white sugar and 1 cup butter in a large bowl; beat with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in 2 teaspoons vanilla extract and butter extract.
  • Combine flour, baking powder, and salt in a bowl. Add to creamed butter mixture alternately with milk, beating just until combined. Fold in pecans. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted near the center comes out clean, 25 to 30 minutes.
  • Beat confectioners' sugar, cream cheese, 2/3 cup butter, 1 1/2 teaspoons vanilla extract, and almond extract in a large bowl until smooth. Beat in enough milk to give frosting a spreadable consistency.
  • Divide hot cake in half and chop 1 half into a large bowl. Stir in 1/4 of the frosting. Repeat with remaining half, stirring in an additional 1/4 of the frosting. Spread mixture back into the baking pan; press flat with your fingers. Spread remaining frosting over the pressed cake mixture.
  • Refrigerate until firm, 3 to 4 hours. Cut into bars.

I got this recipe from a dear friend yrs ago...when we wanted something ooey gooey and bad for us...this is what we made! It's like a caramelly toffee center, mmmmmm These are always the first to disappear on the holiday goodie trays...course I don't usually have many left to put on the tray...lol

2 c flour
1 c brown sugar
1/2 c butter, softened
1 c pecan halves
filling:
3/4 c brown sugar
1 c butter
top:
1 c chocolate chips

Steps:

  • 1. combine flour, brown sugar, butter. Pat into a 9x13 pan, sprinkle with pecans, set aside.
  • 2. To prepare caramel layer; In a heavy pan, combine brown sugar and butter, cook over medium heat, stirring constantly and fairly fast to incorporate the butter into the brown sugar. Continue this until mixture begins to boil. Boil for 1 minute, stirring constantly. Pour over crust. Bake at 350 for 20-23 minutes or until caramel is bubbly and crust golden. Remove from oven, and sprinkle with chocolate chips. Allow chips to melt slightly then swirl over top! When almost cool, cut into 1 1/2" squares...or in my sons case, 6x6" chunks lol

1/2 cup sugar
3/4 cup softened butter (levelled)
4 eggs
1 cup dark corn syrup
1 cup dark brown sugar
1/4 cup butter, melted
1 cup butterscotch chips or 1 cup Skor English toffee bit
1 1/2 cups pecans (chopped)

Steps:

  • Preheat oven to 350*.
  • Grease well, a 13"x9" cake pan.
  • Combine flour, sugar and softed butter until crumbly.
  • Press firmly into pan and bake in oven for 15 min or until golden.
  • While crust is baking, beat eggs, sugar, corn syrup and melted butter until well blended, 5 minute.
  • Stir in chips or bits and fold in pecans.
  • Pour evenly over the crust and return to oven.
  • Bake for 30 min or until golden in colour and setting has occurred. (when pan is shook filling does not run).
  • Place on cooling rack and run a spatula around outer edge before cooling. Leave on rack until completely cool then cut into bars.
  • Keeps well in the refrigerator if you can keep your hands out of it.
  • May be frozen for up to 2 months.

How to make Butter Pecan Cheesecake Bars

1 15.25-oz Butter Pecan Cake Mix
1/2 cup butter (melted)
1 large egg
1 cup chopped pecans (plus 2 Tbsp divided)
1 10-oz package caramel baking chips
1 cup heavy cream
2 8-oz cream cheese, softened
2 tsp pure vanilla extract
3 large eggs
3 cups powdered sugar
1/4 cup bits-o-brickle toffee chips
Whipped cream (optional)

Steps:

  • Preheat the oven to 350°F. Spray a 9 x 13-inch baking dish lightly with cooking spray. Set aside.
  • Spread 1 cup chopped pecans in a single layer on a baking sheet. Toast for 6-8 minutes. Cool. (Remaining 2 Tbsp NOT toasted reserved for the top)
  • Place the caramel chips and heavy cream in microwave safe bowl. Melt in 30 second increments stopping to stir each time. Repeat until smooth.
  • Using an electric mixer, beat together the cake mix, 1 large egg and 1 stick melted butter. Mix until fully moistened then mix-in 1/2 cup toasted chopped pecans. Press evenly into the bottom of the baking dish.
  • In the same mixing bowl cream together the cream cheese and vanilla for 1 minute. Drizzle in the melted caramel. Beat until smooth on medium-high.
  • Add the eggs one at a time beating well after each addition.
  • Lower the speed of the mixer and gradually add the powdered sugar. After all has been added, increase to medium-high beating for 1 minute or until completely smooth and slightly thickened.
  • Fold in the remaining 1/2 cup toasted pecans. (Remember, 2 Tbsp have been reserved for the topping that are NOT toasted)
  • Pour the filling over the crust. Sprinkle the top with toffee bits and 2 Tbsp chopped pecans.
  • Bake for 40-50 minutes or until puffed and the center is set when gently shaken. Do not over bake.
  • Cool completely and chill. Serve dusted with powdered sugar and a dollop of whipped cream.
  • Store leftovers chilled

