1 stick cold unsalted butter, cut into small pieces
4 cups confectioners' sugar, plus more for dusting
1/4 teaspoon pure peppermint extract
1 tablespoon whole milk
Pinch of kosher salt
Gel food coloring, such as AmeriColor in Soft Pink, Avocado, Super Red, and Fuchsia (optional)

Steps:

  • Combine butter and 2 cups sugar in the bowl of a stand mixer fitted with the paddle attachment. Mix on low speed until sugar is moistened, then increase speed to medium-high and beat until well combined. Return mixer to low speed, add remaining 2 cups sugar, and mix until well combined, 1 minute. Increase speed to medium-high; beat until light and fluffy, 6 minutes more. Add peppermint extract, milk, and salt; beat until smooth.
  • Lightly dust a clean work surface with confectioners' sugar and turn out "dough" onto it. Divide into 5 pieces; tint as desired with food coloring, leaving one piece white. (Keep covered with plastic wrap while working to prevent drying.)
  • Roll "dough" into 1/2-inch-thick ropes, then cut into pieces slightly over 1/2 inch long with a paring knife or bench scraper. Transfer to a parchment-lined rimmed baking sheet. Let dry, uncovered, at least 12 hours. Mints can be refrigerated in an airtight container up to 2 weeks.

10 2/3 tablespoons unsalted butter, at room temperature
1 pound confectioners' sugar, sifted
1 teaspoon pure mint extract

Steps:

  • Cream the butter in a large mixing bowl with an electric mixer on low speed until it is soft and fluffy. Add the sugar and the mint extract and beat at low speed until the mixture is thick, creamy, and smooth. Scrape down the sides of the bowl.
  • Cut 2 large sheets of plastic wrap and place on your work surface. Divide the mixture into 2 equal portions and place each on the plastic sheets. Roll the mixture into the plastic wrap, forming it into logs about 1/2-inch in diameter. Wrap the plastic wrap securely around the logs and chill for 4 hours.
  • Pinch off about a rounded teaspoon of the butter cream and shape into 1-inch balls. Place the balls on parchment or waxed paper and flatten with the tines of a fork. Refrigerate in layers of parchment paper in an airtight container until ready to serve. Mints will keep for up to 1 week.

3 cups sugar
1 cup water
1 cup butter, softened
ΒΌ teaspoon peppermint oil
3 drops green food coloring, or as needed

Steps:

  • Butter a 10x15 inch jellyroll pan, and place in the refrigerator.
  • In a heavy saucepan, combine the sugar, water, and butter. Bring to a boil over high heat. Stir occasionally with a wooden spoon. When the mixture starts to boil, reduce the heat to medium, cover, and cook for 3 minutes to allow the steam to wash the crystals that form on the insides of the pan. Uncover, and heat the mixture to 250 to 265 degrees F (121 to 129 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball.
  • Remove from the heat, and stir in the peppermint oil and food coloring. Be sure to keep your face away from the steam as the odor is very strong. Pour into the chilled pan. Let stand undisturbed for several minutes.
  • Use a rubber spatula to gently fold the edges of the hot candy into the center to soften. Continue folding until the candy is cool enough to pick up with your hands. Butter your fingers, and pack the candy into a ball. Begin stretching and pulling. Continue stretching and pulling until the the candy becomes porous and satiny, about 5 minutes.
  • Pull the candy into a 1/2 inch thick rope, and cut into 1/2 inch pieces using greased scissors. Let the candy cool completely, then store in an airtight tin for at least 24 hours before serving.

2 tablespoons butter
1 teaspoon mint extract
1/2 teaspoon pure vanilla extract
1/4 teaspoon butter flavor extract
2 cups powdered sugar (or a little more, as needed)
3 drops food coloring, your choice
water, drops as needed

Steps:

  • Melt butter in medium bowl in the microwave.
  • Add mint, vanilla, butter extract and food coloring.
  • Add powdered sugar and knead with hand until no longer sticky and able to form a ball, add drops of water/sprinkles of sugar as needed.
  • Place on counter sprinkled with powdered sugar and roll to 1/4 inch thick.
  • Use small, dime size cookie cutter to cut into bite size mints.
  • Allow to dry (drying time will vary depending upon humidity) and enjoy!
  • You can use diff color food coloring for diff holidays.
  • The amount of mints will vary depending upon the size of cookie cutter you use- I have found perfect sized cutters in my daughter's play-doh kit!

I have tried various butter mint recipes in my years but this is truly the best one yet. I also like the fact that they freeze well. The recipe came from a former pastor's wife, which was in the church cookbook.

