BUTTER LETTUCE SALAD RECIPE

This Butter Lettuce Salad is packed with vegetables and drizzled with lemon salad dressing. It comes together in 20 minutes. Serve it with any of your meat dishes or by itself for a light lunch or dinner.

Number Of Ingredients 16

½ cup olive oil
4 tablespoons lemon juice
2 small cloves of garlic minced
1 teaspoon dijon mustard
1 teaspoon kosher salt
½ teaspoon black pepper
Water
1 tablespoon of Kosher salt
1 bunch of asparagus (- rinsed and cut into 2-inch small pieces approximately 1 lb.)
1 ½ cups of peas (fresh or frozen)
2 heads of Butter Lettuce (leaves gently removed, rinsed and dried)
1 medium size English cucumber (sliced thinly approximately 1 cup)
4-5 radishes (sliced thinly)
1 cup sliced almonds (lightly toasted)
1 ripe avocado (cut into cubes)
1 cup shredded parmesan cheese (optional)

Steps:

  • Make the dressing: Place all the ingredients in a jar and give it a vigorous shake. Alternatively, you can place everything in a small bowl and whisk until emulsified.
  • To Blanch asparagus: Fill a large pot with water and a tablespoon of salt and bring it to a boil. Meanwhile, fill a large bowl with water and ice and set it aside. Place asparagus in the hot boiling water and let cook for 3-4 minutes.
  • While it is cooking, fill a bowl with cold water and add some ice in it.
  • Using a slotted spoon transfer the asparagus into the bowl with ice water. Do not discard the boiling water.
  • To blanch peas: Add the peas into the now empty pot with the boiling water. Cook for 2-3 minutes or until the peas are softened to your liking. Remove with a slotted spoon and place in the ice water (where the cooked asparagus is)
  • Drain both vegetables and set them aside.
  • To assemble the salad: Place the butter lettuce leaves in a large salad bowl. Add in blanched asparagus and peas, cucumber slices, radish slices, sliced almonds, avocado cubes, and parmesan cheese, if using.
  • Drizzle with the lemon salad dressing and give it a gentle toss. Serve.

1 pound baby (golf-ball-size) potatoes
Coarse salt and freshly ground pepper
8 ounces sugar snap peas, trimmed and halved on the bias
1 pound white or green asparagus (peeled, if white), tough stems trimmed, cut into 2-inch pieces
1 stick unsalted butter
2 tablespoons fresh lemon juice (from 1 lemon)
1/4 teaspoon sugar
1 to 2 heads butter lettuce, such as Boston or Bibb, leaves separated, large ones torn into 2-inch pieces (about 12 ounces)
4 large eggs, fried
1/4 cup snipped fresh chives (from 1 bunch), for serving

Steps:

  • Cover potatoes with 2 inches of water in a pot and bring to a boil; add salt. Cook until potatoes are easily pierced with the tip of a sharp knife, about 10 minutes. Remove with a slotted spoon. Add snap peas and asparagus to pot, and boil until crisp-tender, about 2 minutes; drain. Slice potatoes into 1/4-inch-thick rounds.
  • Melt butter in a saucepan. Remove from heat and whisk in lemon juice and sugar; season with salt and pepper. Divide lettuce and vegetables among 4 plates. Drizzle with warm dressing, and top each with an egg. Season with salt and pepper; sprinkle with chives.

MASHED POTATOES:
2 potatoes, cooked
1/4 cup cream
2 tablespoons butter
Salt and pepper
DRESSING:
6 slices bacon
1/2 cup water
1/4 cup vinegar
6 scallions, sliced
4 tablespoons sugar
SALAD:
4 cups young lettuce or spinach leaves
4 hard boiled eggs, sliced

Steps:

  • Make the Mashed Potatoes: Cook the potatoes until tender. While the potatoes are cooking, heat up the cream. Add the butter and stir until melted. Add the cream and butter to the hot potatoes and mash. Season to taste. Make the Dressing: Brown bacon in a frying pan. Remove bacon and pat dry. When cooled slightly, crumble the bacon into small pieces. Add vinegar, sugar, and water to the pan with the bacon fat. Stir to dissolve the sugar. 1 tablespoon yuzu rice wine vinegar or unseasoned rice wine vinegar
Juice of 1 lime
2 teaspoons peeled and grated fresh ginger
2 teaspoons sugar
1 tablespoon safflower oil
Coarse salt and freshly ground pepper
1/4 avocado, peeled, and thinly sliced, for serving
1 head butter lettuce, inner leaves only
2 teaspoons toasted sesame seeds, for serving
Flaky sea salt, such as Maldon, for serving

Steps:

  • In a small bowl, whisk together vinegar, lime juice, ginger, and sugar. Gradually whisk in oil, adding it in a slow, steady stream, and continue whisking until mixture is emulsified. Season with salt and pepper.
  • Place avocado in the center of a chilled serving plate. Season with salt and pepper. Beginning with the smallest lettuce leaves, add to dressing just to coat. Place dressed leaves around and over avocado. Repeat the dressing and layering process working from smallest to largest leaves. Sprinkle with sesame seeds and sea salt. Serve immediately.

4 bacon strips, cut up
1/4 cup white vinegar
2 tablespoons water
2 green onions with tops, sliced
2 teaspoons sugar

1 hard-boiled large egg, chopped

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. , To the hot drippings, add the vinegar, water, onions, sugar, salt and pepper, stirring until sugar is dissolved. , Place lettuce in a salad bowl; immediately pour dressing over and toss lightly. Top with egg. Serve immediately.