This recipe is popular with our entire family. It originated (in our family) with my husband's Aunt Ruby. She was a wonderful cook and a great hostess. These are very rich and gooey, which makes them great with coffee. I only make them around Christmas and we share them with our neighbors.

1 box butter cake mix
4 large eggs
2 stick butter or margarine
1 c chopped pecans
8 oz cream cheese
1 tsp vanilla
4 c confectioners' sugar
1 pinch salt

Steps:

  • 1. Mix together cake mix, one egg, one stick margarine (or butter) and one cup chopped pecans.
  • 2. Pat the above mixture into a 9" x 12" pan, forming crust.
  • 3. Mix together cream cheese, vanilla, one stick margarine (or butter), three eggs, powdered sugar and a pinch of salt.
  • 4. Pour this mixture over crust mixture. Bake at 325 for about 45 minutes.
  • 5. Let cool completely. These are very rich, cut into small, bite size pieces to serve. Store in refrigerator. Really good with coffee. Keeps well for weeks.

3/4 cup(s) butter, softened

1 1/4 cup(s) all purpose flour

1 cup(s) pecans, chopped

Steps:

  • Grease a 9x9 baking dish. Preheat oven to 350 degrees.
  • In a medium mixing bowl cream butter and sugars, add eggs and vanilla, mix well. Add flour, soda and pecans to butter mixture, mix well.
  • Pour into prepared pan and bake at 350 degrees for 30 to 40 minutes.
  • Cut into bars while still slightly warm.

8 Rhodes Dinner Rolls, thawed to room temperature
3/4 cup chopped pecans
1/2 cup sugar
1/2 cup light corn syrup
2 tablespoons butter, melted
1 teaspoon vanilla
1 beaten egg

Steps:

  • Spray counter lightly with non-stick cooking spray. Combine rolls and roll into a 10x14-inch rectangle. Place in the bottom of a sprayed 9x13-inch baking pan. Poke dough several times with a fork to prevent bubbles from forming and pre-bake at 350°F 8 minutes. Remove from oven to cool. Combine pecans, sugar, corn syrup, butter, vanilla and egg and mix well. Pour and spread pecan mixture over crust and bake an additional 15-18 minutes or until golden brown. Cool and cut into bars.

2 cups sliced ripe banana (about 3 medium)
1/3 cup packed dark brown sugar
1 tablespoon butter, chilled and cut into small pieces
9 ounces cake flour (about 2 1/4 cups)
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 cup nonfat buttermilk
1 teaspoon vanilla extract
1/2 cup butter, softened
1 1/4 cups granulated sugar
2 large eggs
Baking spray with flour
1/4 cup butter
2 cups powdered sugar
1/3 cup (3 ounces) 1/3-less-fat cream cheese, softened
1 teaspoon vanilla extract
1/4 cup chopped pecans, toasted

Steps:

  • Preheat oven to 400°.
  • To prepare bars, combine banana, brown sugar, and 1 tablespoon butter in an 8-inch square baking dish. Bake at 400° for 35 minutes, stirring after 17 minutes. Cool slightly.
  • Reduce the oven temperature to 375°.
  • Weigh or lightly spoon cake flour into dry measuring cups; level with a knife. Combine 9 ounces (about 2 1/4 cups) flour, soda, and baking powder in a medium bowl. Combine banana mixture, buttermilk, and 1 teaspoon vanilla in another medium bowl. Place 1/2 cup butter and granulated sugar in a large bowl; beat with a mixer at medium speed until well blended. Add eggs to granulated sugar mixture; mix well. Add flour mixture to sugar mixture alternating with banana mixture, beginning and ending with flour mixture.
  • Pour batter into a 13 x 9-inch baking pan coated with baking spray. Bake at 375° for 20 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack.
  • To prepare frosting, melt 1/4 cup butter in a small saucepan over medium heat; cook 4 minutes or until lightly browned. Cool slightly. Combine browned butter, powdered sugar, cream cheese, and 1 teaspoon vanilla in a medium bowl; beat with a mixer until smooth. Spread frosting over cooled bars. Sprinkle with pecans.