4 oz cream cheese, room temperature
2 Tbsp butter (not margarine), rm temp
16 oz powdered sugar
1/4 tsp peppermint extract
1/8 tsp vanilla extract

Steps:

  • 1. In large saucepan, melt cream cheese & butter over low heat, stirring until smooth. Remove from heat.
  • 2. Gradually add in the powdered sugar then the extracts. Stir until well blended. You can add food coloring at this point if so desired.
  • 3. Let dry for a couple of minutes. Spoon into decorator w/ small tip and squirt onto waxed paper. Let set for at least 12 hours (24 hours is better) to dry then transfer in ziplock bags & store in freezer or store in air tight containers or just set out in pretty dishes uncovered.
  • 4. I actually use my Pampered Chef Easy Accent Decorator for this. You can also use a ziplock bag with a corner snipped just a bit and squeeze out in a swirlling motion to make them pretty.
  • 5. This is the consistency. Hope you can tell by the pic, which isn't that good.

1 lb powdered (confectioners) sugar sifted
1/4 c butter, softened
2 Tbsp heavy cream or milk
1 tsp peppermint oil or extract or anise

  • 1. In a large mixer bowl, beat butter until creamy. With mixer on low, beat in powdered sugar, cream and extract ntil creamy and smooth...add optional food coloring at this point and mixing until almost uniform(it won't completely mix) that's ok.
  • 2. Pour the mixture onto a lightly powdered sugar surface, knead until smooth and satiny. Cover the dough with a "slightly" damp towel to keep it from drying out.
  • 3. Line 2 baking sheets with parchment or non stick foil. Lightly dust work surface with powdered sugar and roll out a small amount of dough about 1/8 cupful and roll innto a 1/2 inch thick rope. Cut ropes into 1/2 to 3/4 inch pieces. Continue with remaining dough, until all is rolled and cut.
  • 4. Carefully lift mints with spatula or pancake turner to prepared baking sheetts (mints will be soft). Let air-dry at room temperature for 2 days or until firm enough to handle and flavor ripens. Store candy pillows in an airtight container . Makes about 4 or 5 dozen.
  • 5. Note: For anise flavored use anise(licorice) flavoring and green food coloring.

  • To the bowl of stand mixer fitted with the paddle attachment, combine butter and salt and beat for 1 minute on medium-high speed. Add 3 1/4 cups confectioners' sugar, milk, peppermint, and beat on medium-low speed until a dough forms. If the dough seems wet, add additional confectioners' sugar until dough combines (I use 3 1/2 cups sugar). The dough will be crumbly but will come together when pinched and squeezed into a ball. Taste the batter. If you want a more intense mint flavor, add additional mint extract, to taste.* Be very careful how much mint you add; you cannot un-do this. I repeat, be very, very careful with how much you add. Even 1/8th teaspoon peppermint extract can change flavors, dramatically. 4 cups powdered sugar, divided
1/8 tsp salt
1/8-1/4 tsp vanilla extract
1/4 tsp peppermint extract

1 1/2 tb milk, half & half, or condensed milk

  • 1. ***You really need a stand mixer to make these. The "dough" will become very stiff and too much for a hand mixer.***
  • 2. Add room temperature butter to bowl of stand mixer and begin to mix. Gradually add 2 cups of powdered sugar, extracts, salt, milk and food coloring, if using.
  • 3. Once well combined, begin to add last 2 cups of powdered sugar. Once all has been added, the consistency should be that of Playdough.
  • 4. Working with 2-3 tablespoons of dough at a time, roll in to 1/2 inch ropes. Cut into desired size, around 1/2 inch chunks. Place on wax paper or parchment lined sheet pan. Allow to dry for several hours or until they become as hard or as soft as you like. Then, store in an airtight container.
  • 5. I sometimes use Country Crock plant butter sticks (almond, olive oil or avocado). It doesn't change the flavor, but it does make them cholesterol-free and they stay soft, left out in a candy dish, for several weeks, if they last that long. My mom would combine with dry roasted peanuts. Enjoy!

My daughter Hannah based this recipe on one she found in a book entitled Teens Cook Dessert. She had a friend sleep over and they made it together. Even better, they shared it with all the girls in their youth group that night. Everyone loved it. We can't wait to make it again. Although the recipe instructs to let them sit overnight, we found they didn't reach the soft, creamy, melt in your mouth butter mint texture until they had sat for two and half or three days - perhaps because we live in humid Florida. They are just as delicious if you eat them sooner, but have more of a salt-water taffy, chewy, sticky texture. WARNING - Read through the recipe first. Purpleturtle must not have realized what work she was in for.

1 1/2 cups sugar
1/4 cup water
1/2 cup light corn syrup
2 tablespoons butter
1 pinch salt (about 1/16 teaspoon)

1/2 lb powdered sugar (about 2 cups)

Steps:

  • Decide how many colors you want. You will need to butter or spray a baking sheet for each color. Put some cornstarch in a shallow dish to use for dipping your fingers later.
  • Cook the sugar, water, corn syrup, butter, and salt over medium heat for about 7 to 10 minutes, stirring occasionally.
  • When it reaches 270 degrees F, remove the pan from the heat and let it stand until it stops bubbling. (270 degrees is Soft Crack Stage. It will form threads that bend when dropped in ice water.).
  • Divide the mixture between the greased baking sheet(s) and let it stand for 5 minutes or until it is cool enough to handle.
  • Drop food coloring and peppermint flavoring on each batch of candy. Remember to divide the 1/2 teaspoon peppermint flavoring by however many batches you have divided the candy mixture into. For example, if you have put half the mixture on each of two baking sheets, drizzle each with only 1/4 teaspoon of peppermint flavoring.
  • Use the cornstarch to dip your fingers, and then begin pulling the candy straight out without twisting it. Fold it half and stretch it again.
  • Continue to pull and fold the candy until it is no longer clear, but opaque and creamy looking. It should become very pale, almost white. This will take quite a while, so it is great to do with a friend. Don't worry the candy won't set as it cools, so there is no rush. If your arms get tired, rest and stretch again in a few minutes.
  • Stretch the candy into a rope about 1/2 inch in diameter, and begin snipping off 1/2 inch pieces with a pair of scissors into a baking pan filled with the powdered sugar.
  • Toss the candy with sugar to coat, making sure none of the pieces are sticking together, and let it sit overnight.
  • The next morning, sift the pieces out of the sugar and place them in a pretty dish. Try not to eat them all.

You cannot un-do mint once added so be very, very careful to not over-do it and end up with a bottle of Listerine-tasting food. There are different kinds of mint extracts available and are labeled as "mint, "peppermint", "spearmint" and more. For this recipe I used store-brand (Kroger/Ralph's) "peppermint extract" sold in a small 1 ounce bottle. Select the version of "mint" you think sounds best as not all types are available in all areas.
  • Recipe variations and thoughts: I suspect this recipe would be nice with cinnamon extract, lemon or orange extract, or many other specialty-flavored extracts from butter to rum to coconut to coffee extract. I have not tried making the dough first into a ball and then adding the extract after the dough has combined, thereby making it easier to customize the flavors from one big batch of mints into 50 pieces of orange, 50 pieces of cinnamon and so forth. Unfortunately, I have a feeling that extract added after the dough has combined would not disperse well and some pieces would be insanely strongly flavored and others would hardly be flavored at all. Working in an even smaller batch size is an option, although a bit challenging because less than one-quarter cup butter begins to be challenging.:

1/2 cup salted butter, softened (if you use unsalted butter, add a pinch of salt with butter in step #2)
1 lb box confectioners' sugar
1 to 2 Tbsp cream or milk
1 tsp mint extract
pink and green food coloring (optional)
confectioners' sugar (for dusting work surface)

Steps:

  • 1. Line two baking sheets with non-stick foil (but don't butter, grease or spray the foil). Set the baking sheets aside.
  • 2. With electric mixer on medium speed, beat butter in a bowl until creamy. Turn mixer speed to low, and beat in the 1-lb of powdered sugar, 1 tbsp cream, and extract, and beat on low speed just until the sugar is fully incorporated. Then increase speed to medium and beat, adding addition cream if needed (1 teaspoon at a time), until it's smooth and silky.
  • 3. Lightly dust a flat work surface with confectioners' sugar. Turn the candy mixture onto the work surface, and knead until smooth and silky.
  • 4. If you want different colors of mints, divide the candy mixture. (It's best to wear disposable plastic gloves to keep the food coloring from dyeing your hands, and use a different pair of gloves for each color in order to keep the colors from blending together.) Add a drop or two of food coloring to one portion of the candy, and knead it to evenly blend the food coloring throughout the candy. Wrap the portions you're not working with in plastic wrap to keep from drying out.
  • 5. To make the classic "pillow" shaped mints, roll a palm-sized portion of dough into long thin (about 1/2-inch thick) logs on the dusted work surface. With kitchen shears, cut into 1/2-inch "pillows". Use a spatula to transfer mints to the baking sheets. Be careful, as the mints are soft and will squish easily. Repeat with remaining candy.
  • 6. Set baking sheets aside for 1 to 2 days until completely dry and firm enough to handle without being squished. Transfer mints to a covered container. They'll store well for up to 2 weeks or in the refrigerator for 1 month.
